I had wondered about making a chocolate pumpkin bread for years, but I was always worried the cocoa powder would make it dry. So I finally started testing recipes last spring, and you guys, this is one of the best chocolate loaf recipes I’ve ever had.

The pumpkin is the secret. It adds so much moisture that you get a tender, almost brownie-like loaf without losing that classic pumpkin bread texture. And then we add chocolate chips AND pour ganache over the top because apparently we don’t know when to stop. 😂

Cantaloupe Bread Recipe

My mom planted cantaloupe. The melon I hated as a kid. And it ended up that it was 100 times better home grown! There was now only one problem, it was exploding in her garden, so we had no choice but to find new recipes to use it in. Which got us thinking, if zucchini produces an over abundance and it makes good bread, could cantaloupe work like a banana, applesauce and zucchini and produce the same? PBS in Iowa had a recipe so we set out to try it!

I’m sorry for how many photos were added, but it was just so good. I changed the cinnamon and ginger from other recipes to pumpkin pie spice because it was in the front of my cabinet. I also used oil instead of butter and no milk as it wasn’t needed.

How to Pick Out a Good Cantaloupe

Feel the weight: It should feel heavy for its size, which means it’s juicy.

Check the stem end: Look for a smooth, slightly sunken scar where the stem was attached. Avoid melons with a pointy or jagged stem end.

Look at the color: A ripe cantaloupe has a warm golden or beige background, not green or gray.

Smell it: Give the blossom end a sniff. It should have a sweet, melon aroma. No smell usually means it’s underripe.

Press gently: It should give slightly at the blossom end, but not feel soft or mushy.

Inspect the netting: The netted skin should be raised and well-defined, not smooth or flat.

Avoid blemishes: Skip melons with cracks, soft spots, or large bruises.

I always thought it was so weird, orange juice and pumpkin? Who are these people? But, I was wrong and I will own it.

For the last 10 years, I’ve worked on a gingerbread loaf recipe, and I’ve hated all of them. This recipe is the first that’s actually moist and dense while still full of flavor and bounce. It is pure gingerbread heaven!

And I am an expert on gingerbread heaven, believe it or not! Have you tried our soft and chewy gingerbread man cookie recipe? That, my friends, is gingerbread heaven, and this molasses quick bread is like those gingerbread cookies but in loaf form. Perfect for breakfast, brunch, dessert or snack!

Ingredients for the Perfect Gingerbread Loaf

How to Make a Gingerbread Loaf

We are going to follow the typical baking steps for making a quick bread recipe. Dry ingredients, wet ingredients, combine and bake! Here are those steps a little more detail:

  1. Prep: Preheat the oven to 350 degrees F and grease a bread loaf pan.
  2. Whisk: Combine all the dry ingredients together and whisk to combine.
  3. Cream: Add the sugars, oil and apple butter to a large bowl and cream together until well combined. Then add the molasses and vanilla and mix well. Finally add the eggs one at a time, mixing until incorporated each time.
  4. Combine: Add the flour mixture to the wet ingredients mixture and stir until a few flour streaks remain.
  5. Fold: Fold in the buttermilk.
  6. Bake: Pour the batter into the prepared bread pan and bake for 50-60 minutes.
  7. Cool: Once baked, let it cool in the pan for 10 minutes then remove from the pan and cool completely on a wire cooling rack.
  8. Dust: Sprinkle powdered sugar over the top once it has cooled completely.

Fall comes and I crave all the apple desserts! This apple bread recipe is perfectly spiced and loaded with that warm comforting apple flavor we all love. And it’s the brown sugar icing that will keep you coming back for more!

I have been waiting to make this apple quick bread for years!! There’s something so wonderful about apple anything but the real treat for me is that brown sugar icing.

When I was growing up my Dad would sometimes request a spice cake for his birthday dessert and Mom always threw on a cooked frosting that reminded me of a thick caramel. For some reason the idea of cozy spices and that warm brown sugar icing became a bit nostalgic for me, and while Mom isn’t a huge cooked apple fan, I knew I could make a version that would make her swoon, hence the apple bread with brown sugar icing.

Before You Begin…

You’ll want to start by browning the butter you need for this recipe. There’s a section below for how to brown butter. You will use the browned butter in the cake and in the icing, and you will want it ready when you start this recipe. Brown a whole stick of butter, then you will remove 3 tablespoons for the icing and use the rest in bread.

Also, make sure that you have apple butter ready, either homemade or store bought.
