If you love apple cider, you’ll likely fall completely in love with Apple Cider Ice Cream. Rich and creamy, fragrant with apples and real apple cider flavor, this ice cream is heavenly when scooped over an apple crisp or served with a slice of pie.

Apple Cider Ice Cream

I tested this recipe a few different ways, and simply couldn’t get the flavor I wanted from apple cider initially. Then I finally stumbled on boiled cider.

What is Boiled Cider?

In a nutshell, boiled cider is a roughly 8 to 1 concentration of apple cider. Nothing is added. It has a tart, sweet apple taste. It will add an intense apple flavor to anything that you cook with apples.

Can you make boiled cider at home? Sure. You’ll need a gallon of cider to make about 2 cups worth of boiled cider. It will take about 5-6 hours to reduce down over low simmering heat.

That said, I found purchasing boiled cider to be a terrific option for my purposes. You can purchase it on Amazon, and also directly from the apple orchard. (It’s a trade off with a higher price and free shipping from Amazon or a lower price and paid shipping direct from the seller.)

Oatmeal with Fruit

We’ve been making our oatmeal recipes with fruit for about as long as I can remember and we’ve been making this particular fruit-filled oatmeal for over 10 years now. Holiday Oatmeal is a huge favorite with both the adults and the kids in our home.

Every guest we’ve ever served this to has requested the recipe. With plenty of fresh apples, sliced bananas, dried fruits, and nuts, cooked into creamy oats with a bit of brown sugar, this is a memorable oatmeal for everyone.

You can make this (and most other oatmeal recipes) with milk or with water and the oatmeal turns out great both ways. When I make oatmeal with water, I top each bowl with a pat of butter when I’m serving it.

Whenever we have an abundance of fruit in the kitchen, it’s a sure bet that some of it will make its way into our oatmeal in the morning. Apple Cinnamon Oatmeal is solid proof of that and my boys love that one too.

My own favorite quick breakfast year-round is Blueberries and Cream, but classic Peach Oatmeal and Peach Baked Oatmeal trump that when peaches are in season.

Heirloom Apple Rolls

Heirloom apple rolls are one of my favorite recipes and it’s been passed down through our family for over 200 years! Perfect for breakfast or dessert, these rolls are the perfect treat for a cozy autumn day.

Grandma’s House

My Grandma was such a lovely, sweet, tender hearted woman and these apple rolls are her recipe from over 100 years ago at least (although I did modernize them with butter instead of lard). She pass just a few months ago now so this recipe has taken on a new level of tenderness and memory.

I loved going to Grandma’s house, sitting on her lap to read a bazillion stories and have her tickle my arms or back until both of us were out cold. She lived in the same, cute house in Jerome, Idaho until the end, and I don’t know that many people had a backyard quite like hers. We would have summer picnics where all the cousins would come over and we’d run around playing games while the adults prepared the food and Grandma made homemade ice cream.

The weather was always perfect, the grass green and the trees were strong and tall to climb in. You could always find my older sister up in an apple or apricot tree reading another book. We loved visiting the cows on the farm to give them bottles, collecting “cat tails”, playing in the ditch,  and creating “circus acts” on the swing set during family picnics under the fruit trees. Grandma’s house was magical.

Heirloom Rolls

This apple roll recipe has sooo much sentimental value to me. This is a recipe that just keeps getting passed down through the generations, and I now I’ve taught my darling girls to make them for their future families. Grandma said that this recipe was passed down through the “Mamas” to their new families clear until it got to my mom, who hates cooked apples and dropped the ball. I’m lucky that Grandma taught me to make them so I can continue the tradition. I love how much she loved this recipe and her memories of her mother making them and the kids being so excited and mouths just watering while they waited to eat them.

Here’s what Grandma said about the rolls,

“We used to be so hungry for them, and mama would put them in a big square pan and that’s all we would eat for dinner. We would eat them with fresh cream and we just couldn’t wait to eat them up!”

