Chocolate and strawberries – could there be a better combo? There’s just something about fudgy, creamy chocolate and fresh, sweet, juicy berries that go so perfectly together. And when Valentine’s day rolls around, these chocolate cupcakes with strawberry frosting are the perfect thing.

I always get really excited for Valentine’s Day, and I love the idea of taking a day to appreciate the people we love – and after cold, dreary January, I think everyone can use something to brighten their day.

I don’t typically buy gifts or do anything too fancy for Valentine’s Day – but I love to make a special treat to celebrate. And these chocolate cupcakes with strawberry frosting are great for February 14th, or whenever you’re looking for a chocolate cupcake recipe that’s just a little extra special.

How to Make Chocolate Cupcakes

The chocolate cupcakes are moist, fudgy, and have a perfectly soft cupcake crumb. Oil keeps the cupcakes moist. Then we’re using buttermilk for a soft, delicate cupcake crumb. If you don’t have buttermilk on hand – you can make your own with vinegar and 1% or 2% milk. Then for a super fudgy rich chocolate flavor, I recommend using dutch process cocoa.

Start by whisking all the dry ingredients together in a large bowl. In a separate bowl, cream together all the wet ingredients. Then add the wet ingredients to the dry ingredients and mix until just combined.

Spoon the batter into a cupcake pan lined with cupcake liners and bake. Let them cool completely before adding the frosting.

How to Make Strawberry Buttercream

For the strawberry frosting, we’re using real strawberries. You can use fresh or frozen berries – but if using frozen berries just make sure they aren’t packed in syrup or sugar.

First process the berries in your food processor or blender, and then put the juice through a metal sieve to remove the seeds. I usually do about 1/2 at a time and push the mixture through using the back of a spoon. It can be a little tedious – so if you don’t mind seeds in your frosting, you can skip this step.

Then boil the juice down until it’s thick like jam, and place it in the fridge or freezer to cool. After this is done – making the strawberry buttercream frosting is straight forward. Beat the butter until fluffy, then slowly beat in the powdered sugar followed by the cooled, boiled down strawberry puree.

PRO TIP: If you really want to amp up the strawberry flavor (and color), pulverize a half cup or so of freeze-dried strawberries, and mix those in.

You can either frost the cupcakes using a piping bag and tip (I used a 1M) or simply frost them with a knife.

I’m closing down the blog and walking away. I’m living my life out as a middle-aged Momma who wants nothing more than to LIVE and PLAY and EAT. These bars are one of the best recipes we will ever share on Oh Sweet Basil.

I mean, I’m not really shutting down the blog. I couldn’t ever be as fulfilled without a creative outlet, but these strawberry bars are one of the best desserts I’ve ever brought to the site. If it’s the only spring dessert recipe you make, you will be forever happy. Once again, we have Megan to thank, so let’s all give her a little praise for continuously sending amazing recipes to us! If you haven’t tried the mixed berries version of this recipe, do that asap!

The crust is a flaky, perfectly made crust but the best part is, in my opinion, making the dessert a day ahead so that it softens a stitch. Oh my goodness, my mouth just started salivating! WHAT IS MY DEAL?! I’m obsessed! 

The filling is the most delicate cream cheese, almost cheesecake filling, while the topping is a burst of vibrant strawberries, reminiscent of a strawberry pie! It’s honestly like a creamy strawberry shortcake, which happens to be my most favorite dessert ever.

Ingredients for Strawberry Cheesecake Bars

I’m going to divide up the list of ingredients by layer so it’s easy to see what is needed for each step. Here is what you will need…

Crust Layer

  • Flour: regular all purpose flour
  • Salt: enhances all the flavors
  • Sugar: adds a little sweetness to the crust
  • Vegetable Oil: the fat needed to create the flaky but strong base for the bars
  • Milk: helps bind all the ingredients together

Cheesecake Layer

  • Cream Cheese: you can use full fat or 1/3 fat but I do feel like the full fat sets up better, make sure it is room temperature so the cream layer isn’t lumpy
  • Powdered Sugar: adds sweetness to the filling
  • Heavy Cream: helps thin out the filling a little
  • Vanilla: adds flavor

Strawberry Layer

  • Strawberries: fresh bright red ripe berries
  • Sugar: adds sweetness to the topping
  • Ultra Gel: my preferred way for thickening the strawberry topping, see recipe card for using cornstarch the thicken
  • Lemon Zest and Juice: balances the sweetness of the berries
  • Water: thins everything out to create

This cheesecake fruit salad is awesome for a side at a potluck or BBQ or even as a dessert! Plus it’s so easy it’s foolproof! The perfect summer salad!

