Cottage Cheese Eggs

They’re so jammed with good stuff, in fact, that my boys used to (and technically still do) call them “Power Eggs.” The original title of the post here was “Cheesy Scrambled Eggs with Spinach a.k.a. Power Eggs.”

However, that title was a mouthful, albeit a delicious one, and the most important thing here is that these are just as tasty as can be, fluffy, cheesy, cottage cheese eggs. This is something we’ve been eating for well over ten years now, and the spinach in the recipe is optional. So, it was time to update this post. If you add spinach, though, Popeye will approve!

Many years ago, after watching Popeye eat his spinach and then grow stronger, my boys decided this breakfast should be called “Power Eggs.” Pretty much any time that we have spinach in the house, my boys request that I prepare their eggs this way. And now that they can cook for themselves, they often add in spinach too.

Yes, you read that right. My children are actually requesting that I add more spinach to their breakfast. If you give it a try, I suspect that you’re going to love these eggs just as much as we do.

This easy chicken pasta dish has become one of our favorite post-workout meals too. When we get home from the gym, we always want some good protein, a filling meal, but light enough that we don’t feel gross. Cue the Lemon Basil Chicken Pasta. We have been enjoying Tyson® Foods Grilled & Ready® Products to find the perfect meals for just these occasions.

Tyson® Grilled & Ready® Chicken are low in fat and high in nutrition. Thankfully we still had a ton of the Tyson® Grilled & Ready® Chicken Breast Strips and a little basil, spinach, and lemon in the fridge. These are obviously all meant for each other, so the pasta dish came together quickly, especially because the chicken comes fully cooked.

Everything was ready to eat and we were able to sit back and enjoy dinner as a family rather quickly. Dinner was on the table in less than 20 minutes! The kids loved the pasta, but especially the chicken. It was their favorite part. But that’s what I love about having a bag or two of the chicken in the freezer. I’m never stuck making unhealthy decisions when planning ahead didn’t happen.

And my favorite part? We loved this pasta served warm but it was equally delicious and flavorful cold as a pasta salad the next day for lunch. And, no cooking time needed so it’s perfect for school or work.

It seems like salmon recipes are the rage all over the place, so I have been working on loads of different recipes to cook salmon in different ways and with different flavors.

We have a classic garlic butter salmon, a BBQ salmon in the air fryer, a teriyaki salmon, a baked maple mustard maple salmon, a grilled salmon, an Asian sticky salmon, and a sweet and spicy orange salmon. I’m still working on a smoked salmon, so stay tuned! But this stuffed salmon has a story behind it…

Spinach Artichoke Stuffed Salmon

This last spring my family was just about to board a cruise ship with my parents when we got a text that changed everything; “Tom isn’t doing well. They’ve brought in hospice.”

You see, my entire life my parents were best friends with Tom and Peggy Glem. No, best friends doesn’t really describe it. More like family, they were family. Our kids matched up well in ages. Our vacations were often spent together, holidays were moments and memories and laughter and even our recipes seemed to run together. But no one was closer than mom and Peggy.

I always say that to have a “Peggy” means that you have the best kind of friendship possible. Because of Mom and Peggy, dad and Tom really didn’t have a choice but to become close as well. He was all about the tease, the lemon meringue pie, the fishing and the adventure. He was genuine and he loved his family. Like really loved them. Regardless of who walked in his door and how they were living their lives Tom truly tried to see them and love them.

Tom made it just a few short days and then all gathered for his funeral. Much like Peggy, Tom was taken far too soon, and far too young. This last year has brought a lot of change and chaos into our lives. There have been miracles, blessings, memories and laughter for sure, but I also can’t help but notice how quickly my life is changing.

A daughter about to head off to college, the friends of my parents, whom I have known and love for all my life, struggling through grief, death, poor health, and tragedies and the world spinning, and confusion, it’s a year unlike any other I’ve ever experienced.

I have found myself wanting to really be present to acknowledge those who have come before me to acknowledge the life that I’ve had, and the life that is still ahead of me and so to most, this will just be a stuffed salmon recipe with the most delicious spinach artichoke

Try this delicious recipe for Chicken Florentine, a classic French dish featuring tender chicken and flavorful spinach in a creamy sauce. Perfect for a cozy dinner at home.

Our middle daughter was the funniest little eater as a young girl. She wouldn’t touch mashed potatoes, but she loved spinach. She wouldn’t eat pepperoni, but she would eat prosciutto. She wouldn’t even look at spaghetti, but she would eat Chicken Florentine.

Don’t get me wrong here, I am NOT complaining that she had a more mature palate (especially since she was so picky and only wanted cereal or “dillas”), but seriously, I never knew what she is going to like. This recipe was one thing she would gobble up, and that is really saying something!

Ingredients for Chicken Florentine

Who would have every thought that a lightly breaded, pan-seared chicken breasts covered in a creamy herb sauce with a hint of lemon would be a dinner she would devour?! This chicken florentine recipe is totally fabulous. Here is what you will need:

  • Chicken Breasts: butterflied to make 4 thinner chicken pieces
  • Flour: just regular all purpose flour is all you need
  • Smoked Paprika: adds flavor to the light breading for the chicken
  • Garlic Herb Seasoning: adds flavor to the chicken
  • Olive Oil: helps sear the chicken breasts
  • Butter: adds flavor and richness
  • Garlic: adds flavor to the sauce
  • White Wine: use a dry white wine
  • Chicken Broth: adds flavor and acts as the base of the sauce
  • Heavy Cream: adds richness
  • Lemon: adds a bright pop of flavor and acidity
  • Kosher Salt: adds flavor
  • Black Pepper: adds flavor
  • Parmesan: acts as a garnish to the dish
  • Baby Spinach: adds flavor, color, texture and nutrients to the sauce

How to Make Chicken Florentine

Here are the basic steps for making this easy chicken dinner:

  1. Cut: Butterfly the two chicken breasts to create 4 pieces.
  2. Whisk: Add the flour and seasonings to the plan and whisk everything together. Dredge the chicken in the flour mixture on all sides.
  3. Sear: In a cast iron skillet over the medium-high heat, add some olive oil and butter and when shimmering, add the chicken. Reduce the heat to medium and sear each side for a few minutes until golden on each side. Remove the chicken to a plate.
  4. Sauté: Add the remaining butter to the skillet and sauté the garlic and then add the rest of the garlic herb seasoning.
  5. Simmer: Now we are going to make the cream sauce. Add the white wine and chicken broth and simmer until reduced by half.
  6. Stir: Add the heavy cream and simmer then add a squeeze of lemon j
