This is a Southern recipe with an electric pressure cooker twist! These Green Beans and Potatoes in the Instant Pot are so flavorful and tender, and there’s bacon on top!

Easy Instant Pot Side Dish

You read that right — these green beans and potatoes are topped with BACON! It all starts by sautéing the bacon and ends by mixing the bacon into the dish. Bacon is just SO GOOD, and it really takes these soulful Instant Pot green beans and potatoes to the next level.

So basically, we are taking one delicious side dish, combining it with another delicious side dish, and adding bacon. You just can’t go wrong! Then it’s all cooked in just a few minutes in the Instant Pot! Winning!

To make Instant Pot green beans with bacon and potatoes, you’ll need the following: 

  • Bacon
  • Red Onion
  • Fresh Garlic
  • Potatoes
  • Butter
  • Green Beans
  • Chicken Broth
  • Olive Oil
  • Salt and Pepper
  • Fresh Parsley

Which Green Beans Should I Buy?

There are a lot of different kinds of green beans. Not all green beans are created equal!  You want to buy haricot vert green beans. Pardon my French there! It is actually French for the long, slender green beans you can find in your produce section.

It is pronounced “heir covair,” not “harry cot vert.”  Although I like to say “harry cot vert” in my brain because it sounds so dang funny! Say “heir covair” in your best French accent and you’ll be impressing all your dinner guests!

Haricot vert are thinner than green beans native to the U.S.A. and are picked at an earlier point in their growth, making them more flavorful.  

Which Potatoes Should I Buy?

When all is said and done, really any potato would get the job done here, but Yukon Gold potatoes are our favorite for this dish.  They are smooth and soak in that yummy bacon flavor so well!  They also have a very light and flaky skin, which means you don’t have to peel them.  If you don’t have Yukon Gold in the house, here is our ranking of which potatoes to use:

A creamy sauce is the key to our perfect brussel sprouts and broccoli recipe, plus buttery sautéed mushrooms and crisp, salty bacon! It the best easy vegetable recipe.

My mom LOVES mushrooms sautéed in butter. She loves caramelized mushrooms and mushroom soup, but nothing really sold me on the power of a little ‘shroom’ until now. This is the absolute best recipe for brussel sprouts AND their famous green and stalky cousin, broccoli. As the flavors blend and melt together under the blanket of a silky and creamy white sauce the nuttiness from the nutmeg will take over and everyone will be salivating for just one little bite.

It was a Sunday and my plans for dinner ended up being a waste, so I quickly shifted gears and began pulling the leftovers into a new concoction, one I hoped would be decently received.

I had:

Broccoli

Brussel Sprouts

Cream

and Mushrooms.

But I was feeling a bit insecure. I mean, do broccoli and brussel sprouts really hold up next to one another?

And hold up they have! This is one of my very favorite recipes to make. If it was 20 years ago I’d have given a hard pass on those brussels, heck probably the broccoli too, so why was I willing to play the game now?

Because of that sauce.

It’s rich and creamy without drowning the vegetables. And I’m convinced that it actually makes you happier when you combine vibrant color with an opposite sauce and texture. For some reason it really does go from being ok to delicious!

This veggie recipe is simple but totally loaded with flavor. Here is what you will need:

  • Bacon
  • Butter
  • Brussels Sprouts
  • Broccoli Florets
  • Baby Bella Mushrooms
  • Garlic Seasoning: like Johnny Garlic Spread or Kinder Buttery Steakhouse Rub
  • Heavy Cream
  • Buttermilk
  • Parmesan Cheese

A while back, we made honey mustard bacon brats and let me tell you, they are delicious. Like major good. It’s hard to want a brat any other way now. But as Cade and I were cleaning up dinner he said, “That sauce tastes so good I want to eat it on everything!” and as he snagged one last piece of saucy bacon from the pan to gobble it down before washing the skillet, I had the idea.

