Easy Crockpot Lasagna

a cooked slow cooker lasagna topped with melted mozzarella cheese

This crockpot lasagna is cheesy, saucy and loaded with layers of tender noodles, beef and Italian sausage, cottage cheese and plenty of mozzarella. With about 20 minutes of prep and no need to boil the noodles first, you get all the layers of a classic homemade lasagna without hovering over a pot of pasta or heating up the oven.

And YES, you really can put the noodles in uncooked! They soften right in the sauce as the lasagna slowly cooks, which is exactly why this has become one of my favorite ways to make lasagna.

Why You’ll Love This Crockpot Lasagna

  • No boiling the noodles: Layer them into the slow cooker straight from the box and let the sauce and steam do the work.
  • Classic lasagna, less work: You still get layers of meat sauce, pasta and three kinds of cheese without boiling noodles or heating up the oven.
  • Extra flavorful meat sauce: Using both ground beef and Italian sausage gives the sauce so much more flavor than beef alone.
  • Creamy cottage cheese filling: Cottage cheese, Parmesan and an egg make a rich, creamy layer that holds together beautifully when sliced.
  • Great for feeding a family: It’s hearty, filling and makes plenty for dinner with leftovers for the next day.

Ingredients You’ll Need

  • Ground Beef: Adds hearty, beefy flavor to the meat sauce. We combine it with Italian sausage so neither one overpowers the lasagna.
  • Italian Sausage: The easiest way to add loads of flavor without measuring a bunch of extra seasonings. Mild or hot Italian sausage will both work.
  • Yellow Onion: Mince it fairly small so it melts into the meat sauce as it cooks.
  • Garlic: Fresh garlic adds another layer of savory flavor to the sauce.
  • Marinara Sauce: This is one place where using a really good jarred sauce makes a difference. We love Rao’s, but use your favorite marinara or Bolognese sauce.
  • Heavy Cream: Just a splash rounds out the acidity of the tomato sauce and makes it a little richer. It’s optional, so feel free to leave it out.
  • Lemon Juice: It might sound unexpected, but a little squeeze brightens the rich meat and cheese layers.
  • Cottage Cheese: Creates the creamy cheese layer in place of traditional ricotta. We love the texture and mild flavor.
  • Egg: Helps bind the cottage cheese mixture so the lasagna holds its layers better when sliced.
  • Parmesan Cheese: Freshly grated Parmesan adds salty, nutty flavor to the cottag

This lasagna soup recipe has everything you love about classic lasagna with savory meat, tender pasta, rich tomato sauce, and plenty of melty cheese all in one cozy bowl.

A few years ago my husband and I had the chance to go to New York and film two episodes of Paula’s Party. It was such a fun experience. We even got to meet Carson Kressley, Cheri Oteri, Jason Priestly and a bunch of others. One of the dishes Paula made was Tastes Like Lasagna Soup and it smelled amazing. We were so disappointed we didn’t get to taste it, so when we got home we created our own version. It quickly became a favorite.

There’s just something about lasagna soup that feels like home. It’s saucy, cheesy, cozy, and truly the best kind of comfort food.

Ingredients for Lasagna Soup

This soup recipe is a cross between a creamy soup and broth soup due to the addition of a little ricotta. It’s hearty, beefy, and delicious. In other words, perfection. Here is what you will need:

Indulge in the comforting layers of this vegetable white lasagna recipe with pancetta, where savory pancetta meets the freshness of vibrant vegetables. Each bite is a perfect balance of rich, creamy white béchamel sauce and a medley of sautéed zucchini and broccoli, all tucked between layers of pasta.

The pancetta adds a savory, slightly smoky flavor to the dish, while the velvety béchamel sauce is made with a heavy cream infused with fresh sage. Baked until golden and bubbling, this lasagna offers the ultimate in hearty, satisfying flavor. Perfect for a cozy dinner or impressing guests with something a little different yet oh-so-delicious.

I don’t have anything fancy to say about this recipe except that I was trying to use up vegetables in the fridge and leftovers from a charcuterie board (particularly the raclette) we had around the holidays last year. I had some no boil lasagna noodles in the pantry and I decided to throw together a white sauce lasagna, and it was phenomenal! Thankfully, I kept notes along the way because it ended up better than I had ever hoped and the whole family loved it!

What You Need to Make White Lasagna

This vegetable lasagna recipe is layers of pasta nestled in creamy white sauce loaded with broccoli, zucchini and pancetta all held together by piles of cheese! You won’t find cottage cheese or ricotta cheese in this recipe, which I know makes some people happy. If you find yourself with some raclette leftover after the holidays, then this white lasagna recipe is your answer! Here are all the ingredients you will need:

  • Heavy Cream: adds the creaminess for the white sauce

  • Pancetta: cooked to add flavor and crispiness to the dish
  • Zucchini: cut into slices
  • Broccoli: cut into bite size florets

  • Butter: adds rich flavor
  • Flour: all purpose flour combines with the butter and cream to make the thick and creamy béchamel sauce

The Key to Rich Flavor in  Zucchini Lasagna

Our goal: make it healthier without sacrificing flavor.

What Meat to Use in Lasagna

The sauce is key. We tested everything from ground beef to sausage, but our favorite was our signature burger blend—60% chuck, 40% brisket. That rich, hearty flavor even held up without meat for a great vegetarian option.

Ricotta VS Cottage Cheese in Lasagna

Then came the cheese. Mozzarella was a given, but we debated ricotta cheese vs. cottage cheese. Shockingly, cottage cheese won! It’s high in protein, and it made the layers creamy and light

I bet you never thought you could enjoy lasagna for dinner in just 30 minutes! This lazy ravioli skillet lasagna recipe includes tender pasta, a hearty meat sauce and a creamy cheese filling.

a photo of a serving of skillet lasagna being scooped out of a cast iron skillet

I was looking for a really quick and easy way to enjoy lasagna without going through all the hassle and this actually might be even better to me than lasagna. I mean, there is a time and place for classic lasagna, but most weeknights we are busy and I need something fast that I know everyone will love.

Oh, and I am not a fan of ricotta cheese in lasagna. It’s so dry and not once while visiting Italy, did we ever have a single lasagna on the menu that included ricotta cheese so if I don’t do a bechamel sauce I really do think, as weird as it sounds, that cottage cheese makes a better filling it’s creamier and just better overall.

If you’re looking for more of a lasagna soup, try our one pot lasagna pasta! Like this skillet lasagna, it tastes like lasagna but is just a different spin on it.

Ingredients for Skillet Lasagna

Lazy lasagna uses a fraction of the ingredients of traditional lasagna and it takes a fraction of the time and effort. Here are the ingredients you will need for this recipe:

  • Rana Ravioli: We love Rana brand for quick pastas. They have several flavors that would be delicious in this recipe. We used the 4 Cheese flavor and two of the 10oz bags.

For the Filling

  • Cottage Cheese: adds creaminess and texture
  • Parmesan: adds flavor
  • Egg: acts as a binder
  • Basil: use fresh for the best flavor
  • Parsley: fresh is best
  • Salt and Pepper: adds flavor

For the Sauce

NOTE: If you have the time, I would make our authentic Bolognese sauce instead of this quick and easy sauce. You’ll only need half a batch, so you can save half for another night. If you are aiming for that 30 minute dinner, then this is what you will need