Ummmmm I could eat this berry cheesecake salad recipe for the rest of my life and die happy. Seven years ago we posted this recipe and I’ve been waiting all winter for berry season to hit so we could bring this recipe back to the front for everyone to enjoy.

It’s sweet deliciousness. It seems a little wrong to take all of those healthy berries and turn them into a calorie fest with everything you put in this dish, but guess what, WORTH IT!!

Seriously, you should all make this on a perfect sunny day and eat outside with the family. Or maybe take it to a BBQ so everyone can ask you what the amazing recipe is.

Cheesecake Fruit Salad Ingredients

This fruit salad recipe is so versatile. I’m going to list out the ingredients that we love, but know from the start that you can totally swap out different fruits or flavors of yogurt. Here is what you will need:

  • Instant Cheesecake Pudding: You want just the pudding powder to add that yummy cheesecake flavor.
  • Cool Whip: adds sweetness and creaminess
  • Strawberry Yogurt: adds more fruity flavor and creaminess to the salad
  • Bananas: cut into 1/2 inch slices
  • Strawberries: stem removed and sliced
  • Raspberries: left whole but rinsed
  • Optional: Blueberries, Blackberries, Peaches, Cherries or Grapes
  • Graham Crackers: If you really want to make this salad taste like a true cheesecake, add crushed up graham cracker.

PRO TIP: After trying many different combinations of fruit in this recipe, I’ve decided my favorite concoction is fresh bananas, fresh strawberries, fresh blueberries, fresh raspberries and fresh blackberries. So fresh! Haha!

How to Make Cheesecake Fruit Salad

One of my favorite things about this side dish is that it couldn’t be easier! Just two quick steps and you have a delicious fruit salad.

  1. In a large bowl, mix the pudding powder, whipped topping and yogurt together.
  2. Add the fruit and carefully fold it into the creamy cheesecake mixture. Then let it chill in fridge until it’s ready to serve (at least 30 minutes).

Brownies stuffed with a creamy white chocolate cream cheese filling and a big juicy strawberry on top. These tuxedo brownie cups are elegant and delicious!

Brownies are delicious and they go with just about any occasion or meal so they are the perfect “go to” dessert when you’ve got a lot going on, but it’s time to give brownies a little dressing up. We made it a black tie affair with these tuxedo brownie bites and I’m so glad we did!

The cream cheese filling is absolutely divine, but really can you EVER go wrong with cream cheese filling? It’s creamy and perfect along with that bold chocolate and the fresh, sweet berry.

Recommended Equipment

Ingredients for Tuxedo Brownie Bites

  • Fudge Brownie Mix: Make the brownies following the cake like instructions. You will need eggs, water and vegetable oil.
  • White Chocolate: adds a delicious rich flavor to the filling
  • Milk: thins out the filling a little and adds creaminess
  • Cream Cheese: use full fat cream cheese and make sure it is at room temperature (see section below for avoiding lumps)
  • Powdered Sugar: adds sweetness
  • Frozen Whipped Topping: adds structure to the filling
  • Strawberries: adds flavor and freshness and pairs so well with chocolate
  • Orange Zest: This is totally optional but it adds a beautiful depth of flavor. Mint or chocolate could also be used to garnish.

Lumps in Cream Cheese

Remember, when cooking or baking with cream cheese you need to either set it out for a bit so that you can soften the brick, making a smooth spread, or fill a sink with warm water and let it sit, still in its foil until soft. There’s nothing worse than lumpy cream cheese filling and no amount of beating will smooth out those pieces.

 

How to Make Tuxedo Brownie Bites

The beautiful thing about these brownie bites (besides how good they taste) is that they seem so decadent and fancy but they couldn’t be easier to make! Here are the basic steps:

  1. Prep: Preheat the oven and spray all the muffin cups with cooking spray.
  2. Brownie Mix: Prepare the brownie mix according to the cake like directions.
  3. Bake: Using a small cookie scoop, fill the cups 2/3 full with brownie batter and bake.
  4. Create: When the brownies are done baking, use the back of the small scoop the indent the middle of each brownie to create a “brownie cup”.
  5. Filling: While the brownies cool, make the filling (see section below for more details).
  6. Assemble: Add the filling to the brownie cups (more details below)
