Brown Butter Dulce de Leche Rice Krispie Treats

Kerri here! You might remember me from the world famous gingerbread men cookies and the caramel Bugles. Head over to those posts to read about who the heck I am…haha! Anyway…I told Carrian that she had to try this new recipe I had come up with because it was the most amazing Rice Krispie treat I had ever had. Side note…can we just call them RKTs from now on? Rice Krispie treat is such a mouthful!

Afterall, it was her RKTs recipe that was the base of the recipe in the first place. She made my brown butter dulce de leche version, and photographed them. And here we are! She had cinnamon sugar Rice Krispies in the cupboard and she swears by the cinnamon sugar! I can’t wait to try it that way!

How This Recipe Came to Be

This all started with a trip to Blox, a restaurant here in Utah that specializes in dessert bars. We tried one of their Rice Krispie treats one time, and I could tell immediately that it was made with brown butter and I was hooked for life. Then I thought, I should stuff some dulce de leche in the middle of this gooey RKT.

We love dulce de leche here at Oh Sweet Basil, and Carrian is always stuffing it into delicious recipes to make them even more outrageous, so I probably should do the same! So the RKTs were stuffed (or layered really) and minds and tastebuds were blown! I’ve made them a few times now for different events and every single person has wanted the recipe. I absolutely love that they will live here now and I can just send people a link to the recipe rather than explaining all my steps.

Ingredients for Browned Butter Dulce de Leche Rice Krispie Treats

You only need 6 ingredients and about 10 minutes to have these RKTs ready to go!

  • Butter: I prefer to use unsalted butter so that I can control the salt in the recipe. The first step in this recipe will be browning the butter. I describe how to do that below.
  • Vanilla Extract: Use real vanilla extract for maximum flavor.
  • Mini Marshmallows: You want to use mini marshmallows so that they can melt quickly and evenly.
  • Rice Krispies Cereal: I’ve only ever used regular Rice Krispies, but Carrian used the cinnamon sugar flavored and says that’s where it’s at! I trust her and will be trying it next time. It gives it a churro flare and churros never disappoint! Use either one and you won’t be disappointed!
  • Sea Salt

Lemon Fruit Dip

I made this dip for a pool party with friends a while back and it disappeared lightning-fast. Kids and adults happily scooped it up with the dippers and then nearly licked the bowl clean.

The fluffy sweet fruit dip is tempting enough straight off the spoon, but when you serve it with graham crackers, fresh strawberries, or shortbread cookies? I can tell you for a fact that no one is able to resist it.

For the lemon curd in this dip, I used my 5-Minute Microwave Lemon Curd. It turns out perfectly every time and it’s honestly easier than going to the store to buy lemon curd.

That recipe will make more than you need just for this lemon dip, but you won’t be sad about that.

Easy Fruit Dip Recipes

Fruit dips and plenty of fruit to dip into them are some of my kids’ favorite snacks. I’ll happily find any excuse possible to make and eat all of these dips.

Romanoff cream sauce is just about the most delicious thing I’ve made lately. My friend Lynne was here a few weeks ago when I made this to photograph it and we may have eaten the full recipe on our own. I probably shouldn’t admit these things, but yeah, we did that.

While the combination of strawberries and cream isn’t a unique one, this particular dish has a place in history – regardless of which story you choose to believe.

If you scour the internet, you will come across several variations of Strawberries Romanoff, accompanied by diverse claims about its origin. One popular belief credits Marie Antoine Careme, who was the chef to the Russian ruler Nicholas I from the Romanoff family, as the mastermind behind this classic recipe.

Conversely, some attribute the creation of a similar recipe, known as Strawberries Americaine Style, to Chef Escoffier from the Carlton Hotel in London. His dish was served over ice cream and was later renamed Strawberries Romanoff by a self-proclaimed “Prince Michael Romanoff,” who opened a restaurant in Hollywood and pretended to be a member of the royal family.

The recipe I’m sharing has been very gently adapted from La Madeleine’s recipe. Their very famous Strawberry Romanoff gives a nod to both of those earlier versions. Since I don’t live in Houston and haven’t had the opportunity to enjoy theirs in person, I’m pretty happy to be able to make it at home.
