These s’mores cookies are everything I love about a summer campfire wrapped up in one ridiculously good cookie. They’re packed with graham crackers, melty chocolate, and gooey marshmallows tucked right inside.

I’m a perfectly golden, never burned marshmallow girl. If my marshmallow catches fire, we’re starting over. I didn’t wait all year for camping season to eat charcoal. My family grew up camping. It’s what we did in the summer, in the backyard, girls camp and boys camp, and for spring break.

My mom is an amazing camper and can bust out the most amazing Dutch oven, campfire, reflector oven and even tin foil dinners. But the real star of the show was always dessert. Her peach cobbler in a Dutch oven is still one of the best things ever about my childhood, but right up there with it is a good s’more. Nowadays I’m not super into s’mores but put it in a cookie and I’m allllll over it!

Homemade BYU Graham Canyon Ice Cream Copycat (Graham Central Station Ice Cream) [+Video]

Graham Canyon ice cream is a creamy graham cracker flavored ice cream with ribbons of graham cracker swirl and chunks of chocolate covered honeycomb bits. It is the best ice cream you’ll ever have!

Graham Canyon ice cream copycat is probably the greatest recipe copycat I’ve ever made and it works with both homemade and store-bought ice cream, though I will now, just as always, use Tillamook since it’s so easy.

Cade is insanely ice cream obsessed and since discovering Graham Canyon from the BYU Creamery or as Handel’s calls it, Graham Central Station, it has quickly risen to one of his most favorite flavors. Literally the most delicious ice cream ever and I think I’ve made every neighbor and friend in Davis County try it.

I decided I had to finally figure out a copycat version for Cade’s birthday this year. We used to be able to find graham canyon in a couple of different spots up here in Davis County, but I haven’t been able to find it in months. Since BYU is a little too far away for an ice cream run, I brought the BYU creamery into my kitchen! Best birthday ever for Cade this year!

Ingredients for Graham Canyon Ice Cream

I’m going to give you two different options for making this ice cream recipe – one completely from scratch and one that simplifies things by using store-bought ice cream that you transform into graham cracker ice cream. You can choose what you have time for. Here is everything you’ll need…

For the Homemade Ice Cream

  • Heavy Cream: use heavy whipping cream for the creamiest texture
  • Half and Half: combines with the cream for a smooth and creamy ice cream
  • Sugar: adds sweetness
  • Vanilla Extract: adds flavor

I had a bag of Hawaiian rolls in the freezer that I needed to use. I wanted to try something new and not your typical savory slider. The idea for a s’mores version just popped into my head one day, and oh my gosh, I kid you not, the family went nuts over them!!!!! Way better than a regular smores imho! Dessert sliders are totally my thing now!

Ingredients Needed to Make S’mores Sliders

You only need 5 ingredients to make this totally irresistible easy s’mores dessert! You’ll need the usual trio…grahams, chocolate and mallows, then just two more items and you’re set. Here are the details:

How to Make S’mores Sliders

This might be the most quick and easy smores dessert you’ll ever make. It’s just a few simple steps and some time baking in the oven, and then you can dig in! An irresistible dessert for a crowd in under a half hour! Here are the basic steps:

  • Prep: Preheat the oven 350° F, brush the bottom of a 9 x 13 baking dish with melted butter, and sprinkle graham crackers all over it.
  • Cut: Using a sharp bread knife, cut the full sheet of rolls in half and then place the bottom half in the baking sheet.
  • Layer: Cover the bottom rolls with a later of chocolate bars followed by a layer of marshmallows.
  • Top: Place the lid of the rolls on top and pour the rest of the butter over the top of the rolls, using a pastry brush to spread the butter all over the rolls.
  • Sprinkle: Using the remaining graham cracker crumbs, sprinkle them all over the top of the buttery rolls.
