The Move – Part 2

First, I acknowledge the pant leg-sock-shoe situation. #mosquitos Technically I’m a Genius. 🤭

I love camping (Cade is a good sport and goes) but I hate how I FEEL camping.
Like literally.
As in, my skin. 😂
It’s that sticky combination of sunscreen and bug spray mixed with a little dirt and sweat. It’s gross and I can’t wait to wash it all away but I somehow am perfectly content in it at the same time because I know the goodness of it- it’s means I’m in my happy place of peace.

And that’s perfectly how I feel about “the wait”.

That time that’s neither here nor there.

A liminal experience.

The Wait

If I’ve learned one thing with this repetitive lesson of waiting, the wait isn’t waiting at all.
It’s actively walking. Walking from A to C and B is the bonus you get along the way.
“But they that wait upon the Lord shall renew their strength; they shall mount up with wings as eagles; they shall run, and not be weary; and they shall walk, and not faint.” Isaiah 40:31Renew their strength?!
Yes, I need that!
Run and not be weary and walk and not faint?!
I need that too!

Waiting is About Changing

While you’re waiting you get the beautiful promise of being sustained and lifted but what really is the SECRET to accessing that blessing is to STOP looking up and asking for “PLEASE” and start getting to work and asking, “So now I throw my heart into, “please let this experience change me, help others and become more!”

Remember how it took 2 years to even find the house we just sold or the hyperemesis gravidarum I battled?

 

During those times I learned that waiting isn’t about patience, it’s about changing- our lives and those around us.

And what promises do I need to fulfill that are waiting on me in this space?

You work on those two things and it seems to me that “C” comes sooner than it could have and this time when you step over the threshold you bring “B” with you- the talents, strengths and blessings tha

The Move – Part 1

Technically not homeless, but technically we also don’t have a home.

I almost want to tell you we are stressed out of our minds and in a total panic over here, at least that’s what we should be feeling. But the truth is, we made such a crazy and insane decision, one that makes absolutely no sense at all and my gosh, we are riding in the happiest, most hopeful peace I’ve ever felt.

So, with all the questions and so little time to answer why don’t I start back at the beginning and explain what’s really been going on in our lives for the past year and why we sold our home with zero possibilities for a place to rent or buy, why we threw our hearts at @utahrealestatepaige @whitneykimballrealtor and it ended up being one of the many best (and lucrative) decisions we’ve made. Ok, so it all started with Nashville…

We Were Going to Move

Well here’s a problem! I want to keep telling you our story but I don’t know how far back to go! I’ll say this, for three years now I’ve felt very strongly, more so each year that our time in Utah county was closing. By fall last year, I was certain that it would be our last Christmas in this house and I have no answer for you how I knew, I just had been listening so much over the years that it felt like clear knowledge in me, we were going to move. But where?!

We prayed a lot and then some more but nothing felt right. This last fall Cade was again in a position to move into a promotion (one we’d never felt right about before) and this time it not only felt right but certain. We were given a long, long list of places from California to Pennsylvania and Nashville to Nevada plus lots in between and we began praying.
Now don’t get all crazy here, that probably sounds like so much fun but the truth is, a long list and you get to speak up on where to move your family is a huge decision and one that we took seriously to our knees. How do you uproot your family like that? It’s scary, and exciting, wonderful and intimidating!

We expected answers and were willing to go wherever we were needed and could serve those around us, but no clear direction other than, you’ll be leaving Utah county came.

Ughhhh! I was so tempted towards discouragement!

Tater Tot Nachos & San Francisco, CA

Pulled Pork Tater Tot Nachos start with piping hot cheesy tater tots that are piled high with crispy pulled pork. This dinner is a guaranteed two-thumbs-up meal in our house.

All of my kids would probably choose pulled pork as their favorite meal, especially when it’s served in tacos, enchiladas, pulled pork mac and cheese, or hot and crispy, like in these street tacos.

When my oldest son Sam turned 13, Sean and I took him on a special trip all by himself. We flew to San Francisco and spent a few days exploring the city. (Scroll down to the bottom for a peek into that trip.) These pulled pork tater tots were inspired by a favorite meal from that trip.

