I am always looking for quick dinner recipes that have lean protein and complex carbohydrates so that everyone is fully satisfied and energized. It has quickly become a regular on our dinner rotation. Here is everything you’ll need:
- Olive Oil
- Lean Ground Beef
- Yellow Onion
- Taco Seasoning
- Cornstarch
- Garlic
- Sweet Potatoes
- Kosher Salt
- Ground Black Pepper
- Fire Roasted Diced Tomatoes
- Diced Green Chiles
- Water
- Lime
- Mexican Cheese Shreds
- Cilantro

How to Make Taco Ground Beef and Sweet Potato Skillet
This ground beef recipe is made all in one pan, and it’s so easy! Here are the steps:
- Brown the Ground Beef: Heat olive oil in a large skillet over medium high heat and then add the ground beef and onion. Cook until the meat is mostly browned and the onion is tender.
- Season the Meat: Add half of the taco seasoning and cornstarch. Use a meat chopper to break up the beef and use a wooden spoon to stir. When the beef is almost completely cooked, add the garlic and cook for another minute. Then remove the beef and onions to a plate.
- Cook the Sweet Potatoes: Add a little more oil to the skillet and add the diced sweet potatoes. Season with the remaining taco seasoning and some salt and pepper. Cook until they start to brown, stirring occasionally for about 10 minutes.
- Combine: Add the ground beef and onions to the skillet, then add the fire roasted tomatoes, green chiles, water and lime juice and stir everything together. Cover the pan with a lid and let everything simmer for 10 minutes or until the sweet potatoes are fork tender.
- Add the Toppings: Top with the shredded cheese. Add the lid back for a minute so the cheese melts. Then add the cilantro.

How to Make a Taco Skillet

In a large pan over medium-high heat, add a drizzle of oil and the butter. Add the veggies and begin to sauté until soft. Add a little salt and pepper to taste.

So the kids and I did a little thing. I was making our totally viral cafe rio copycat for sweet pork tacos and accidentally made too much sauce. I poured it into a ziploc and threw it in the freezer for another day. A couple of weeks later I snagged one of those handy packages of pulled rotisserie chicken from Costco and the light went on… birria chicken tacos. The rest is history.
The chicken already is moist and flavorful thanks to the slow roasting, but then throw on some seasoning and pan cook it so you’ve got a few crispy pieces, smother everything in sauce and it’s hands down some of the best chicken you’ll ever put in a taco.
But like all Birria tacos, this tortilla should be cooked in a little oil and sauce, stuffed with meat (cheese if you’re awesome) and then dipped in a little extra sauce or sprinkled with pico de gallo for the ultimate chicken taco experience.

Before You Begin…
You’ll want to have two things ready before you get too far into this recipe. First, have your chicken ready. I love to buy the packages of pre-shredded rotisserie chicken at Costco. If you want to save a bit of money, buy a whole rotisserie chicken and break it down yourself saving the breast and thigh meat. Shred it using two forks or toss it into your stand mixer and use the paddle attachment to break up the chicken.

What are Birria Tacos?
Some genius somewhere decided to take the tender, juicy meat from the birria and stuff it into a taco and then use the consommé as a dipping sauce for the taco. And the birria taco was born!! The corn tortillas are fried in a little oil and some of the saucy broth to create the tastiest tacos ever.

Taco stew is an easy weeknight dinner recipe that the whole family loves. We love to top it with our favorite taco toppings and everyone can totally customize their own bowl.
So I call this a stew because I add potatoes, carrots and peas to it. That totally qualifies as stew, right?! It’s a little more hearty and chunky than our Instant Pot taco soup or even our taco ground beef chili.

Ingredients for Taco Stew
I love that this recipe is mostly a pantry meal. It is so nice when you’re on a tight budget or just don’t have time to get to the store. It also cannot be easier! Here is what you will need:
- Yukon Gold Potatoes: yukons have the best flavor and keep the best texture when added to a soup or stew – you could also use red potatoes as a substitute
- Carrots: peeled and cut into bite size pieces
- Onion: just a yellow onion works great
- Hamburger: 80/20 or 85/15 works great – if you want to go a little healthier, try ground turkey or chicken
- Frozen Peas: just toss them in frozen, and they’ll be heated through in no time
- Diced Tomatoes: you can use any brand you want
- Tomato Sauce: any brand works great
- Taco Seasoning: you can use a store bought packet or make your own
- Corn: just open a can of corn and toss it in, no need to drain
- Chili Beans: pinto beans or black beans also will work great, undrained
- Kidney Beans: no need to drain these either
