I’ve always been an admirer of Baker by Nature. Her recipes and photography are nothing short of magical. She gets it right every single time.

It’s rare for me to spotlight another blogger’s recipe, and it’s not because I don’t adore them (I absolutely do). The truth is, my brain is constantly overflowing with recipe ideas. There are so many that I can barely keep up, let alone make space for anyone else’s.

Seriously, you should see the never-ending list of recipes Cade and I have brainstormed. It’s hundreds deep, and my “finisher” personality struggles with it. Crossing off every recipe on that list would be the most satisfying thing ever. But for every one I check off, I come up with six more. The cycle never ends.

Then I came across these chocolate cheesecake bars, and I couldn’t stop thinking about them. You have to check out Baker by Nature’s stunning photos. They are pure art. But I kept imagining how perfect they’d be with a layer of dulce de leche. Once the idea hit, it became a must.

Easy Brownie Batter Dessert Dip

Our girls have started cooking more and more, and while I love it, I also want to make sure that it always stays fun and not merely a means to eat. We found this darling new cookbook by Aimee from Like Mother Like Daughter called 50 Fixes for Brownie Mixes and knew it would be just perfect for Friday movie nights.

One of the most important things we want to teach our children is that family matters. We spend time together, we talk about silly stuff, real stuff and future stuff.

A good friend once told me that her mother taught her that her siblings were her best friends. If ever it became clear that siblings weren’t being nice to each other or constantly wanting to be with friends and not family, then they had a few days where it was sister time and they could only play with each other. What a lovely idea! To this day they are all the best of friends and that’s something to admire.

We now choose to do the same. In fact, our girls have been having sister dates. I take them somewhere and just sit back and watch them choose ice cream together or whatever.

I’m getting off topic, this brownie cookbook was a great chance for our girls to spend time together doing something fun. They can choose to cook from the cookbook whenever they want as long as it’s together. It’s so fun trying their new creations and this last weekend it was brownie batter dip. This chocolate dip is so good!!

The whole cookbook is loaded with beautiful pictures, easy recipes, and it’s all thanks to brownies — Cade’s Achilles heal. 😉 So maybe this Christmas do the same for your kids and just see what happens when they start making memories and yummy food together.

Creating this Recipe

I originally posted this brownies recipe over at BHG Delish Dish blog, and I have to say it was so much fun. Gosh, it was more than 10 years ago now, but I remember making them with our oldest daughter, and I had so much fun teaching her about melting chocolate, picking out toppings, etc. Now she’s off at college making these brownies for her friends and roommates!

If you could drop everything and recreate a memory for your kids what would it be? Would you be willing to create a memory for them or are you too busy?

But seriously, why didn’t I slow down a little more when I was younger? I was in such a hurry to grow up that sometimes I feel almost homesick, no sad, gosh I don’t know how to explain it, but I miss sitting in the kitchen with my Mom, gardening in our ginormous garden and snitching as many raspberries as I could, camping, singing around a fire, etc. Life passed by and now the same is happening for my kids. I hope I can create memories for them like I had growing up.

Ingredients for Dulce de Leche Brownies

You’ll make delicious fudgy brownies first, and then top them with dulce de leche and marshmallow fluff. Here is everything you will need:

  • Unsweetened Chocolate: We like Baker’s brand.
  • Butter: adds fat and richness to the brownies
  • Sugar: regular white granulated sugar
  • Eggs: gives the brownies structure
  • Vanilla Extract: adds flavor
  • Flour: regular all-purpose flour
  • Baking Soda: acts as a leavening agent to give the brownies rise
  • Mini Semisweet Chocolate Chips: adds more chocolate flavor and texture to the brownies
  • Dulce de Leche: grab a can at the store on the baking aisle or make your own at home with sweetened condensed milk
  • Marshmallow Creme: any brand will work great
  • Chopped Pecans (optional): If you’re not a nut fan, you can use chocolate chips or toffee bits. I love the texture it adds to the brownies.

What Do I Need to Make Raspberry Lemon Bars?

Besides the fresh raspberries and lemon, most of the ingredients needed will be items you already have in the pantry or fridge. You’ll need a few ingredients for the buttery shortbread crust and a few more for the creamy lemon raspberry filling. Here is what you’ll need:

Easy to Make Blackberry Lime Bars

These blackberry lime bars are creamy, bright, and super delicious. A little lime juice, a handful of blackberries, a simple graham cracker crust, a few easy steps, and you have sweet, tangy bars that everyone will enjoy.

I learned long ago that women love chocolate and men love berry desserts… supposedly. Things like, Berries and Cream Cheesecake Bars, Razzleberry Pie, or Deep Fried Strawberry Cheesecakes. But that is so not the case with my husband and I.

I definitely prefer all things berry and he is all about the chocolate. Well, unless it’s his favorite Lime Pie Brazil. Which is where this recipe came from. His lime pie recipe that he learned while living in Brazil is made with a cracker crumb crust, sweetened condensed milk, media crema, eggs and lime juice of course.

One day we were trying to decide on dessert and he voted for his pie, but I was in the mood for blackberries. The juicy blackberries were making the filling too soupy when baked, so we took the crema out and it turned out perfect. It totally reminds me of our lemon raspberry bars.

There’s just something about a fresh fruit dessert that makes me feel so light and wonderful. I mean, really. Even if it’s a long and nasty winter I’ll bust out these blackberry lime bars and suddenly winter doesn’t seem so bad.

Oregon Berries

Last summer we had the chance to go to Portland to visit Oregon Berries and it was incredible! The taste of those fresh ripe berries were unlike anything you can buy at the store here. When we buy local we ensure quality and secure the livelihoods of families who are making our country a place of variety and success. Cade and I committed right there to check where our berries are coming from and only buy local.

The blackberries we tasted there made me think of these blackberry lime bars and I just knew I had to reshoot this recipe. So here you go!