Along the way, we found some great foods to eat. It was Sam’s first trip “just for fun” and he loved it. It’s always a lot of fun to travel and visit family around the country, but the joy of exploring an entirely new place is great in a different way.

Naturally, I put together a list of restaurants to check out while we were there. Sam’s favorite food during the trip turned out a tie between Tater Tot Nachos from Tacorea and Tostadas De Caracoles (snails baked on seasoned croutons with parsley aioli) from Zarzuela.

Can you even believe that my kid tried snails for the first time and absolutely loved them? At any rate, when I decided to recreate his favorite thing from the trip to share with you, the tater tot nachos were the obvious choice.

Welcome to the weekend, my friends! We’ve had a fun first week of summer over here. We drove up to Cleveland, visited the Rock and Roll Hall of Fame (photos at bottom of post), and had lunch at Larder Deli and Bakery

If you’re in the area, Larder is a must-try. We had the pastrami, the Reuben, and the fried chicken sandwiches. Every single bite was fantastic. Oh! The oatmeal cream pies, the stoner bar, and the chocolate rye cookie were all keepers too.

ON THE BLOG this week: Smoky chipotles, garlic, and honey are combined in this Chipotle Chicken Marinade. This simple marinade is packed with an awesome smoky southwestern flavor.

Bite-size Glazed Lemon Drop Cookies are soft not-too-sweet cookies dipped into a sweetly tart glaze. These cookies are so irresistible, that I happily ate cookies in lieu of my dinner the first time I made them. (Traditional and gluten-free variations are both included with this recipe)

Perfectly bite-size Marinated Tomatoes are seasoned with a combination of oil, vinegar, and spices along with just the right amount of sweetness. I’ve always liked tomatoes, but these tomatoes are irresistible!

Tender pasta and mouthwatering flavorful tomatoes are tossed together with a tangy-sweet dressing to make a versatile Tomato Pasta that can be served warm, cold, or at room temperature. This is perfect for summer barbecues and potlucks, as it can be left out for a couple of hours without any issues.

Fresh apricots are tossed with cinnamon sugar and then layered between a brown sugar and oat crust to make these Apricot Crisp Bars. Served on their own or topped with Vanilla Ice Cream this is a dessert that everyone loves.

What I’m CRAVING: A few weeks ago, I had the most amazing fish I’ve ever tasted while in Florida. It was Chilean Seabass and when I tell you it was unforgettable, well, it really was. I’ve been thinking about it for weeks now. So, when I saw my friend Courtney’s Lemon Caper Butter Chilean Seabass I put her recipe on my list to try soon!

We are not strangers to seafood over here, as evidenced by the number of salmon recipes and more on the website, but I haven’t been very creative with our seafood choices in a while. I’m looking forward to trying my hand at cooking seabass soon.

I’m a Mother Because of Him

I erased my last post.

That’s not something I do very often. I was feeling like I couldn’t say what I wanted to so I had posted something else.
But the truth is, I’ve been very quietly filled with such gratitude today for this guy. I love moms and women and all that today is for, but I feel so completely in awe that Cade was placed in my life.

A Mother Because of Him

I would never have been a mother without marrying Cade. No, not because 1+1=2, but because of who he is that enabled me to survive.

I’m a mother because this man was willing to do every load of laundry, clean the bathrooms, especially the toilets sometimes multiple times a day to try to ease my suffering. He sat by the door while I heaved nothing from a 70lb body, carried me when my muscle atrophied and walking was not an option. Took me to and from the hospital, sat by my bedside while we made plans for IV therapy and then feeding tubes. Prayed with me and over me each week as we worried over concerns with each baby, and never once missed a beat. Never once complained. Never once lost hope.

It sounded awful to be unemployed while pregnant the second time but if he hadn’t been then who would have cared for me? It sounded horrible to step into a third pregnancy knowing the risks but his faith exploded and he stood with me.

Today I’m a mother because he chose to be my husband, in every way.

Mother’s Day cannot be without the men that are. He truly has fulfilled promises made long ago and continues to do so each day.
