Peaches and Cream Crumble Bars

a photo of a single square piece of peaches and cream crumble bar topped with a dollop of whipped cream sitting on a torn piece of parchment paper on top of a of a circular wooden serving plate.

These peaches and cream crumble bars are the best dessert I’ve ever had with peaches. That creamy filling and brown sugar oat topping!!

I don’t think we even need to talk about these peaches n cream crumble bars. Let’s just sit and stare at them. My good gracious they are good. That buttery crust and topping is everything. It’s a little chewy, crisp, sweet and salty. You could eat it lone and be totally satisfied. But why would you settle for that when you could take it to the next level?

Let’s add a little cream cheese gloriousness in there with fresh, juicy, sweet, golden peaches. That filling is so sweet, rich, creamy and wonderful. You really don’t even understand how much I love these bars. The crumble is perfect for such a lovely filling. And I actually really needed something delicious to take my mind off of something horrible.

And by horrible I mean annoying. I’ve been bit by mosquitoes before, but this time is just crazy. Yes, we are talking about mosquito bites. Haha, I know!! Doesn’t it seem so lame? But truly, they are driving me nuts! The mosquitoes at our new rental house are insane. I have 13, 13 you guys! I got 13 bites in jut 30 minutes the other night playing soccer with my son. So ridiculous.

And they just keep getting worse. The bites are ginormous, as in red and swollen bigger than a golf ball, and the itchiest sons of guns ever. I cannot even explain it! And 3 of them are starting to bruise. Dude, what will make them go away?! See, I did need a little dessert to take my mind off of the itch!

Will Peaches Ripen After They Have Been Picked?

Peaches, like apples, pears, avocados and tomatoes (among other fruits), can ripen after being picked.

The easiest method to ripen peaches is simply to leave peaches on the counter. If you want to speed things up, pop the peaches in a paper bag.

It will contain the ethylene gas the fruit gives off, which hastens the ripening process.

Should the Peaches Be Peeled?

You don’t have to peel the peaches, but my family prefers them peeled in most dess

Fresh Peach Cobbler with Cake Mix

It truly couldn’t get any simpler than this easy peach cobbler. My family grew up on this cobbler, though we usually had it in a dutch oven. It works either way. I’ll include instructions in the recipe card for baking it in a dutch oven.

There’s nothing quite like having a dessert that was a staple in your house growing up. The smells fill the air and suddenly everything feels a little tingly and magical. You can’t help but take a trip down memory lane!

All I want is peaches when they are in season! They are so dreamy and make the most scrumptious desserts like this peach cobbler made with cake mix. You are going to love the flavor of this one and how easy it is!

What Is The Difference Between Cobbler and Crisp?

A cobbler is a deep-dish baked fruit dessert with a thick dropped-biscuit or pie dough topping. A crisp is a baked fruit dessert with a layer of topping including oats or nuts. If you haven’t tried out peach crisp, you should jump all over it!

What’s Needed for This Fresh Peach Cobbler?

To make this easy peach cobbler recipe with cake mix, you’ll need the following ingredients:

  • Fresh peaches – freestone peaches are best for baking and they should be peeled and sliced
  • Butter – unsalted, adds richness to the filling and blends with the cake mix to create the golden cobbler topping
  • Cinnamon – adds flavor
  • Cornstarch – thickens the peaches
  • Brown sugar – sweetens the peaches and adds richness
  • Yellow cake mix – I used to say white or yellow cake mix, but it needs to be yellow all the way

The measurements for all the ingredients can be found in the recipe card at the end of the post.

What Peaches Are Best for Eating?

A clingstone peach is used for eating and snacking. You might not get the pit out but with that sweet nectar dripping down your chin, who cares!

Freestone peaches are best for baking because they are sweeter and easier to use in recipes, but there’s a gazillion varieties. Here’s a comprehensive list if you need help. My favorites are:

  • Early Amber

  • Early Elberta

Sweet fresh peaches are baked between layers of brown sugar and oats to form a chewy sweet crust for these Peach Oatmeal Bars.

