Ok listen, college Carrian was a different Carrian. I was just trying to survive all the things and have a dang good time. Money? Not really. Time? None. Skill? I mean, I could make a few things…

Law and Order SVU? Yes.

My second year of college a roommate introduced me to Law and Order SVU. About once a week we’d watch an episode while we ate either a freezer chicken cordon bleu or a New York Burrito from the other side of town. Those frozen chicken cordon blue’s were fancy and I would savor every bite.

I no longer can stomach the show, once you have kids all of that content is a bit much for the soul. And I can’t really get behind that frozen log of chicken, so I needed a new recipe to bring back the nostalgia and this casserole is exactly that.

What is Chicken Cordon Bleu?

Chicken cordon bleu is a French dish where chicken is wrapped around ham and cheese, breaded and pan fried or deep fried. This casserole recipe uses all the classic chicken cordon bleu flavors without the tedious task of creating and frying the rolled chicken. It’s sort of a deconstructed, simpler version of chicken cordon bleu, if you will.

Casseroles are a total comfort food, and this chicken cordon bleu casserole is creamy, rich and indulgent. It’s so quick and easy to make. Here are the steps:

  1. Prep: Preheat the oven to 350 ℉ and spray a 9×13″ baking dish with nonstick spray.
  2. Cook the Chicken: Add oil to a skillet over medium-high heat. Season the chicken with salt and pepper then add it to the skillet. Reduce the heat to medium-low and cook for 5-7 minutes per side. Once cooked through, remove to a cutting board and let it rest before chopping.
  3. Create the Sauce: Melt the butter in a saucepan over medium heat then whisk in the flour and let it bubble until golden brown. Slowly pour in the broth and milk and whisk until thickened. Whisk in the rest of the sauce ingredients.

I love feta and have been trying to think up new ways to eat it. I found a feta zucchini and thought, dude, I can make that into chicken! And so I did and we can’t get enough of this recipe!

  • Extra Virgin Olive Oil: helps the chicken crisp up on the outside and helps the seasonings stick to the chicken
  • Seasonings: Chili Powder, Smoked Paprika, Garlic Powder and Kosher Salt

For the Chickpeas

  • Chickpeas: canned chickpeas that have been patted dry with paper towels
  • Seasonings: Cumin, Ground Coriander, Smoked Paprika and Garlic Salt

  • Lemon Juice and Zest: adds flavor and acidity

We are moving into day 2 of Peach Week here at Oh Sweet Basil, and today we use peaches in this mega delicious savory dish!

This happened.

And then a gazillion other peach things happened, but I’m getting ahead of myself.

A few years ago I saw a photo on instagram from just a normal, not there to be a food blogger person and it was the darkest, weirdest angle, but my goodness, I loved it. The chicken was a whole roasted bird that should have been on its back but instead was breast down in a pan surrounded by, covered in roasted peaches and the happiest little caption about how good dinner was that night.

I loved the unapologetic joy that, by instagram standards would have been nothing but imperfection coming from that post. And instantly I was sold. I needed a peach chicken recipe as well. I wanted it simple, the peaches to be the star and this my friends is that recipe.

Ingredients for Peach Roasted Chicken

Peach season is so short here in Utah. I am not a fan of that. So toward the end of last summer, when delicious juicy fresh peaches flooded the farmstands and grocery stores, I loaded up and made all the peach things I had on my wish list. This roasted peach chicken dinner was one of my favorites. Here is what you will need:

  • Chicken Breasts: We prefer bone-in and skin on for this recipe.

Marinade

  • Peach Preserves: You can use homemade peach jam or use store-bought.
  • Buttermilk: Helps tenderize the chicken.

For Roasting

  • Peach Preserves: We use some more peach jam to add more flavor during roasting.
  • White Wine Vinegar: If you don’t have white wine vinegar, good substitutes would be apple cider vinegar, champagne vinegar, or white balsamic vinegar.
  • Thyme: Fresh thyme is definitely recommended, but if you don’t have it, use 1/2 teaspoon dried thyme.
  • Dijon Mustard: Adds flavor to the roasting sauce.
  • Olive Oil: Helps the chicken stay moist and helps it crisp during roasting.
  • Shallots: Adds flavor.
  • Garlic: Adds flavor.
  • Sea Salt: Adds flavor.
  • Black Pepper: Adds flavor.

Cheesy chorizo stuffed chicken breasts is the chicken dinner recipe you never knew you were missing! Bold flavor in every bite!

Last winter we busted out our queso fundido and as we were shoveling all of that deliciousness loaded onto crisp and salty chips the thought occurred to me: this should be stuffed in chicken.

And so it is. And it’s delicious. The best part is when a little cheese and chorizo spills out into the pan and gets a little crisp around the edges. You’re going to love it!

Ingredients for Chorizo Stuffed Chicken Breasts

You don’t need many ingredients to make this tasty stuffed chicken recipe! When chorizo is involved, you know you’re headed to flavor town! Here is what you will need…

  • Chorizo
  • Chicken Breasts
  • Chihuahua Cheese, or Oaxaca cheese, mozzarella cheese would also work
  • Olive Oil
  • Taco Seasoning

How to Make Chorizo Stuffed Chicken Breasts

Stuffed chicken breasts seem so fancy, but it really couldn’t be easier! Here are the basic steps…

  1. Cook: Brown the chorizo in a skillet on the stove top, drain excess grease and set aside.
  2. Butterfly: Cut each chicken breast in half lengthwise creating a pocket in the side of the chicken breast.
  3. Stuff: Fill each pocket with chorizo and cheese.
  4. Sear: Oil and season the outside of the stuff chicken breasts and then sear both sides on the stovetop.
  5. Bake: Place the chicken in a baking dish and finish cooking the chicken in the oven.

What is Chorizo?

What is chorizo anyway? Good question!!

Chorizo is just pork sausage that has been heavily seasoned and tastes sooo delicious! It’s most common in Spanish and Mexican cuisine, so chances are you’ve already had it. Ok, there are two different methods to make chorizo, so let me break it down:

The Mexican style of chorizo is made from raw pork and what you’ll see in the stores the most. Spanish chorizo is often smoked and a little more tricky to find.

That means that the Spanish version Is more like a sliceable sausage whereas Mexican is like a ground meat. For this recipe, we will use Mexican chorizo.

Where to Buy Chorizo

When you head to the store, where do you find Mexican chorizo? I buy chorizo in the butcher or meat department. In our local grocery stores they are in two places.

  1. The first being the regular meat department usually at one end or the other.
  2. The second, a specialty Mexican cooler that has salsas, Mexican cheeses, tortillas and chorizo.
