This simple low carb, no bread egg casserole is perfect for breakfast, brunch or dinner! Full of Mushrooms, Ham, and Cheddar Egg Bake has so many great flavors, and it’s great for Weekend Food Prep!

Ingredients for Breakfast Egg Casserole Recipe

  • Butter: Provides fat for sautéing, helps mushrooms brown, and adds flavor richness. Olive oil can also be used.
  • Baby Bella Mushrooms: Add earthy depth and umami, and sautéing removes excess moisture so the casserole isn’t watery. 
  • Ham: Adds a salty, savory protein boost and balances the richness of the eggs and cheese. 
  • Eggs: The base of the casserole, binding everything together while giving it a rich, custardy texture .
  • Skim Milk: Lightens the texture of the eggs, keeps them moist, and prevents the casserole from being rubbery. 
  • Salt and Black Pepper: Enhance and balance flavors so the casserole doesn’t taste flat.
  • Cheddar Cheese: Melts into creamy pockets, adds bold cheesy flavor, and helps bind ingredients together.
  • Dried Oregano: Brings a subtle herby aroma and Mediterranean flavor to complement ham and mushrooms. 
  • Fresh Spinach: Adds freshness, nutrients, and a pop of color; balances the richness with a mild, earthy taste.

How to Make Ham and Cheese Breakfast Casserole

  1. Prep: Preheat the oven and grease a casserole dish.
  2. Sauté: Heat a skillet pan over medium heat and add the butter or oil, then add the mushrooms and cook without stirring until browned. Season with salt and pepper. Set aside.
  3. Beat: Beat the eggs and milk in a large bowl with a whisk. Season with about 1/2 teaspoon salt and pepper to taste. 
  4. Combine: Add in the ham, mushrooms, cheese, oregano and spinach to the egg mixture. Stir to combine.
  5. Bake: Pour into the prepared baking dish and bake until a knife inserted into the middle comes out clean.

Bacon Cheddar Quiche

I adore make-ahead and casserole-style breakfast dishes, preferably ones with plenty of protein as well. This recipe combines some of our favorite breakfast foods into a single dish that everyone in the family loves to eat.

My sister first made a bacon cheddar quiche for me about 10 years ago while I was visiting her family. I loved it at first bite and immediately asked her for the recipe.

Quiche is one of the most versatile and forgiving of all make-ahead breakfast options. You can prepare the crust and filling a day ahead and wait to assemble and bake it.

Or if you need an even faster breakfast or brunch option, you can bake the quiche ahead of time and reheat it when ready to serve. You can freeze the whole quiche once it has been baked or slice it up and freeze leftover portions for easy reheating and lightning fast breakfasts.

Cottage Cheese Eggs

They’re so jammed with good stuff, in fact, that my boys used to (and technically still do) call them “Power Eggs.” The original title of the post here was “Cheesy Scrambled Eggs with Spinach a.k.a. Power Eggs.”

However, that title was a mouthful, albeit a delicious one, and the most important thing here is that these are just as tasty as can be, fluffy, cheesy, cottage cheese eggs. This is something we’ve been eating for well over ten years now, and the spinach in the recipe is optional. So, it was time to update this post. If you add spinach, though, Popeye will approve!

Many years ago, after watching Popeye eat his spinach and then grow stronger, my boys decided this breakfast should be called “Power Eggs.” Pretty much any time that we have spinach in the house, my boys request that I prepare their eggs this way. And now that they can cook for themselves, they often add in spinach too.

Yes, you read that right. My children are actually requesting that I add more spinach to their breakfast. If you give it a try, I suspect that you’re going to love these eggs just as much as we do.

Sweet Potato Hash with Eggs

I prepared this recipe so many times over the course of my boys’ childhood. They always cleaned their plates when this was on the menu.

This breakfast hash first made its way to my table over 10 years ago. I can still remember the pride that my boys demonstrated when they figured out how to stack a little taste of everything onto their forks with each big bite.

They proudly informed us that doing so made the spinach taste so much better. I can empathize, as I well recall how much I disliked spinach as a child. I’m grateful my kids enjoy it most of the time now.

A spinach breakfast is a great way to get started on those leafy greens early. And, if you haven’t already been converted to the awesomeness that is eggs and spinach, I recommend trying my boys’ beloved Power Eggs too.

Bacon and Egg Taco

Is there a breakfast combination more quintessential than bacon and eggs? I feel a bit like Sam-I-Am when thinking about this pairing. I would eat them on potatoes, in a salad or two or three, and again each morning, plain as can be.

Cooked to a crispy bite, bacon adds a perfect texture to pillowy scrambled eggs. I want them snuggled up in a tortilla with plenty of cheese.

I typically skip the hot sauce, but my oldest uses the hottest stuff he can find. We almost always add green chile to this recipe. But, a bacon and egg taco is fabulous, no matter how you choose to fancy them up.

Egg Tacos

Breakfast tacos are always a huge hit with my whole family. This breakfast tacos recipe was inspired quite a few years ago by the Breakfast Nachos that my boys adored.

Eventually, there came a time that they requested breakfast nachos, and I didn’t have any tortilla chips in the house. However, a box of taco shells caught my eye and one thing led to another, and they got this egg taco recipe.

I make an egg taco with either hard taco shells and flour tortillas and however they’re made, they disappear lightning fast.
