Coconut Fudge

Talk about a seriously crunchy, chewy, chocolate-y fudge that will have you coming back for just a sliver more all night long. I enjoy sweets but can usually resist, as long as I get it out of my house quickly. Until I made this coconut fudge.

Have I mentioned before that coconut is my kryptonite? It makes me weak and destroys every ounce of sense: as evidenced by The Best Ever Coconut Pound Cake that I could easily polish off single-handed.

I can not resist the fun of melting chocolate and transforming it into holiday fudge in just minutes! When I think back on all the times I stirred and stirred and stirred with a candy thermometer at my side while I made fussy candy recipes, I just think “never again.”

I love spending time in the kitchen and I enjoy making holiday treats, but I can make 6 different kinds of fudge in the time it takes to stir together one old-fashioned batch! You don’t have to tell Grandma this isn’t her family recipe.

There I go getting distracted by all the fudge again. For this recipe, I love stirring in toasted coconut. Toasting the coconut for this isn’t required, but it will add an additional bit of crunch to the fudge and to the topping.

I have always loved making candy and treats to share. But have to admit the traditional candy-making process can get tedious. So, finding a way to get such delicious holiday flavors in an easy fashion is a winner in my book.

Easy Peppermint Fudge

The best part – no one knows the difference. No one will believe that you made this in just five minutes and five ingredients. I love adding this fudge to cookie trays to share with friends and neighbors.

Stored correctly Peppermint Fudge will keep nicely in the refrigerator for up to two weeks. Store in an airtight container, separating multiple layers with parchment or wax paper. Serve from the refrigerator.

I strongly suggest storing Peppermint Fudge in its own container. Do not combine it with other treats in a tightly enclosed container. If you store them together, everything in that container will become peppermint in flavor.

I have a family member that prefers this fudge without the candy on top, so I usually only top about half of the recipe with crushed candy canes. The portion without candy is still full of peppermint flavor and everyone loves it.

To make this Chocolate Pecan Fudge, you simply combine everything in a glass bowl, heat for a couple of minutes, pour onto a tray, and refrigerate until firm. I like to sprinkle a few spoonfuls of extra chopped nuts on top of the fudge before refrigerating, too.

Once the fudge is set you can slice the fudge into whatever shapes and sizes you like. 1-inch squares are my preferred way to cut this fudge but bigger squares, triangles, and rectangles would also be good!

I like how the small squares of fudge make it easier to share with family and friends or pack into a box with parchment paper for a gift.

This chocolate fudge is rich enough that a little goes a long way so even just a batch of it is enough to satisfy all of our sweet tooths.

How to Make 5 Minute Fudge

Traditional old-fashioned fudge is a time-intensive and finicky candy to make. Old-fashioned fudge requires a candy thermometer and a considerable amount of time spent stirring the hot mixture over the stovetop.

Delicious for sure but, in my opinion, rarely worth all the time, effort, and special equipment.

Microwave Fudge

This method of making fudge may not be traditional but it produces a homemade chocolate fudge that’s just as delicious as the old-fashioned kind. Nothing beats being able to melt baking ingredients to the perfect consistency in just moments.

All it takes is a microwave (or stovetop) and a few ingredients, plus a little hands-off time waiting for the fudge to set. Since you don’t even need the stove for this recipe, it’s also a great one to make with kids!

Kids will love creating their very own chocolate fudge. For little ones it’s almost magical to see the melty chocolate mixture turn into cuttable fudge after just a little time in the fridge.

White Chocolate Caramel Fudge

In just a few minutes, you can stir this recipe together and have it chilling in the refrigerator. Within a couple of hours, it will be firm enough to slice and serve.

To make your fudge, melt white chocolate chips with sweetened condensed milk and butter in the microwave. I do this in increments of about 90 seconds, stirring after each time.

Your chocolate will continue to melt even after you remove the bowl from the microwave. Mine usually has a few chunks of unmelted chocolate left when I get to this next step.

Stir in vanilla and pecans, then spread the mixture into a tray lined with parchment paper.

Drizzle some caramel sauce on top then pop the whole thing in the fridge to set. After a couple of hours, slice into squares and serve!

If you don’t have a microwave or prefer not to use it, this recipe also works using the double-boiler method for melting chocolate. 

PLEASE NOTE: This recipe calls for sweetened condensed milk, not evaporated milk, not heavy cream, not half and half, nothing else will work. Trust me on this.

4 Ingredient Peanut Butter Fudge

So before my friends stage an intervention over my love of all things fudge and specifically peanut butter fudge I HAVE to share this recent version with you.

It really doesn’t get much easier than my classic four-ingredient fudge recipe. Butter, peanut butter, powdered sugar and a dash of vanilla. For ease of making and amazing richness, you will be hard-pressed to find a better one.

While I have been making this specific peanut butter fudge recipe for over 10 years now, it is fun to mix it up sometimes with other ingredients. Hence the Oreos.

Oreo Fudge

The beauty of this 4 ingredient peanut butter fudge recipe is not only is it easy but it is easy to scale. Just want a small batch, cut it in half. Making treats to share during the holidays go ahead and double it. It is not a finicky recipe in that regard.

Side note – if you watch the above video for the peanut butter fudge it was made with a HALF recipe for this fudge. The recipe can easily be halved or doubled or multiplied however you like.

As pictured in the video, the fudge should be firm and almost crumbly when mixed together and pressed into the pan. It should not be liquid at all.

This simple four-ingredient recipe is made with real butter. (5 ingredients with the Oreos.) The results can’t be guaranteed if you choose to substitute margarine or another butter alternative. The fudge might be greasy and might not even set up without the original ingredients.
