Thai Peanut Turkey Lettuce Wraps

I love these turkey lettuce wraps!  Years ago I was living in Chicago and we all went out to PF Changs for dinner. Everyone was ordering the lettuce wraps and I was like, “meat in lettuce??… yeah sounds really great…blah!” And then I tried them and they were awesome!!!!!!!! I was totally thinking it would be lame, but it was delicious.

This is one of my favorite meals to make in the summer months when you want a light easy meal!

Ingredients for Turkey Lettuce Wraps

A quick and easy recipe is just what I need in the summer time! It always seems like we are running to a soccer practice or rushing in from being at the pool, and simple and delicious is my summer jam! Here are the ingredients that you will need…

For the Filling

  • Ground Turkey: You can go as lean as you want, but know that the leaner the turkey, the drier the filling will be.
  • Celery: diced up nice and fine
  • Carrots: You can shred your own carrots or buy them already shredded.
  • Red Bell Pepper: You could use yellow or orange too, but I wouldn’t use green.
  • Onion: minced up small
  • Garlic: adds flavor
  • Slivered Almonds: adds the most amazing crunch to the wraps

For the Sauce

  • Peanut Butter: You want creamy and it adds all the great peanut flavor to the sauce.
  • Brown Sugar: adds a depth of flavor and richness to the sauce
  • Sugar: adds more sweetness to the sauce
  • Hoisin Sauce: a thick, dark colored sauce that is both sweet and salty
  • Oyster Sauce: a thick, dark sauce made from oyster extract that doesn’t taste fishy despite the name and adds an earthy flavor
  • Rice Vinegar: made from fermented rice and adds acidity
  • Soy Sauce: adds great umami flavor to the sauce
  • Red Pepper Flakes: adds heat to the sauce
  • Lettuce Leaves: you want whole large leaves with no tears in them

How to Make Lettuce Wraps

You only need about 30 minutes to make this flavorful recipe. It’s as simple as browning the turkey, sautéing the vegetables and whisking together the peanut sauce. Here are the basic steps…

  1. Brown the turkey until it is almost totally cooked. Remove to a bowl.
  2. Whisk together all the ingredients for the sauce in a separate bowl.
  3. Add all the vegetables to the skillet and sauté until tender. Then add the meat back in.
  4. Add the sauce and let it all simmer together for a few minutes.
  5. Spoon the meat mixture into the lettuce leaves and sprinkle with slivered almonds and sliced green onions.<

Leftover Thanksgiving Turkey Sliders

Take your Thanksgiving leftovers and combine them into the most tasty sliders! Turkey, stuffing, cheese and cranberry sauce in a mini sandwich baked in a poppy seed dressing…yummmmm!

For four years now I’ve been playing around with turkey sandwiches and I’ve for sure figured out a few leftover turkey recipes you need to try. For example, have you had a delicious roll with cream cheese, poppy seed dressing, mozzarella or havarti cheese (ohhhh or muenster!) with a nice slice of turkey? Easy and so delicious.

But this is not about that sandwich. This is about the idea I’ve been playing with year after year and finally I just went all in and added every main ingredient, turkey, stuffing, a killer honey mustard sauce, cranberry sauce and especially melty cheese. And THEN!!!! Cover the whole thing in a butter poppy seed dressing and bake it all in the oven.

Turkey Pot Pie [+Video]

Turkey pot pie is all the comfort you could imagine bundled in the most perfectly golden crust. It is creamy, full of veggies and perfect for leftover turkey.

Our chicken pot pie was one of our biggest posts last year. We had so many emails around Thanksgiving about using leftover turkey instead of chicken that we decided a turkey pot pie needed it’s own place on the blog.

We are making everything from scratch. From the flaky crust to the turkey and vegetable filling, it’s all homemade and we are going to walk you through each step.

It took me a while to figure out the perfect crust for a savory pie that was hardy enough to hold up under the filling but still fall apart flaky delicious. Once I figured that out and the consistency of the filling, the best pot recipe ever came to be. Now we are doing a turkey version and you’re going to love it!

Ingredients for Turkey Pot Pie

The ingredients list for this recipe might look long at first glance, but you will probably have most them on hand already. Make a stop in the produce section and grab a few fresh veggies and herbs, and you’ll be all set! And don’t forget the turkey! I love to use the leftovers from our oven roasted turkey, but you could use whatever cooked turkey you like best.

Creamy Turkey Green Chile Soup is loaded to the brim with chunks of leftover turkey and roasted green chile.

Creamy Turkey Soup

Soup with a richly flavorful creamy broth full of roasted green chile and loaded with chunks of leftover turkey is my kind of comfort food. Just cupping the bowl with two hands and breathing in the heat of the green chile warms me right up.

My husband and boys give this recipe two thumbs up around the table every time I make this. They are lovers of spice and flavor. Take that as a gentle warning that this soup has a bit of heat. You can easily adjust to suit your tastes though.

Start by using a large stock pot. I do suggest using a heavy stockpot if you have it. It helps to distribute the heat nicely when making soups and stew. Plus I like how I can turn my burner on low and it keeps the soup nice and warm.

Over medium heat melt butter, saute onions and garlic. When your onions are soft it is time for my favorite ingredient – the green chile. It is no secret I keep my pantry fully stocked at all times with our favorite 505 Southwestern medium flame roasted Green Chiles.

Add the seasonings and flour. The mixture will become slightly thick, a bit paste-like. Keep stirring so it won’t burn or stick to the stockpot.

Slowly add the chicken broth a few cups at a time. Whisk continuously to ensure you are maintaining a smooth texture and it doesn’t become lumpy. Next, add the chopped turkey. If you don’t happen to have leftover turkey on hand, shredded rotisserie chicken works just fine.

Old Fashioned Chicken Pot Pie Recipe

I have always loved chicken pot pie and this Turkey Pot Pie is the same recipe that I’ve made for years. So, lucky for us all, we can make this pot pie year-round.

If you don’t have leftover turkey in the house, you can make this pot pie with a store-bought rotisserie chicken or whatever leftover chicken you happen to have on hand.

Using the store-bought pie crusts saves a lot of time during prep, but if a homemade crust is more your style, go for it. And, the filling here? It is absolutely fabulous.

When I was a little girl, my grandmother would often bake those individual frozen pot pies for dinner. This leftover turkey pot pie reminds me of spending the night at my grandma’s house, but truthfully in a much more delicious way.

As an adult, I have to admit that frozen pot pies are less appealing. But, the nostalgia of the meal remains. So, I happily make my own pot pie to satisfy the craving.
