This Southern English pea salad is a refreshing and delicious side dish, perfect for any gathering. Made with peas, bacon, herbs, and a creamy dressing, it’s sure to be a hit at your next potluck or holiday dinner.

It’s the perfect side dish for Easter, 4th of July, Thanksgiving, or Christmas. I don’t know where English pea salad originated from, or why it’s so dang good considering it’s the world’s shortest list of ingredients, but I do know that any time someone shares a photo of a Southern Potluck or church spread, there’s that pea salad!

Last Fourth of July, we had Cade’s mom, brother, and his family and a friend over for a fun day of swimming and eating. Yes, I did wear a red bathing suit. Yes, I did get mistaken for the lifeguard 100 times. I have had the worst time trying to find a bathing suit that wasn’t cut crazy high or crazy low all year and this one I love, though I will watch where I wear it now. 

But back to the BBQ — we swam, the kids became exhausted, and we headed back to the house where we cooked up classic burgers thanks to our 2 hamburger secrets post, and a selection of our favorite summer salads including this green pea salad, our tomato mozzarella salad, and Nancy’s Southern Grape Salad. We finished the night off with our dreamiest Banana Cake with Cream Cheese Frosting EVER.

Green pea salad is considered to be low-carb, gluten-free, and a slightly healthier option to pasta salad (though we have a pasta version of this recipe too if you prefer). But this doesn’t mean it’s straight up healthy — it contains bacon, cheese, and mayonnaise, after all.

What Ingredients Do I Need for This Salad Recipe?

Although English pea salad has a few different names, it’s all the exact same thing — cold pea salad. You may hear it called pea salad, English Pea Salad, Southern Pea Salad, Green Pea Salad, or, as we’ve called it, Southern English Pea Salad.

Here’s what goes into this easy potluck side dish recipe: 

  • Frozen Peas
  • Mayonnaise
  • Apple Cider Vinegar 
  • Salt and Pepper
  • Red Onion
  • Bacon
  • Cheese (Colby Jack or Cheddar Cheese is our favorite)

Some recipes also call for hard-boiled eggs, which we left out this time as I’m really enjoying it as a straight up pea salad lately. I’ve added it into the recipe as optional in case

Best Chili Recipe

The best chili recipe I have ever made! It’s packed with ground beef, bacon and 3 kinds of beans with just the right combination of spices for the perfect flavor! Top it off with a little sour cream and shredded cheese, Yum!

You all have been loving our award winning Instant Pot chili for quite some time now, but this one is better. I can’t believe I’m saying that because the Instant Pot version is the bomb, but this is THE BEST!

Now, I’ve actually never been a chili fan. Spicy is not my thing and growing up I didn’t like ground beef and wasn’t a huge bean fan so chili was definitely not my favorite. But then I became intrigued, and all from one story…

My sister once called me later at night and I was juuust about to go to sleep. I knew she’d just been on a date so I answered to hear the details. No. No this was not a, “best date ever” call, but a “you will not believe the awkwardness” call.

He had called last minute and asked if she could pick him up. “Oh sure” she replied, totally not worrying about it as they were nearing the end of college and maybe his car was out of luck. So she picks him up and he tells her he actually doesn’t have a car, or a job, nor is he actually in school. Instead he’s pursuing breakdancing.

Which is fine, there’s probably some good ones out there, but as he later showed her, he wasn’t one of them. But I’m distracted. So this kind boy tells her, I’m taking you out for the very best thing I’ve ever eaten. “You’re going to love it,” he says. Right at the light, then head straight down main. Take a left at this light and straight again until it’s on the left hand side. Wendy’s.

Well again, she’s so kind and gives him a chance. They get inside and he orders two baked potatoes with chili. Whhhhhaaaaaa?

This is the BEST thing you’ve ever eaten?

That date didn’t end up going anywhere, haha, but it sure sparked something in me!

Foil Baked Mustard Maple Bacon Salmon

Tender flaky salmon wrapped in bacon and glazed with a garlic maple mustard sauce, this baked salmon recipe is sensational! You have to try it!

My friend Megan swears by her dad’s salmon and bacon. I only like salmon when it’s got enough flavor to mask the fact that it’s actually fish. Bacon to the rescue! Everything is better with bacon!

My friend Janet makes a good one, and I love a few of our own recipes like our Salmon Bowls and Asian Sticky Salmon, but when Megan said there was bacon in her dad’s recipe, I was so intrigued!

If you have been an OSB follower for long, you will know that I am not a seafood person. It’s just not my thing. Even salmon…I have been trying to love salmon for years, and I have to say that this baked maple mustard salmon has won me over!

Before You Begin…

Grab four sheets of foil that are big enough to wrap each of your fillets in and lay 2 slices of bacon vertically on each piece of foil.

How to Pick Good Fresh Salmon

Buying salmon at the grocery store can be intimidating, but it doesn’t need to be! There are a few things to look for…

  • Smell – good fresh salmon should not have a fishy smell
  • Color – vibrant, deep shades of red/coral/pink is what you are after and there shouldn’t be any brown spots anywhere on the fillet
  • Appearance – it should look moist and not dried out
  • Touch – when you gently press the salmon, it should bounce back and not leave an indentation

What Do I Need to Make This Baked Salmon Recipe?