Grandma was just darling. Seriously, just look at how cute she was! Mary Tyler Thueson was an incredible storyteller. In fact, she wrote a book and gave it to each of her kids and grandkids. So, I thought it would be fun to share her stories every now and again (scroll down past the recipe card to read one of Grandma’s stories). Plus, I love that these old recipes use ingredients that are simple and have been around forever.

Apple Crisp Ice Cream, the name alone sounds pretty amazing, doesn’t it? 

That’s before I tell you that this ice cream is made with the creamiest of homemade vanilla ice creams, then completely loaded with bits of cinnamon sweet baked apples, and crunchy streusel topping.

There is nothing about this ice cream that I did not love. (Except perhaps the fact that I ate way too much of it.)

The idea for this ice cream popped into my mind a few weeks ago. I tried a couple of different versions using the same ingredients, but not with a real apple crisp. They lacked the authentic apple crisp flavor I wanted.

I finally caved and decided to bake an actual apple crisp just for the ice cream. As soon as my apple crisp finished cooling last week, I was chopping it into bits and folding it into this ice cream.

I don’t know when I’ve been more excited about an ice cream recipe. (Spoiler alert – that excitement was fully justified.)

Roasted Pear & Apple Salad with Caramelized Shallot Maple Vinaigrette

We love to make this roasted pear and apple salad in the fall with all the freshly harvested apples and pears!

It is topped with prosciutto, cinnamon pecans, pepitas, gorgonzola and raisins then tossed with the most stunning caramelized shallot maple vinaigrette

 

Ingredients for Roasted Apple Salad

Here is a list of the ingredients you will need for this salad recipe:

  • Prosciutto – adds crunch and smoky delicious flavor
  • Honeycrisp Apples (or Jonagold) – these apples hold up great to roasting and the flavor is the best
  • Bartlett Pear (or Bosc) – become so flavorful and delicious when roasting
  • Cinnamon Pecans (or Hazelnuts) – You can buy these at the store or make them on your own. See section below for how to make them at home.
  • Olive Oil – helps keep the apples and pears from sticking to the pan
  • Black Pepper – adds flavor
  • Mixed Greens with Arugula – If your container of mixed greens doesn’t include arugula then buy some arugula and add it. Arugula just shines in this salad!!
  • Gorgonzola – We love gorgonzola but it is easily substituted with any cheese you love. Try smoked cheddar, gouda, goat cheese, manchego, gruyere, etc.
  • Pepitas – adds a yummy little crunch and nutty flavor
  • Golden Raisins – can be replaced with regular raisins, craisins or pomegranate seeds

Vinaigrette

This recipe was inspired by a Taste of Home recipe I was reading. It just sounded so good and it was fabulous on this salad! Here is what you will need:

  • Shallots – have a mild onion flavor and caramelize quickly
  • Kosher Salt – adds a touch of flavor to the shallots as they caramelize
  • Maple Syrup – use the real stuff!
  • White Balsamic Vinegar (or Apple Cider Vinegar) – you gotta have vinegar for a vinaigrette, both these options are sweet and tangy
  • Olive Oil – the base of the vinaigrette
The measurements for each ingredient in the salad and in the homemade dressing are listed in the recipe card at the end of this post.

What Apples are Best for Salads?

I am forever loyal to honeycrisp apples! Jonagold will also work great. If you can’t find those or if they are too expensive (they can get quite pricey), then go with gala, granny smith, or Braeburn.

How to Roast Apples and Pears

Roasting apples and pears is so easy! You will want to slice them pretty thin, cutting the pears a little thicker than the apples. Then lay them on a baking sheet that has been drizzled with a little olive oil to prevent sticking. Make sure all the slices are in a single layer. Place them in a preheated oven (425 degrees) and let them roast for 10 minutes. Then flip them all over and roast them for about 5 more minutes or until they are golden.
