I always thought it was so weird, orange juice and pumpkin? Who are these people? But, I was wrong and I will own it.

My friend, Whitney makes the most delicious Glazed Pumpkin Bread and there are two crazy changes that make it uniquely incredible; 1. Orange zest and juice 2. No cinnamon- look, it works so just trust us.

Whitney is one of my latest inspirations. She is an all-in Mom, an incredible cook and baker, and her family is LIVING life. A backyard full of a zipline, a playhouse that dad and his kids will have movie night sleepovers in and all the family time, including friends, you can imagine.

So, I kinda want that. Less of the “to-dos” and more of the “to-loves”. I love this bread. I love that it’s from her mom and even her 10 year old requested it instead of cake for his birthday. And I love the reminder of moments, not tasks. I needed a bit of a slap in the face with our home remodel taking up so much time lately, and this bread, my people and all of you are exactly what is on my “list” this week.

For the last 10 years, I’ve worked on a gingerbread loaf recipe, and I’ve hated all of them. This recipe is the first that’s actually moist and dense while still full of flavor and bounce. It is pure gingerbread heaven!

And I am an expert on gingerbread heaven, believe it or not! Have you tried our soft and chewy gingerbread man cookie recipe? That, my friends, is gingerbread heaven, and this molasses quick bread is like those gingerbread cookies but in loaf form. Perfect for breakfast, brunch, dessert or snack!

Ingredients for the Perfect Gingerbread Loaf

Here is a quick overview of all the ingredients you will need to make this rich gingerbread loa cakef. It is the perfect mix of those bold holiday spices in a moist delicious bread.

  • Dry Ingredients: All-Purpose Flour, Baking Soda, Nutmeg, Ground Ginger, Ground Cinnamon, Ground Cloves, Allspice and Salt

We are going to follow the typical baking steps for making a quick bread recipe. Dry ingredients, wet ingredients, combine and bake! Here are those steps a little more detail:

  1. Prep: Preheat the oven to 350 degrees F and grease a bread loaf pan.
  2. Whisk: Combine all the dry ingredients together and whisk to combine.
  3. Cream: Add the sugars, oil and apple butter to a large bowl and cream together until well combined. Then add the molasses and vanilla and mix well. Finally add the eggs one at a time, mixing until incorporated each time.
  4. Combine: Add the flour mixture to the wet ingredients mixture and stir until a few flour streaks remain.
  5. Fold: Fold in the buttermilk.

I have been waiting to make this apple quick bread for years!! There’s something so wonderful about apple anything but the real treat for me is that brown sugar icing.

When I was growing up my Dad would sometimes request a spice cake for his birthday dessert and Mom always threw on a cooked frosting that reminded me of a thick caramel. For some reason the idea of cozy spices and that warm brown sugar icing became a bit nostalgic for me, and while Mom isn’t a huge cooked apple fan, I knew I could make a version that would make her swoon, hence the apple bread with brown sugar icing.

Did you ever play school when you were growing up? I totally did and I was pretty darn sure I was going to grow up to be a teacher. I didn’t. But I did grow up to be a banana bread lover. Not sure what that has to do with being a teacher, but it’s the truth.

Zucchini bread on the other hand, gross. I did not like the texture as a kid at all. I refused to eat it, which must have been so much fun for my parents. And then I slowly forgot about it until I became a food blogger. If there’s one thing pinterest doesn’t need more of it’s quick bread recipes, so obviously I chose to give you all one.

Not true? Well, either way I decided it was high time I tried this whole zucchini bread thing again and guess what, I was a total chicken about it. I mean, I couldn’t just jump in right? I’m a toe dipper in the pool for heaven’s sake! I needed a slow start so what better thing to try than a chocolate chip zucchini banana bread? And guess what? It’s so blasted delicious I’m going to try a zucchini bread tomorrow. All by myself. If I hate it, I’ll give it away to the neighbors, ha!

Zucchini Banana Bread Ingredients

As with most quick breads, this chocolate chip zucchini banana bread requires mostly pantry staples:
