Hey friends! How’s the day going so far? We’re back in town after a trip to Phoenix for Nationals, and have a mountain of laundry + have some virtual 1:1 appointments.

For today’s post, I thought I’d share a summer side dish recipe! Whenever we have friends over during the summer, finding recipes for the *fun* stuff like appetizers and desserts is always super easy. I always like to make sure we have some kind of salad or vegetable, and am always looking for new favorites. Mia recently shared her favorite broccoli salad recipe with me and I knew I had to post it here on the blog! It lasted about 15 minutes in our house.

I accidentally found out that the girls love raw broccoli when we were low on groceries and I was running out of options while packing their lunch + snacks for school. I’ll typically roast broccoli with dinner and they tend to be pretty meh about it. I needed one more spot to fill in their lunch bento boxes, so I added some raw chopped broccoli. When I picked them up, they both said how much they loved the broccoli in their lunch, and I’ve been adding it ever since. This broccoli salad was a HUGE hit in our house – we each had a bowl and it was gone.

Broccoli salad is a great source of fiber and vitamins. It’s also dairy-free, and includes blanched broccoli, which still has a crunch, but can be easier to digest than raw. You simply mix all of the ingredients into a bowl and enjoy! It’s also a versatile recipe; feel free to customize it as you like. You can swap out the almonds for another type of nut, or use a different type of dried fruit (like dried cranberries or raisins) instead of the dates. Just make sure that you don’t skip the celery seed, as it gives it a unique flavor and crunch.

Ingredients

1 head of broccoli (or a 12 oz bag of pre cut florets)

Avocado oil mayo (Chosen foods, Sir Kensington or homemade. I like to make my own, or order Sir Kensington from Thrive Market)

Maple syrup (or honey) for a little bit of sweetness

Celery seed – don’t omit this ingredient!

Salt & pepper, to taste

Smoked Peach Crisp

Peaches, glorious peaches! Why can’t peach season last all year? I guess I wouldn’t crave it and love it as much as I do if they were available all the time. This smoked peach crisp on the Traeger is our new favorite!

As you all know, peach crisp is a huge deal at my house. There’s absolutely not one single summer that goes by that I don’t make a peach crisp to end our glorious summer. I don’t know if it’s the golden nectar of sweet peach juice with that cinnamon crisp and a scoop of cold and creamy ice cream or if it’s the nostalgia I feel for a peach dessert but either way I always feel like it’s officially summer when I eat it. And best of all, my kids do too.

Isn’t there something magical about a whole family loving one specific recipe? It’s not just that it’s a tradition, it’s not even that it’s finally something everyone likes, there’s truly something sweet and memorable about eating that one recipe together that everyone swoons over.

Ingredients for Smoked Peach Crisp

You’ll need some peaches of course, and then a few things for the filling and a whole bunch of goodness for the topping. Here are the ingredients you will need:

For the Filling:

  • Peaches
  • Butter
  • Cinnamon
  • Brown Sugar
  • Cornstarch

For the Topping:

  • Old-Fashioned Oats
  • Brown Sugar
  • Butter
  • All- Purpose Flour
  • Cinnamon
  • Salt

Dutch Crumb Topping Mixed Berry Pie

Dutch crumb topping mixed berry pie is a mashup of our outrageous razzleberry pie and our dutch apple pie. It’s like a berry crisp but in pie form!

Because streusel topping is quite honestly one of the greatest things ever created, I felt there was no choice but to smash my two favorite pies into one. So, I used our triple berry pie filling with our Dutch apple pie topping and created my new favorite pie in all the land. My goodness, it is heaven!!!

When I was growing up I thought that pie was good, but I was 100% on board with cookies. I mean you could not make me happier than to show up with a plate full of cookies at my house, but man, it really is true that getting older changes what you crave. I cannot live without pie now!

Ingredients for Dutch Mixed Berry Pie

The ingredients list for this recipe is short and sweet. You’ll need lots of berries and the rest you will probably already have in house already! Here is your list:

  • Pie Crust – flour, butter, salt, sugar and water
  • Raspberries
  • Blackberries
  • Blueberries
  • Sugar – these berries can be so tart so start with 1/2 cup and add more as needed 1 tablespoon at a time
  • Cornaby’s Ultra Gel – my favorite way to thicken a pie, I’m listing a few substitutions down below if you don’t have ultra gel

For the Topping

  • Flour – just plain ol’ all purpose flour
  • Cinnamon – adds warm flavor
  • Old Fashioned Oats – adds texture and structure to the streusel
  • Brown Sugar – the stickiness of brown sugar helps the streusel to clump together better and adds so much richness
  • Salt – enhances and balances the sweetness
  • Unsalted Butter – makes the streusel stick together and adds richness

I found this recipe in Great Scoops: Recipes from a Neighborhood Ice Cream Shop. I had such fun flipping through this gorgeous ice cream cookbook. While my love of ice cream is a well-documented thing, it’s also fun to check out someone else’s flavor combinations.

Rum Raisin ice cream has been on my must-try list for years and I simply never got around to it. The description in the book had me sold on it immediately.

Similar to the Blueberry Chocolate Chunk Ice Cream from Rusconi’s, my forever beloved Cafe con Leche Ice Cream, and the French Custard Style Cinnamon Ice Cream as well, you need to temper and use egg yolks in this recipe.

Don’t be intimidated, I promise it’s simple enough for all of us to do. While there are 60+ egg-free Philadelphia-style ice cream recipes on this website, sometimes, you just need to allow yourself a few extra minutes in the kitchen for an extra special result.

There isn’t a shortcut to this recipe. Yes, you can take the rum-soaked raisins and just stir them into a batch of the Best and Easiest Homemade Ice Cream. Will it be tasty? Yes. Will it be anything at all like this classic recipe for Rum Raisin Ice Cream? No.

Take the time to make this creamy, ultra rich, custard-based ice cream exactly the way Marlene Haley of The Merry Dairy intended it, my friends. You’re going to love it.