All the ingredients are easy to find and create the most amazing flavor. Here is what you will need:

  • Salmon Fillets
  • Lemon
  • Kosher Salt
  • Pepper
  • Olive Oil Mayonnaise
  • Maple Syrup: Grade A
  • Garlic
  • Dijon Mustard
  • Yellow Onion
  • Bacon
  • Thyme: or parsley

How to Make Baked Maple Salmon

  1. Prep: Preheat the oven, get foil pieces ready and place the bacon on each piece of foil. Season the salmon fillets.
  2. Sauce: Whisk all the ingredients of the sauce together and pour the sauce on each fillet.
  3. Assemble: Top the fillets with the onions and wrap the bacon around the fillets. Fold the foil around each piece of salmon.
  4. Bake: Place the sheet pan in the oven and bake, then open the foil and change the oven to broil to crisp up the top for about a minute.
  5. Season: Sprinkle each fillet with fresh herbs and serve!

What is a Club Sandwich?

A club sandwich, also called a clubhouse sandwich, is a sandwich of bread (occasionally toasted), sliced cooked poultry, or fried bacon, lettuce, tomato, mayonnaise, cheese and usually three slices of bread.

It is often cut into quarters or halves and held together by cocktail sticks.

What Goes in a Club Sandwich?

As with most sandwiches, club sandwiches can be customized to your liking, but generally club sandwiches have turkey, bacon, lettuce, tomato, mayo and cheese. We are leveling up the traditional club sandwich with this recipe though with a few more toppings. Here is what you will need:

  • Bread: a high quality white bread or multigrain bread
  • Mayonnaise: any brand works great
  • Green Leaf Lettuce: you could also use romaine
  • Tomato: hothouse, vine ripe, or heirloom tomatoes are preferred
  • Deli Roasted Turkey: take the time to stop at the meat counter and get some of the good turkey
  • Deli Ham: you can get smoked ham, black forest ham or honey ham…whichever you prefer
  • Granny Smith Apple: Trust me on this one! It adds a pop of sweetness and tang. So good!
  • Smoked Cheddar Cheese: we always buy Tillamook but you can buy any good high quality brand of cheese
  • Applewood Smoked Bacon: or you can buy brown sugar bacon and cook it until it’s nice and crispy
  • Avocado: adds creaminess and just yumminess
  • Salt and Pepper: add a little to the tomato slices and/or the avocado

Garlic Basil Mayo

  • Mayonnaise: whatever your favorite brand is
  • Basil: must be fresh
  • Garlic: you can just throw the clove in whole
  • Lemon: fresh lemon zest

German Potato Salad

German potato salad is served warm with tender potatoes, crunchy bacon and a mustard vinegar dressing that is everything a potato salad should be!

Don’t get me wrong, we love our traditional potato salad! And it always has a place as a favorite side dish at the picnic table, but if you want to change things up and ditch the eggs and mayo, then this is the potato salad for you!

I start by boiling some golden and red potatoes, then I cook the bacon on the stove in a dutch oven. Once the potatoes are fork tender, I combine them with the bacon and some garlic with a little of the bacon fat (hello flavor town!!) and then top it all with a tangy mustard (2 kinds!) and apple cider vinegar dressing.

The ingredients are so few and so simple that it seems impossible it could be so good, but it is heaven! It’s all topped with a little fresh parsley on top because, while it seems useless, it actually freshens the whole dish up. Trust me, you need to make this.

Ingredients for German Potato Salad

  • Potatoes: We love the combo of some Yukon gold potatoes and red potatoes, but you could do all of one or the other. Just avoid the russets!
  • Salt: adds flavor to the potatoes as they boil
  • Bacon: adds flavor and a crunchy texture to the dish. Don’t forget to reserve some of the bacon grease left behind.
  • Butter: use unsalted so that you can control the saltiness of the dish
  • Olive Oil: extra virgin is preferred
  • Apple Cider Vinegar: adds acid to the dish
  • Garlic: adds flavor, be sure to use fresh garlic
  • Sugar: mellows out the vinegar
  • Mustards: we use a combo of stone ground mustard and Dijon for maximum flavor
  • Salt and Pepper: just enough until it tastes perfect to you
  • Parsley: some is going to get mixed in while everything is cooking and some is going to be added fresh on top at the end so make sure you follow the instructions

What Kind Of Potatoes Do You Use For Potato Salad?

For potato salad, you’ll want to stay away from starchy, thick-skinned potatoes like russets, which will fall apart during the cooking process.

Red potatoes or golden potatoes maintain the perfect texture for salad.

Variations for German Potato Salad

There are a few options for changing this recipe up. You can always try different combinations of potatoes, though we really love the combination of reds and Yukon golds.

If you want to lighten things up a little, try using turkey bacon. You’ll be losing a lot of flavor if you go with this option because you won’t have the bacon grease to add to the dressing. Turkey bacon is quite lean and doesn’t leave much, if any, grease behind.
