Strawberry Simple Syrup is easy to make with just 3 ingredients and it can be used in so many ways!

Add a splash of strawberry syrup to a glass of mint lemonade or to a pitcher of mojitos and you just might find your new favorite drink to sip this summer. Pour it over a stack of buttermilk pancakes or my grandmother’s German pancakes for a breakfast that everyone will love.

Strawberry Simple Syrup

My sister introduced me to this strawberry simple syrup years ago. She excitedly called me up to tell me that she’d made a double batch, and I just had to have the recipe.

We played around with the recipe during a visit later that month. This syrup works well in cocktails, as a topping for pancakes and waffles, and I’ve even been known to add it with some fresh fruit to a bowl of vanilla ice cream.

This delectable infusion of juicy, sun-ripened strawberries has the perfect amount of sweetness. Strawberry syrup takes whatever you put it on and adds a bright pop of color and flavor to it, beyond what you would get with regular syrup. I love having it on hand for guests and special occasions.

This syrup keeps in the fridge for weeks, though I’ve found that at my house it doesn’t last that long before I have to make another batch. My boys love pouring it over a stack of perfect pancakes.

Having lived in one of the hottest cities in the US for a very long time, mojitos became a favorite pretty much year-round. But, the blueberry mojito adds a twist on the classic beverage.

Blueberries have a distinct flavor that starts off sweet but leaves a tanginess that lingers. The taste will vary depending on the ripeness of the berries, with riper blueberries tending to be sweeter.

But, I adore the way that the sweetness of the muddled blueberries in this drink balances the zesty citrus of the lime juice. This recipe is so good, it makes it harder to appreciate the drinks that are made outside your kitchen.

Fresh pineapple, strawberries, grapes, blueberries, oranges, kiwis, and blackberries come together fabulously in this flavor-filled Rainbow Fruit Salad.

Any combination of fruits will work nicely in this recipe. You’ll need a total of 8 cups worth of chopped fruits. When prepping the fruits, I like to use this simple homemade fruit wash.

The fruits are then tossed with fresh lime juice, honey, and a sprinkling of poppy seeds to create a side dish worthy of any occasion.

This fruit salad can be arranged on a tray for a stunning fruit tray rainbow, layered into rainbow fruit cups for individual portions, or tossed and served in a large bowl to deliver a rainbow of fruit colors in every spoonful.

I’ve served this all three ways, but my go-to option for family meals is a large bowl simply for the ease of preparation and serving.

The simple honey and lime dressing brightens the fruit flavors nicely. I’ve used this dressing combination in several fruit salads and it’s become a favorite way to dress up a bowl of fruit for snacking or for dessert.

The Winter Fruit Salad and the Summer Fruit Salad are seasonal favorites. And this Rainbow Fruit Salad is everything I love about both of these, plus even more colors and flavors.

Coffee cake, in my opinion, doesn’t get nearly the amount of hype it deserves. A good coffee cake has a tender moist interior with a crisp, crumbly topping. This one is also stuffed to the brim with fresh juicy blueberries.

I was surprised to learn recently that in some parts of the world a “coffee cake” is a cake with actual coffee in it. While I’ve been known to bake a cake with coffee in it from time to time, like this Chocolate Mocha Cake, a true coffee cake is one designed to be eaten alongside a cup of coffee.

Blueberry Coffee Cake with Sour Cream

This blueberry coffee cake with sour cream is ideal for sipping with a Spanish Cafe con Leche or for sharing with friends alongside a pot of coffee. The blueberries in it make me think of summer afternoons, gathered with friends for an afternoon chat on the porch.

Coffee cake is also the kind of cake you can happily eat for breakfast. It’s basically a muffin in cake form, right?

Do I even need to tell you what I’ll be eating for breakfast tomorrow? This is a dangerous kind of awesome, my friends.