This really would be good on anything. Like really. At first I was really going to go to town and make a crunchy chicken but Cade and I are trying really hard to make good eating choices during the week, which is difficult today as I just photographed the best, oh my goodness amazing pumpkin cookies ever and I can hear them calling my name from the kitchen, “Carrian, you know you could have just half a cookie and you’d feel so happy…”

Ingredients for Honey Mustard Bacon Chicken Skillet

Ok, I digress…back to this tasty one skillet chicken recipe! Here are the ingredients you will need:

  • Chicken Thighs: You can use boneless chicken or use bone-in. If you use bone-in chicken, it will just need a little longer to cook through.
    • NOTE: Chicken breasts (boneless, skinless) also work great with this recipe if you want a more lean dinner.
  • Water: helps with the base of the honey mustard sauce
  • Honey: adds flavor and natural sweetness
  • Dijon Mustard: any brand works great or you could go with spicy brown mustard too if you want a little kick
  • Cilantro: adds a bright pop of freshness
  • Bacon: because you never need a reason for bacon
  • Olive Oil: helps finish off the sauce and sauteing
  • Garlic: adds flavor

Southern English Pea Salad

This Southern English pea salad is a refreshing and delicious side dish, perfect for any gathering. Made with peas, bacon, herbs, and a creamy dressing, it’s sure to be a hit at your next potluck or holiday dinner.

It’s the perfect side dish for Easter, 4th of July, Thanksgiving, or Christmas. I don’t know where English pea salad originated from, or why it’s so dang good considering it’s the world’s shortest list of ingredients, but I do know that any time someone shares a photo of a Southern Potluck or church spread, there’s that pea salad!

Last Fourth of July, we had Cade’s mom, brother, and his family and a friend over for a fun day of swimming and eating. Yes, I did wear a red bathing suit. Yes, I did get mistaken for the lifeguard 100 times. I have had the worst time trying to find a bathing suit that wasn’t cut crazy high or crazy low all year and this one I love, though I will watch where I wear it now. 

But back to the BBQ — we swam, the kids became exhausted, and we headed back to the house where we cooked up classic burgers thanks to our 2 hamburger secrets post, and a selection of our favorite summer salads including this green pea salad, our tomato mozzarella salad, and Nancy’s Southern Grape Salad. We finished the night off with our dreamiest Banana Cake with Cream Cheese Frosting EVER.

Green pea salad is considered to be low-carb, gluten-free, and a slightly healthier option to pasta salad (though we have a pasta version of this recipe too if you prefer). But this doesn’t mean it’s straight up healthy — it contains bacon, cheese, and mayonnaise, after all.

What Ingredients Do I Need for This Salad Recipe?

Although English pea salad has a few different names, it’s all the exact same thing — cold pea salad. You may hear it called pea salad, English Pea Salad, Southern Pea Salad, Green Pea Salad, or, as we’ve called it, Southern English Pea Salad.

Here’s what goes into this easy potluck side dish recipe: 

  • Frozen Peas
  • Mayonnaise
  • Apple Cider Vinegar 
  • Salt and Pepper
  • Red Onion
  • Bacon

Best Chili Recipe

A bowl of chili. The chili has ground beef, beans and a rich sauce. It is topped with sour cream and shredded cheese and a piece of cornbread is on the edge of the bowl.

The best chili recipe I have ever made! It’s packed with ground beef, bacon and 3 kinds of beans with just the right combination of spices for the perfect flavor! Top it off with a little sour cream and shredded cheese, Yum!

You all have been loving our award winning Instant Pot chili for quite some time now, but this one is better. I can’t believe I’m saying that because the Instant Pot version is the bomb, but this is THE BEST!

Now, I’ve actually never been a chili fan. Spicy is not my thing and growing up I didn’t like ground beef and wasn’t a huge bean fan so chili was definitely not my favorite. But then I became intrigued, and all from one story…

My sister once called me later at night and I was juuust about to go to sleep. I knew she’d just been on a date so I answered to hear the details. No. No this was not a, “best date ever” call, but a “you will not believe the awkwardness” call.

He had called last minute and asked if she could pick him up. “Oh sure” she replied, totally not worrying about it as they were nearing the end of college and maybe his car was out of luck. So she picks him up and he tells her he actually doesn’t have a car, or a job, nor is he actually in school. Instead he’s pursuing breakdancing.

Best Thing I’ve Ever Eaten

Which is fine, there’s probably some good ones out there, but as he later showed her, he wasn’t one of them. But I’m distracted. So this kind boy tells her, I’m taking you out for the very best thing I’ve ever eaten. “You’re going to love it,” he says. Right at the light, then head straight down main. Take a left at this light and straight again until it’s on the left hand side. Wendy’s.

Well again, she’s so kind and gives him a chance. They get inside and he orders two baked potatoes with chili. Whhhhhaaaaaa?

This is the BEST thing you’ve ever eaten?

That date didn’t end up going anywhere, haha, but it sure sparked something in me!
