A while back, we made honey mustard bacon brats and let me tell you, they are delicious. Like major good. It’s hard to want a brat any other way now. But as Cade and I were cleaning up dinner he said, “That sauce tastes so good I want to eat it on everything!” and as he snagged one last piece of saucy bacon from the pan to gobble it down before washing the skillet, I had the idea.

This really would be good on anything. Like really. At first I was really going to go to town and make a crunchy chicken but Cade and I are trying really hard to make good eating choices during the week, which is difficult today as I just photographed the best, oh my goodness amazing pumpkin cookies ever and I can hear them calling my name from the kitchen, “Carrian, you know you could have just half a cookie and you’d feel so happy…”

Ingredients for Honey Mustard Bacon Chicken Skillet

Ok, I digress…back to this tasty one skillet chicken recipe! Here are the ingredients you will need:

  • Chicken Thighs: You can use boneless chicken or use bone-in. If you use bone-in chicken, it will just need a little longer to cook through.
    • NOTE: Chicken breasts (boneless, skinless) also work great with this recipe if you want a more lean dinner.
  • Water: helps with the base of the honey mustard sauce
  • Honey: adds flavor and natural sweetness
  • Dijon Mustard: any brand works great or you could go with spicy brown mustard too if you want a little kick
  • Cilantro: adds a bright pop of freshness
  • Bacon: because you never need a reason for bacon
  • Olive Oil: helps finish off the sauce and sauteing

Want a quick and easy healthy dinner recipe? This cheesy meatballs and zucchini skillet is a one pot wonder and the whole family, yes even your picky eaters will be happy.

We actually love sticking zucchini into savory dinner meals to get extra veggies into our meal. Have you tried our Mexican zucchini boats or our creamy zucchini sausage casserole? Zucchini is so versatile and can be paired with so many different flavor profiles. I just love it!

What are Zoodles?

Zoodles are “noodles” made out of zucchini. Using a spiralizer, you create thin, spaghetti-like strips of zucchini and then they are cooked like noodles in a dish. They are healthier and low carb than regular pasta.

  • Marinara Sauce: The absolute best store-bought sauce is Rao’s! It’s so good!
  • Mozzarella + Mild Cheddar Cheese: shredded and mixed together
  • Garlic Salt: adds flavor
  • Salt and Pepper: adds flavor
  • Basil: Fresh is preferred!

Tips for Making the Best Zoodles

Once you spiralize the zucchini you have to place them in a strainer or colander and sprinkle them with salt! This helps release the liquids. Let them sit for 10-15 minutes and then use a clean cloth to wrap the zoodles up and squeeze the water out. Squeeze, squeeze, squeeze until the water stops dripping.

This skillet Italian sausage and peppers with whole-wheat penne is the perfect home cooked meal and it’s all in one pot which makes clean up a breeze!

This dish is a family favorite for us! And it’s weird to say that because I have picky eaters (they are SO much better than they used to be), and usually peppers and onions aren’t on the “yes list” for picky eaters, but in this recipe, they just work! The flavor is bold, and everyone loves sausage and pasta!

When I need to get dinner on the table quickly, this is one of my go-to recipes. All you need is one pan and 30 minutes!

What Do I Need to Make Sausage and Peppers Penne?

Most of the ingredients in this dish are pantry staples, so all you will need at the grocery store are some sausage links, a couple of peppers and an onion. Here is a list of what you will need:

  • Whole-wheat Penne Pasta – you can find this right by all the other pasta at the grocery store
  • Italian Sausage – I generally go with mild uncooked sausage, but you could use spicy sausage or a sweet sausage depending on what you are craving
  • Green Pepper – remove the stem and seeds and slice into thin slices
  • Red Pepper – remove the stem and seeds and slice into thin slices, red peppers are a little sweeter than green peppers so they add another dimension of flavor
  • Yellow Onion – use a sharp knife to slice the onion in the thin slices
  • Red Wine (cooking wine) – we don’t drink alcohol so we cook with cooking wine, but feel free to use whichever you prefer
  • Tomato Paste – a 6oz can, any brand works, just choose your favorite
  • Tomato Sauce – an 8oz can, any brand works, just choose your favorite
  • Water – thins out the sauce a little
  • Italian Seasoning – a dried seasoning blend that you can buy at the grocery store that usually includes dried basil, dried oregano, dried rosemary, dried thyme and dried marjoram
  • Sugar – enhances the flavors
  • Salt – adds flavor
  • Parmesan Cheese – great for a garnish to add an extra punch of flavor
