Shredded Beef Tacos Recipe

This recipe came together on a whim one day. I had just bought the Kinder’s Carne Asada Rub and I had a chuck roast that I needed to use. With our pork carnitas as my inspo, I baked the beef roast all afternoon and then crisped it up in the oven right before serving. The whole family couldn’t stop raving about this beef!

Ingredients for Easy Beef Tacos

You won’t believe how flavorful this Mexican shredded beef is with only 5 ingredients! Here is what you will need:

  • Boneless Beef Chuck Roast: make sure that it has good marbling
  • Kinder’s Carne Asada Rub: a blend of all your favorite Mexican flavors including orange and lime juice, sea salt, garlic, cumin and other spices
  • Onions: I like to use red onions or a combination of red and yellow.
  • Beef Stock: helps keep the beef tender and juicy
  • Orange Juice: adds citrus flavor

How to Make Shredded Beef Tacos

If you only look at the total time for this recipe, it might seem less than ideal, but I promise this recipe is so easy! Most of the total cook time is just letting the meat roast away in the oven while your house is filled with the most scrumptious aroma. Here are the steps:

  1. Prep: Preheat the oven to 325 degrees F.
  2. Season: Using the carne asada seasoning, season the roast on all sides.
  3. Bake: Place the seasoned roast onions, orange juice and onions in a large Dutch oven. Place the lid on and let it bake for 3.5 hours.
  4. Shred: Remove from the oven and shred the meat into large chunks using two forks. Place it back in the oven for 30 minutes.

I grew up on tacos, but when I say that we have to take it with a grain of salt because my mother was raised on a farm in Idaho, which means not only was it always ground beef, flour tortillas, and shredded iceberg lettuce with occasional tomatoes or cheese, but the ground beef for sure 100% had potatoes grated into it, I’m not kidding.   • Chicken Breasts: Marinate and grill the chicken whole and then chop it into bite-size pieces right before serving.

This pork carnitas recipe is so flavorful and moist and the best part? They are crazy easy to make with only a few ingredients and a slow cooker!

We had a little Mexican Pot luck in my neighborhood the other night. It was tons of fun and so nice to have everyone out together and just enjoy each others’ company. Everyone brought a dish to share and it turned out perfect. I decided to go with carnitas. I looooooove this pork. It is one of the most simple ways to make carnitas, but it is so juicy and flavorful. I love that you just throw it in the crockpot and don’t think about it all day. You may wonder if with so few ingredients it’s really that delicious, but it is.

I made one big fat error this time around. You may not think it’s that big of a deal, but for me it is. At about 12:30 in the afternoon I realized that I had not placed the pork in the crock. DANGIT!!!! I am a huge, huge believer in letting roasts, and all kinds of pork cook for 8 hours in the crock on low. It is soooooooooo much more juicy, tender and flavorful. I promise. This pork still turned out well, but it would have been 1 million times better if I had been more on top of things. SO, when you try this, don’t forget to slooooooow cook it.

The ingredients for crockpot pork carnitas are simple and pack so much flavor. You will need a few ingredients for a dry rub and then a few items for cooking the pork in the slow cooker. The orange juice and lime juice add the punch of citrus you want in carnitas! This is what you will need:

For the Rub

  • Seasonings: Dried Oregano, Ground Cumin, Smoked Paprika, Kosher Salt and Pepper
  • Garlic
  • Oil

For the Pork

  • Pork Shoulder/Butt
  • Onion
  • Garlic
  • Jalapeno
  • Fresh Black Pepper
  • White Vinegar
  • Kosher Salt
  • Oranges
  • Limes

How to Make Pork Carnitas

Now we come to my favorite part of this slow cooker carnitas recipe…the simplicity! Here are the basic steps:

  1. Combine: Add all the ingredients for the dry rub together in a small bowl and then rub it all over the outside of the pork. Place it in the slow cooker.
  2. Add: Juice the oranges over the pork and leave one of the oranges in the slow cooker. Add the rest of the ingredients to the slow cooker.
  3. Cook: Set the slow cooker to low heat and cook for 10-12 hours or until the meat falls apart.
  4. Shred: Using two forks, shred the pork and leave it in the juice in the crockpot. Pull out the orange peels.

