Our middle daughter was the funniest little eater as a young girl. She wouldn’t touch mashed potatoes, but she loved spinach. She wouldn’t eat pepperoni, but she would eat prosciutto. She wouldn’t even look at spaghetti, but she would eat Chicken Florentine.

Don’t get me wrong here, I am NOT complaining that she had a more mature palate (especially since she was so picky and only wanted cereal or “dillas”), but seriously, I never knew what she is going to like. This recipe was one thing she would gobble up, and that is really saying something!

Ingredients for Chicken Florentine

Who would have every thought that a lightly breaded, pan-seared chicken breasts covered in a creamy herb sauce with a hint of lemon would be a dinner she would devour?! This chicken florentine recipe is totally fabulous. Here is what you will need:

  • Chicken Breasts: butterflied to make 4 thinner chicken pieces
  • Flour: just regular all purpose flour is all you need
  • Smoked Paprika: adds flavor to the light breading for the chicken
  • Garlic Herb Seasoning: adds flavor to the chicken
  • Olive Oil: helps sear the chicken breasts
  • Butter: adds flavor and richness
  • Garlic: adds flavor to the sauce
  • White Wine: use a dry white wine
  • Chicken Broth: adds flavor and acts as the base of the sauce
  • Heavy Cream: adds richness
  • Lemon: adds a bright pop of flavor and acidity
  • Kosher Salt: adds flavor
  • Black Pepper: adds flavor
  • Parmesan: acts as a garnish to the dish
  • Baby Spinach: adds flavor, color, texture and nutrients to the sauce

How to Make Chicken Florentine

Here are the basic steps for making this easy chicken dinner:

  1. Cut: Butterfly the two chicken breasts to create 4 pieces.
  2. Whisk: Add the flour and seasonings to the plan and whisk everything together. Dredge the chicken in the flour mixture on all sides.
  3. Sear: In a cast iron skillet over the medium-high heat, add some olive oil and butter and when shimmering, add the chicken. Reduce the heat to medium and sear each side for a few minutes until golden on each side. Remove the chicken to a plate.
  4. Sauté: Add the remaining butter to the skillet and sauté the garlic and then add the rest of the garlic herb seasoning.
  5. Simmer: Now we are going to make the cream sauce. Add the white wine and chicken broth and simmer until reduced by half.
  6. Stir: Add the heavy cream and simmer then add a squeeze of lemon j

Prosciutto Chicken Milanese

Crunchy panko bread crumbs, creamy taleggio cheese, salty prosciutto, fresh arugula and juicy chicken breastchicken milanese… It’s what’s for dinner!

Soooo we don’t watch TV. Like, ever. It was a decision long ago to have more productive and restful evenings instead of glued to a TV and it’s been life-changing. Until Cade was on a business trip and saw Bobby Flay’s new show. It’s been so much fun to catch an episode here or there and one day we saw a little ad for a reel he’d made about chicken milanese.

Well, I’ve been trying to sell Cade on Chicken Milanese for years but every time we’ve had it there’s been capers (Cade’s nightmare) involved. I could not wait to try this prosciutto and taleggio cheese version. I will confess, I’m making this up entirely on my own, but inspired by what he did so please don’t kill the messenger if you find his recipe and it’s different.

But more importantly!!! This is our new favorite chicken!!! It’s light and crunchy, with a perfectly juicy inside. Then there’s this beautifully mild and almost a hint of tang from the creamy, melt in your mouth cheese. All topped off with perfect balance (remember in my cookbook how I talk about salt, fat, acid, heat?) of peppery arugula and bright, acidic red wine vinaigrette. It is amazing!!!

What is Chicken Milanese?

Chicken Milanese is one of the best recipes to learn when you’re starting to cook as it’s a great base which you can later experiment with sauces, toppings etc. So what is chicken milanese?

Chicken Milanese is an Italian breaded chicken which is made by first butterflying the chicken so it’s nice and thin, then dipping it in a breadcrumb and seasoning mixture to created the best breading for breaded chicken.

What Do I Need to Make Chicken Milanese?

This easy chicken dinner looks super fancy but the ingredients are actually really simple. Here is what you will need:

  • Chicken Breasts – see section below for how to butterfly a chicken breast
  • Flour – just regular all purpose
  • Kosher Salt – adds flavor to the breading
  • Black Pepper – freshly ground
  • Eggs – helps the Panko stick to the chicken
  • Water – blends with the egg to create an egg wash to help the breading stick
  • Panko Bread Crumbs – a Japanese bread crumb that is extra crunchy
  • Canola Oil – used to fry the chicken
  • Prosciutto – an Italian dry-cured ham that is uncooked and unsmoked and oh so delicious
  • Baby Arugula – gives a bright peppery pop of flavor
  • Taleggio Cheese – semi soft cheese with a creamy texture and mild/earthy flavor, see section below for possible substitutes

Red Wine Vinaigrette

  • Dijon Mustard – rounds out the flavor of this dressing so perfectly
  • Red Wine Vinegar – gives the dressing that signature acid and tang
  • Lemon Juice – freshly squeezed is best of course!
  • Olive Oil – the base of the dressing, a good quality olive oil will make all the difference
  • Honey – adds a natural sweetness to the dressing

Easy Biscuit Chicken Pot Pie

Imagine that creamy, crave-worthy chicken pot pie filling that you can’t resist and top it with golden, flaky buttermilk biscuits, and you have the most delicious family-friendly dinner ever!

It feels like a lot of our days are busy lately but there’s just nothing that can take the place of family dinner. Our chicken pot pie recipe remains one of our most popular recipes on the site, but I know how intimidating a pie crust could be so I’ve come up with a biscuit version. And not only that, but the semi homemade version comes together in no time!

I’m going to give you both a homemade and semi homemade version because when I first started cooking this, I used the canned soups I learned on. It taught me what veggies work and the perfect biscuit-to-filling ratio. We all have to start somewhere, and I’m a huge fan of teaching simple methods and then moving into completely homemade.

Garlic Bread Chicken Parmesan Sandwich

I know, you don’t think you need a recipe for a parmesan chicken sandwich, right? You would think that you could just stick our absolutely delicious recipe for chicken parmesan in a hoagie and all would be well, but you would be wrong. We’ve got a few secrets that are very important.

These chicken parm subs were so so yummy. If you live in Utah you may have visited a sandwich shop called, Moochies. It’s delicious, sloppy, fattening and perfect. I decided to make our own version of the chicken parmesan sub from there and oh my! It was really quite yummy.
