Okay, I’m going to be real with you for a second: this Mexican Grilled Chicken is one of those recipes that I almost didn’t post because it feels almost TOO simple. Like, is this even a recipe? Am I a fraud? People ask me all the time what we do for our taco nights because apparently our backyard smells amazing (honestly, fair), and when I tell them the secret, they always laugh because it is just… this. Three ingredients. A hot grill. Done.

But here’s the thing, simple doesn’t mean boring, and easy doesn’t mean flavorless. This Mexican Grilled Chicken is proof of that. On the craziest, most chaotic weeknights when I need dinner on the table FAST and pancakes-for-dinner just isn’t going to cut it, this is what saves us.

The smokiness from the grill is the real secret here, friends. You could technically make this Mexican Grilled Chicken in the oven or in a pan, and yes, I’ll tell you how to do that too, but if you have a grill, please use it. That little bit of char and smoke makes everything taste like you actually tried, even when you very much did not.

One of my absolute favorite holidays is Easter. I love the decorations, the food, the meaning behind everything, all of it!! As a kid I couldn’t wait to wake up and find Easter eggs hidden all over our house and oh how lucky we were if we got a giant chocolate bunny or those big Cadbury Eggs!

Now I’ll be honest, I feel sick trying to eat those BIG Cadbury eggs, but man, those mini Cadbury eggs that are pure chocolate with a candy shell are irresistible! The best news is, no baking or cooking needed to make this treat!

Ingredients for Slow Cooker Chicken and Rice

My favorite thing about this recipe, except for dang good it tastes, is that it uses just 5 simple ingredients that I usually already have on hand. Check this list to see if you already have everything in house:

  • Cream of Chicken Soup: You can use store bought or you can make your own. See section below for making it from scratch.
  • Butter: I like to use unsalted butter so that I can better control the saltiness of the dish.
  • Italian Dressing Seasoning Dry Mix: You can find this by the salad dressings by the other dressing packets.
  • Chicken Breasts: Boneless skinless chicken breasts are what you are after. You can even throw them in frozen and it will work great.
  • Cream Cheese: Full fat cream cheese provides the best flavor, but the less fat version works fine too. Avoid the fat free.
  • Rice: You can make white rice, brown rice, pasta or mashed potatoes to serve with this creamy chicken.

The measurements for each ingredient is listed in the recipe card at the end of the post so keep scrolling for all the details.

20-Minute Cheesy Pesto Pasta

Need dinner on the table in 20 minutes? This Cheesy Pesto Pasta is quick and easy to make, and you can throw in any extra veggies lying in your produce drawer!

The BEST Pesto Pasta Recipe

If you’ve got a need for vegetarian or gluten-free recipes, these basil pesto noodles is a great dinner option. You can add chicken to make it a heartier dish, but it’s actually really fantastic with just grape tomatoes. Heck, you could even throw in chopped zucchini, which would also be yummy. In fact, I think I will next time.

Our favorite way to serve this pesto pasta is actually straight from the pan. I know, that doesn’t seem very classy, but the pan is sizzling hot and to bring it out and serve it straight into bowls really is so fun and it keeps everything fresh and fragrant versus putting it into a cold serving bowl.

We started with our Classic Pesto recipe. You just can’t beat the taste of fresh pesto! It’s our favorite and I think it’s the toasted garlic that really takes things over the top. We actually add a little more to the pasta as well. It’s ridiculous, but true. Garlicky, cheesy noodles are kind of awesome.

I don’t know how healthy pesto pasta is considering that you dump a full cup of cheese in there, but it’s certainly better for you than a lot of other pasta dishes out there. It’s fresh, simple and a really fast pasta to serve as a main dish. Not to mention it is full of flavor!