I wanted the breading to be light and flavorful and for the fish taco sauce to be perfection. This homemade fish tacos recipe is sure to be a hit for all our seafood lovers! And Cade can’t get enough of them!

What is the Best Fish for Fish Tacos?

For fish tacos, you want a white fish that is firm and mild in flavor. For this recipe, we are using cod, but other good options would be tilapia, halibut, or mahi mahi. If you’re not in the mood for fish, shrimp would work great for this recipe too!

Ingredients for Fish Tacos

There are three different components to this recipe – the fish with the ingredients for the breading, the toppings for the tacos, and the items needed to make the fish taco sauce. Here is what you will need…

  • Buttermilk: helps marinate the fish and helps the breading stick to the fish pieces
  • Cod: the fish should be cut into strips that are 1″ by 3″, see section below for choosing good fish
  • Flour: main component for the breading on the fish
  • Seasonings: smoked paprika, chili powder, salt and pepper
  • Peanut Oil: has a neutral flavor, is very affordable and has a high smoke point so that fish cooks quickly
    • TIP: Use corn oil, canola oil or vegetable oil as a substitute if needed.
  • Butter: combines with the oil to pan fry the fish pieces
  • Corn Tortillas: Vista Hermosa brand is our favorite for corn tortillas
    • TIP: If you aren’t a corn tortilla fan, flour tortillas work great too.

Toppings:

  • Green and Purple Cabbage: adds freshness
  • Limes: adds acidity
  • Cilantro: adds flavor and freshness
  • Jalapeno Slices: adds heat
  • Avocado: adds creaminess and flavor

For the Sauce

  • Seasonings: garlic powder and smoked paprika
  • Cilantro: adds flavor and color
  • Mayonnaise: adds creaminess
  • Sour Cream: adds creaminess
  • Lime Juice: adds acidity, fresh limes are always preferred

If you’re craving a delicious Mexican dinner, this chicken birria taco recipe is exactly what you need. With savory shredded chicken and a crispy cheesy shell, they’re hard to resist and so easy!

So the kids and I did a little thing. I was making our totally viral cafe rio copycat for sweet pork tacos and accidentally made too much sauce. I poured it into a ziploc and threw it in the freezer for another day. A couple of weeks later I snagged one of those handy packages of pulled rotisserie chicken from Costco and the light went on… birria chicken tacos. The rest is history.

The chicken already is moist and flavorful thanks to the slow roasting, but then throw on some seasoning and pan cook it so you’ve got a few crispy pieces, smother everything in sauce and it’s hands down some of the best chicken you’ll ever put in a taco.

But like all Birria tacos, this tortilla should be cooked in a little oil and sauce, stuffed with meat (cheese if you’re awesome) and then dipped in a little extra sauce or sprinkled with pico de gallo for the ultimate chicken taco experience.

Before You Begin…

You’ll want to have two things ready before you get too far into this recipe. First, have your chicken ready. I love to buy the packages of pre-shredded rotisserie chicken at Costco. If you want to save a bit of money, buy a whole rotisserie chicken and break it down yourself saving the breast and thigh meat. Shred it using two forks or toss it into your stand mixer and use the paddle attachment to break up the chicken.

Birria is a rich stew originating in Jalisco, Mexico that simmers on the stove all day and is so tasty. It typically made with goat or lamb and has a flavorful rich broth (or consommé). It is eaten like a soup, and no tacos are involved at all. Haha! People find that sort of shocking since birria tacos have been taking the world by storm the last few years.

What are Birria Tacos?

Some genius somewhere decided to take the tender, juicy meat from the birria and stuff it into a taco and then use the consommé as a dipping sauce for the taco. And the birria taco was born!!
