Crispy bacon, gooey cheese, and scrambled eggs, all wrapped in a crunchy tortilla? It’s no wonder that this Breakfast Quesadilla has become one of my favorite breakfast options. Try it and you’ll see why this is one I make on repeat.

I will always love a good, hearty breakfast recipe with components I can prep in advance. With this quesadilla, having the bacon, eggs, and toppings ready in the fridge means breakfast comes together in just a few minutes. (It’s the same trick I use with my breakfast grilled cheese.) You can also make it all to order on the day of.

Friends, if you’ve been reading my blog for a while, you’ll know how much my family and I love quesadillas. We could eat them for breakfast, as a late-night snack, in a box, with a fox. On any given week, it’s likely that either I or my boys will be trying out a new variation of one of our favorite quesadilla recipes.

In fact, this recipe for breakfast quesadilla was inspired by the breakfast grilled cheese sandwich I linked above. I love the salty, cheesy, rich flavors, and just had to try them with a crispy flour tortilla. The result? I could tell you how good this is, but this is definitely one where you have to taste it to believe.

My family loves our Mexican-inspired breakfasts. Breakfast tacos, breakfast enchiladas, and carnitas breakfast skillets make regular appearances at our table, just to name a few. Recipes like this one make it simple to bring my favorite people together to share a meal and some laughter. And, that is one of the things I love most about our weekend breakfasts.

Friends, let me tell you. I don’t think there is an easier breakfast option for feeding a crowd than this. Cook the sausage and eggs, assemble everything, and just pop it into the oven.

Breakfast nachos prove that quick and easy can still be enormously satisfying. This cheesy, hearty meal was a huge hit with my whole family. And, since they’re nachos, that means you’ve got endless versatility for different proteins, beans, and toppings. I’m already thinking about a whole bunch of different flavors to try!

Bacon Cheddar Quiche

I adore make-ahead and casserole-style breakfast dishes, preferably ones with plenty of protein as well. This recipe combines some of our favorite breakfast foods into a single dish that everyone in the family loves to eat.

My sister first made a bacon cheddar quiche for me about 10 years ago while I was visiting her family. I loved it at first bite and immediately asked her for the recipe.

Quiche is one of the most versatile and forgiving of all make-ahead breakfast options. You can prepare the crust and filling a day ahead and wait to assemble and bake it.

Or if you need an even faster breakfast or brunch option, you can bake the quiche ahead of time and reheat it when ready to serve. You can freeze the whole quiche once it has been baked or slice it up and freeze leftover portions for easy reheating and lightning fast breakfasts.

Cottage Cheese Eggs

They’re so jammed with good stuff, in fact, that my boys used to (and technically still do) call them “Power Eggs.” The original title of the post here was “Cheesy Scrambled Eggs with Spinach a.k.a. Power Eggs.”

However, that title was a mouthful, albeit a delicious one, and the most important thing here is that these are just as tasty as can be, fluffy, cheesy, cottage cheese eggs. This is something we’ve been eating for well over ten years now, and the spinach in the recipe is optional. So, it was time to update this post. If you add spinach, though, Popeye will approve!

Many years ago, after watching Popeye eat his spinach and then grow stronger, my boys decided this breakfast should be called “Power Eggs.” Pretty much any time that we have spinach in the house, my boys request that I prepare their eggs this way. And now that they can cook for themselves, they often add in spinach too.

Jammy hard boiled eggs are fantastic on their own with just a bit of salt or when added to salads, sandwiches, and pasta. These are perfectly set boiled eggs with firm whites and “jammy,” slightly runny yolks. They’re egg heaven!

What is a Jammy Egg?

If you have never heard of a jammy egg, let me introduce you to your new favorite egg. What is a jammy egg? It’s just another term for a soft-boiled egg with a runny yolk.

I’ve loved boiled eggs my whole life, but I recently discovered this method that delivers jammy hard-boiled eggs every single time. It used to be a happy accident when my boiled eggs turned out jammy, but now? We’ve cracked the secret.

The flavor and texture of the eggs is so much better with a soft, runny yolk. And, this method gets bonus points for requiring very little effort. That’s a win-win, in my book. Jammy eggs are fabulous as a snack with salt and pepper.
