Kids love them. Adults love them. They are a great dessert to feed a crowd. Our brown butter dulce de leche rice krispie treats are just about the best thing you will ever taste in your life! And if you want just a classic rice krispies treat, we’ve got you covered there too! But what if you just need a quick Rice Krispie treat fix and don’t want a whole pan of them tempting you all week long?

My sister and her family make little single serving Rice Krispie treats so that they don’t have a bunch of dessert sitting around that everyone keeps munching on. I thought it was such a great idea!

Here is a special glimpse into a typical evening in the Cheney household. We get the kids down for bed, and all we want to do is sit down with a sweet treat and veg!  Is this how it is at your house too? Or are we the only ones? Rice Krispie Treats – A History

Can you guess what year Rice Krispie treats came to be?  I had no clue, but it was a lot earlier than I expected! According to Wikipedia, Rice Krispie treats were invented in 1939 in the home economics department of the Kellogg Company as a fund raiser. That means there has been 85 years of Rice Krispie treats magic!  Everyone should make this Rice Krispie treat in a mug to celebrate!

Rice Krispie Treats for Special Diets

You can buy Rice Krispies that are gluten free. Just make sure the box says “Gluten Free” on the front.  They are different than your regular Rice Krispies. The Great Value Walmart brand is my go-to!

Butter and marshmallows are gluten-free. That is great news for our gluten free friends!  However with the butter in there, it is not dairy-free.  There is an easy solution for that…just replace the butter with coconut oil!  It works like a charm and still tastes like the Rice Krispie treat you know and love!

Rocky Road Fudge is a classic for the holiday season and you wont be able to stop eating it! Outrageously delicious, super easy and only 4 ingredients needed! Your family will love it!

December is such a busy time with getting ready for Christmas, attending parties, ending the school semester, packing to leave town, purchasing and making gifts… the list goes on. So for those of you who are crazy busy or just want something delish, this Rocky Road Fudge is for you!  It takes less then 10 minutes to whip up.

With just 4 ingredients and a microwave, how much easier do things get?! Seriously, I think the hardest part is waiting for the fudge to set up… and keeping my kiddos from eating the rest of the bag of marshmallows. You get all the flavors of your favorite ice cream but in fudge form!

Ingredients for Rocky Road Fudge

With just 4 ingredients, you’ll have the tastiest rocky road fudge! All these ingredients can also be bought several weeks ahead of time. Here is what you will need…

  • Chocolate Chips: We prefer semi-sweet chocolate chips, but you can use milk chocolate chips if you prefer.
  • Sweetened Condensed Milk: We always use Eagle Brand. It’s just best!
  • Mini Marshmallows: just one 10oz bag will get the job done
  • Walnuts: roughly chopped

How to Make Rocky Road Fudge

This might be the easiest fudge recipe you’ve ever seen! And the extra bonus is that it’s a no bake dessert. You don’t even need a double boiler or a candy thermometer. I don’t know about you, but quick and simple is exactly what I need around the holidays! Here are the basic steps:

  1. Prep: Line a 9×9 inch pan with foil and grease lightly with butter.
  2. Microwave: Place chocolate chips and sweetened condensed milk in a microwave-safe bowl and microwave for 1 minute. Stir and then microwave in 15 second increments until chocolate is melted and smooth.
  3. Fold: Add the marshmallows and nuts and fold into the chocolate mixture.
  4. Refrigerate: Pour the mixture into the prepared pan and let it chill in the refrigerator for at least 2 hours.
  5. Serve: Slice into squares and serve.

These cookies are thick and chewy and loaded with chocolate flavor. They are topped with a gooey roasted marshmallow and then frosted with a luscious chocolate cream cheese frosting. Totally indulgent and decadent!

Chocolate Marshmallow cookies always make me feel loved. I have had two lovely connections with these cookies and not only do I want you to read about my experience, but I totally want you to have the recipe too.

First memory…going shopping with my mom at the Vancouver mall in Vancouver, WA. They had a cookie shop and we weren’t really a family to eat out, actually, we weren’t really a mall family either, haha. Well, on one occasion my mom and her best friend had to run to the mall and I was with them when they allowed me and her friend’s child to buy a cookie from the little cookie shop on the top floor. We are going to use cocoa powder and chocolate pudding mix to load these cookies with chocolate flavor. The rest of the ingredients are pretty standard cookie ingredients. Here is everything you’ll need:

  • Unsalted Butter: make sure it is softened
  • Granulated Sugar: adds sweetness
  • Brown Sugar: adds rich flavor and sweetness
  • Large Eggs: gives structure to the cookies
  • Vanilla Extract: adds flavor
  • Flour: just regular all-purpose flour is all you need
  • Salt: enhances all the flavors
  • Baking Soda: adds rise and fluffiness
  • Cocoa Powder: adds bold chocolate flavor
