Sharing 10 of my favorite gluten-free pumpkin recipes for fall!

Hi hi! How are you? I hope that you’re having a lovely week. I have a mentorship call today – I’m working with some IHPs to build their businesses and it’s been amazing so far!- and packing up for NYC. SO ready!

For today’s post, I wanted to talk about pumpkin things!! ’Tis the season for my favorite festive gourd.

(Dress is from RTR Unlimited that I ended up buying! Try it for 40% off with this link. Perfect for fall travel and events!)

I LOVE all things pumpkin… aka I like sugar, cinnamon, cloves, and nutmeg lol. The Pilot isn’t the biggest fan of autumn gourds, but thankfully we’ve raised two little ladies who enjoy all of the fun seasonal flavors along with me.

(Just a heads up that these are some Trader Joe’s and they are RIDICULOUS. SO so good. I couldn’t even snap a pic before P had ripped open the package.)

For fall, I wanted to share 10 gluten-free pumpkin recipes you can enjoy! Almost all of these are tried and true favorites we make again and again, with a couple of new finds in the list, too.

Do you have a favorite pumpkin recipe? Please link it up in the comments section!!

Sharing some of my tips for gluten-free meal prep.

Hi friends! Happy Monday! What’s the week looking like for you? Liv has a pretty low-key week at school with some half days, so I’m looking forward to getting caught up with some things around the house. We emptied our storage unit and going through everything has been a picnic, let me tell ya.

Something that has been saving my life since school started: meal prep!!

Why I Love Meal Prepping

When it comes to eating healthy meals consistently, meal prep is one of my favorite strategies. It saves time, money, and the daily stress of figuring out what to eat. It makes such a difference to have nourishing food ready to go. It’s easier to stick with your health goals when you open the fridge and healthy food is waiting for you.

Since P and I are both gluten-free and she’s homeschooled, I’ve been doing a lot of gluten-free meal prep. At first, it can feel overwhelming, especially if you’re new to navigating a gluten intolerance. The good news is that it doesn’t have to be complicated. In fact, there are so many naturally gluten free foods that are perfect for meal prep recipes.

Today, I wanted to chat a bit about gluten-free meal prep: what it means, why it’s worth it (!), tips for success, and easy free recipes you can try this week. (For more meal ideas, check out this list of dinners our family loved and this list of dinner ideas.)

What Is Gluten-Free Meal Prep

Gluten-free meal prep simply means preparing meals ahead of time that don’t contain gluten: the protein found in wheat, barley, and rye. This is especially helpful for anyone with celiac disease or gluten intolerance, but many people choose gluten-free eating because it can help with digestion, energy, or overall wellness.

The beauty of gluten free meal prep is that it uses free options you already love: veggies, lean proteins, beans, grains like rice and quinoa, and healthy fats like olive oil. With the right plan, you can enjoy flavorful and satisfying meals without the stress of last-minute cooking.

What Are The Benefits Of Meal Prepping Gluten Free Meals

Saves Time

By cooking in a big batch, you can prepare lunch, dinner, and/or snack options for the whole week. No scrambling in the kitchen every night!

Saves Money

Spiced White Chocolate Craisin Breakfast Cookies

Start your day with a delicious and energizing treat! These spiced white chocolate craisin breakfast cookies are packed with nutrients to keep you fueled and focused all morning long.

These spiced almond breakfast cookies turn almonds into almond butter for a healthier breakfast cookie that smells like the holidays and tastes delicious.

This is a sponsored conversation written by me on behalf of Fisher Nuts. The opinions and text are all mine.

Fall Memories

That little “kettle” on the stove. Yes, kettle, not pot or saucepan as I call it these days, but kettle like my mom called it. Vancouver is quite chilly during the fall because of all the moisture in the air. It really gets you to the bones and it’s harder to warm up. The sky is grey and moisture hangs in the air whether it’s raining or not.

Every day we would walk home from school and as soon as we opened the front door we were greeted with warm air and smells. It wasn’t from the food that was cooking, though that often happened too, but it was from the kettle of spices on the stove making our house smell like fall or the holidays. That’s what inspired this spiced almond breakfast cookie and our decision to continue our partnership with Fisher Nuts.

That’s where these breakfast cookies come in. We love using good products for our family as it makes us feel better on the inside and we believe it sets our children up to make wise food choices in the future. I mean think about it, you buy what your mom bought. She only used wheat bread, you probably do the same. We choose to use and work with Fisher nuts because it is the only brand of recipe nuts entirely without preservatives.

And in the meantime, make sure you make these spiced almond breakfast cookies for the kids in the morning. It will start them off with a heart healthy breakfast that smells amazing and will have them feeling warm from the inside out!

Ingredients for Breakfast Oatmeal Cookies

There’s no flour or dairy in this recipe which makes them very allergy friendly. Make sure your oats are gluten free and you have a gluten-free, dairy-free cookie. Here is everything you will need:

  • Raw Whole Fisher Nuts Almonds: used to make homemade almond butter
  • Bananas: overripe to add the perfect flavor and sweetness
  • Maple Syrup: adds natural sweetness
  • Molasses: adds rich flavor and more sweetness
  • Dried Orange Zest: You can find this with the spices. It will be in the same type of container as the other spices. The brand we have is Spice Islands.
  • Spices: Cinnamon, Nutmeg, Cloves and Ground Ginger
  • Old Fashioned Rolled Oats: The texture of old fashioned oats is what we prefer over quick or instant oats.
  • White Chocolate Chips:

Melt in Your Mouth Gluten-Free Monster Cookies [+Video]

Indulge in these delicious monster cookies that are not only gluten-free, but also loaded with oats, chocolate chips, M&M’s, and peanut butter. They are so chewy they practically melt in your mouth!

I’ve been on the hunt for a bomb monster cookie recipe and then I found one and adapted it very slightly and doubled it. It is from What Molly Made because literally no flourless peanut butter monster cookie recipe compares to hers.

Monster cookies are like an oatmeal cookie, m&m cookie, chocolate chip cookie and peanut butter cookie all smashed together in one. They are perfection! They are the best monster cookies!

What are Monster Cookies?

There are a few different stories out there for how this cookie got its name, but my favorite is that it’s a little bit of everything just like Frankenstein. A monster! These cookies can also be know as kitchen sink cookies because they have everything but the kitchen sink in them. They are super adaptable to whatever mix-ins you and your family love.

Ingredients for Monster Cookies

You won’t find any flour or dairy products (substitute the m&m’s) in this cookie recipe! This is for you, my gluten-free and dairy-free friends! Here is what you need:

  • Eggs: give structure and rise to the cookies
  • Peanut Butter: I prefer creamy, processed (not natural) peanut butter like Skippy or Jif.
  • Brown Sugar: adds rich flavor and sweetness
  • Sugar: more sweetness
  • Vanilla Extract: enhances flavor
  • Oats: old fashioned rolled oats adds so much texture and make sure they are certified gluten-free oats
  • Baking Soda: gives rise and fluffiness
  • Salt: enhances flavors and balances the sweetness
  • Mini M&M’s (or milk chocolate chips): can use regular size too or holiday themed
    • NOTE: To make this recipe dairy-free, you’ll need to use a dairy-free candy or omit the m&m’s completely. Same story for the chocolate chips.
  • Mini Semi Sweet Chocolate Chips: regular sized may be used
  • Raisins: totally optional for those raisin haters out there
