I’ve always been an admirer of Baker by Nature. Her recipes and photography are nothing short of magical. She gets it right every single time.

It’s rare for me to spotlight another blogger’s recipe, and it’s not because I don’t adore them (I absolutely do). The truth is, my brain is constantly overflowing with recipe ideas. There are so many that I can barely keep up, let alone make space for anyone else’s.

Seriously, you should see the never-ending list of recipes Cade and I have brainstormed. It’s hundreds deep, and my “finisher” personality struggles with it. Crossing off every recipe on that list would be the most satisfying thing ever. But for every one I check off, I come up with six more. The cycle never ends.

Then I came across these chocolate cheesecake bars, and I couldn’t stop thinking about them. You have to check out Baker by Nature’s stunning photos. They are pure art. But I kept imagining how perfect they’d be with a layer of dulce de leche. Once the idea hit, it became a must.

I feel like I should really name this post roll-over-and-die brownies because you’re going to devour so many of these rich, over the top, sticky, gooey, fluffy bars of deliciousness that you’ll probably roll over and die of brownie overload.

Seriously, they are so rich and fantastic you’ll think you cannot possibly try one more bite and then the next thing you know you’re standing in front of these dulce de leche brownies with fork in hand.

Creating this Recipe

I originally posted this brownies recipe over at BHG Delish Dish blog, and I have to say it was so much fun. Gosh, it was more than 10 years ago now, but I remember making them with our oldest daughter, and I had so much fun teaching her about melting chocolate, picking out toppings, etc. Now she’s off at college making these brownies for her friends and roommates!

If you could drop everything and recreate a memory for your kids what would it be? Would you be willing to create a memory for them or are you too busy?

But seriously, why didn’t I slow down a little more when I was younger? I was in such a hurry to grow up that sometimes I feel almost homesick, no sad, gosh I don’t know how to explain it, but I miss sitting in the kitchen with my Mom, gardening in our ginormous garden and snitching as many raspberries as I could, camping, singing around a fire, etc. Life passed by and now the same is happening for my kids. I hope I can create memories for them like I had growing up.

Ingredients for Dulce de Leche Brownies

You’ll make delicious fudgy brownies first, and then top them with dulce de leche and marshmallow fluff. Here is everything you will need:

  • Unsweetened Chocolate: We like Baker’s brand.
  • Butter: adds fat and richness to the brownies
  • Sugar: regular white granulated sugar
  • Eggs: gives the brownies structure
  • Vanilla Extract: adds flavor
  • Flour: regular all-purpose flour
  • Baking Soda: acts as a leavening agent to give the brownies rise
  • Mini Semisweet Chocolate Chips: adds more chocolate flavor and texture to the brownies
  • Dulce de Leche: grab a can at the store on the baking aisle or make your own at home with sweetened condensed milk
  • Marshmallow Creme: any brand will work great
  • Chopped Pecans (optional): If you’re not a nut fan, you can use chocolate chips or toffee bits. I love the texture it adds to the brownies.

Oreos are a big hit at our house and they are probably just as loved in almost every house in America. A crispy chocolate cookie and a sweet creamy center, what’s not to love? I guess some people are a little biased one way or another towards either the cookie or the cream, to dip or not dip but any way you look at it, these cookies have something special for everybody!

My husband especially loves this recipe for fake Oreos and I love it too, it is such a simple recipe for something so delicious! Who would’ve thought that a delicately sweet creamy filling sandwiched between two perfectly chocolatey Oreo cookies would be so simple to make in your own kitchen and taste so similar to the real deal?!

These are definitely going to be a new favorite at our house. These would also be great to make with the littles. They are going to love helping you squish the two cookies together. Sure, maybe a little messy but fun none the less!

What Ingredients Do I Need to Make Homemade Oreos?

Here is the best news of your day…you’re going to most likely have all these ingredients in the pantry already for these chocolate sandwich cookies! Cookies any time you want! Here is what you will need:

  • Dry Ingredients: Flour, Unsweetened Cocoa, Baking Soda, Baking Powder and Salt
    • NOTE: You can use dutch-process cocoa powder or black cocoa if you have it.
  • Wet Ingredients: Butter, Sugar, Brown Sugar, Egg and Vanilla Extract

Filling

  • Butter
  • Shortening
  • Powder Sugar
  • Vanilla Extract

How to Make Fake Oreos

This recipe is as easy as making chocolate cookies and while they are baking, you make the simple creamy filling! Let the cookies cool and then assemble. You better make a double batch because they are going to go fast! Here are the basic steps:

Cookies

  1. Prep: Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Cream: Add the butter and sugars to the bowl of a stand mixer fitted with the paddle attachment and cream them together until fluffy. Add the egg and vanilla and mix well.
  3. Combine: Sift the dry ingredients and then add them to the wet ingredients and mix to combine.
  4. Flatten: Scoop the cookies onto a lined baking sheet and flatten slightly with the bottom of a measuring cup sprayed with cooking spray.
  5. Bake: Bake the cookies for 8-10 minutes.
  6. Cool: While the cookies are baking, make the frosting. Let the cookies cool completely on a wire cooling rack.