Anytime I bake peaches into something it reminds me of my favorite peach breakfast. Peaches and cinnamon pair perfectly for your next family breakfast.

Fresh, sweet and so juicy peaches are the most amazing treat when they’re perfectly ripe. A ripe peach will have a sweet peachy smell to it and the skins will slide right off when you peel them.

What I absolutely love about these oatmeal peach bars is that they do use fresh peaches. My preference when baking is to use real fruit as much as possible.

Most peach bar recipes use a preserve or jam for the filling. That is fine but it gives the bars more of a dessert-like sometimes too sweet quality in my opinion. Real fruit-filled bars I can justify enjoying for breakfast.

Peach bars travel easily to my kids’ activities and events. Bonus, they always get rave reviews when we share them.

I love how nicely they freeze as well. I highly recommend keeping some on hand for those last-minute, “hey mom I need. . . ” requests.

Peach Bars

Sweet and cinnamony peach bars are so easy to make. It only takes a few minutes to stir the crust together and press half of it into the pan.

Toss the peaches in sugar and spices and layer them over the crust. Sprinkle the remaining buttery crumbles over the peaches and pop it in the oven.

Peach Breakfast Bars

When baking with peaches I have noticed a difference in white peach and yellow peaches. I noticed that white peaches were not baking up the same as yellow peaches. They were losing their shape and really cooking down in the dish.

After some research, I learned that white peaches actually have a high sugar content, which explains why we l

Peaches and cinnamon pair perfectly in this recipe for Baked Peach Oatmeal. Eaten on its own or topped with whipped cream, it’s a hit.

Anytime I bake peaches into something it reminds me of my favorite peach cobbler or crisp. What’s not to love?

So, the fact that I love this breakfast really shouldn’t come as a surprise. And, yes, the fact that I want to make another pan of it tomorrow morning just goes to prove my addiction to the fresh peaches that are finally in season.

The smell of this oatmeal baking lures my family out of bed every time. In their sleepy state, they might think it is a peach dessert for breakfast, but they are never disappointed by a pan of baked peach oatmeal.

You probably notice in the photos I skip on peach peeling. There truly is no need to peel your peaches in this baked oatmeal. I do suggest using freestone varieties of peaches for how easy it is to remove the flesh from the pit.

Old-fashioned oats bake up nicely. Quick oats are often good for crisps or cookies or that quick morning oatmeal. But old-fashioned is best for this dish as they keep their shape and it doesn’t turn to mush. They have a rich nutty flavor as well.

You can easily bake this in a small casserole or 8×8 pan. My preference is muffin cups or individual little casseroles. My family fights for those buttery crisp edges.

Toppings, dressings, and condiments are one of the best ways to add flavor or make a dish more decadent. When it comes to oatmeal I am all about the toppings.

Our favorite way to enjoy it is topped with drizzled with honey or maple syrup. If I am really trying to sweeten my kids up for a day of t

Peach Crisp

You may have noticed that I’ve developed the habit of turning everything I possibly can into ice cream. I am a firm believer that ice cream can make almost any dessert even better.

This obsession began with this creamy and delicious apple crisp ice cream. It is the most amazing cinnamon-sweet baked apples with a crunchy, buttery streusel topping folded into homemade ice cream.

My love of ice creams with all the goodness combined in comes from those times, like right before bed when I want something sweet. But having a bowl of dessert with a scoop of ice cream on top is a bit much.

However, I feel way less guilt when I have a scoop of something like peach crisp ice cream. It is all the goodness of the fruit-filled dessert and ice cream combined and it satisfies that late-night craving.

That is, if my boys haven’t discovered it and polished off the ice cream before me. I have been known to change up which freezer and where I stash it. I can not share where that secret place is because they do occasionally read this blog now.
