While I was working on our roasted peach chicken recipe, I kept thinking that a creamy baked version would be so good! So I set to work on testing a creamy peach chicken recipe and this is it! It is so delicious and a perfect way to use those juicy summer peaches! We pan sear the chicken first and then let it finish cooking in the oven. It’s so easy!

Last year we ordered our first box of peaches from Pearson Farm, and we will be doing that from now on! Peach season is so short here in Utah and those sweet Georgia peaches are so dang good!

Now don’t get me wrong, I am allllllll about using peaches in sweet dessert recipes! Those are some of absolute faves! Our peach crisp is phenomenal! Then there are the peach cobbler and peach dumplings. I could go on and on, but there is something so unexpectedly delightful about peaches in a savory dish. The peaches really shine in this creamy peach chicken recipe!

Ingredients for Creamy Peach Chicken

This recipe requires ingredients for a chicken marinade, a roasting sauce and a dry chicken rub. There is nothing too fancy or complicated, but everything combined is so tasty. Here is everything you will need:

  • Chicken Breasts: We prefer to use bone-in and skin-on chicken breasts for maximum flavor, but often end up using boneless skinless chicken breasts for ease.
  • Marinade: Peach Preserves and Heavy Cream
  • Roasting Sauce: White Wine Vinegar, Thyme (fresh or dried), Dijon Mustard, Olive Oil, Shallots, Garlic, Sea Salt, Black Pepper and Peaches
  • Dry Rub: Chili Powder, Smoked Paprika, Cinnamon, Salt and Pepper

How to Make Creamy Peach Chicken

If you’re looking for a quick and easy weeknight dinner, then add this chicken recipe to your menu this week! It is full of flavor and simple to make. Here is your step by step guide for making the recipe:

  1. Marinate: Add the peach preserves, cream and chicken to a ziploc bag and squish to combine. Let the chicken marinate in the fridge for at least an hour, up to overnight.
  2. Prep: When you’re ready to cook it, pull the chicken out of the marinade and save the marinade. Preheat the oven to 425 degrees F and pat the chicken breasts dry.
  3. Rub: Combine all the ingredients for the rub in a small bowl and stir to combine. Rub the chicken all over with the rub mixture.
  4. Make the Sauce: Whisk all the ingredients for the sauce together in a separate bowl and set aside.

There’s a lot going on in life lately. I don’t know how I missed the adulting adult children memo, but it’s actually harder (imho) to parent adults vs small children. It’s a different hard as there’s a lot of moving parts with college, life, etc. and with a high schooler and elementary school child as well I’ve been digging in deep for quick and easy dinner ideas that can reheat well for leftovers too. This is a recipe Cade and I would make when we first got married and lately I’ve been in the biggest cooking rut. It’s not even that I don’t want to cook, it’s just that nothing feels inspiring and nothing sounds good. So, I’ve been going back to my roots and making some simple comfort foods that everyone will eat and take no brain cells from me.

Ingredients for Ground Beef and Potatoes

Onion and peppers taste good when you pair them with classic ground beef and potatoes! We add a few seasonings and you have an easy ground beef dinner recipe they whole family will love. Here are all the ingredients you need:

  • Canola Oil: helps cook the potatoes until golden and crispy
  • Yukon Gold Potatoes: you can peel them or not and dice them into 1/4-inch cubes
  • Ground Beef: I usually go with 85/15 for good flavor. You can use more lean ground beef if desired, or substitute it with ground turkey or ground chicken.
  • Onion: just a yellow onion works great
  • Red Bell Pepper: you could also grab a yellow or orange bell pepper
  • Worcestershire Sauce: adds rich umami flavor
  • Ketchup: adds flavor and a touch of sweetness
  • Liquid Smoke: adds smokiness
  • Dijon Mustard: adds flavor
  • Seasonings: Smoked Paprika, Garlic Powder, Dried Oregano, Kosher Salt and Ground Black Pepper

How to Make Skillet Ground Beef and Potatoes

You only need one pan to make this family-friendly meal! Grab your cast iron skillet and let’s get cookin’!

  1. Brown the Potatoes: Add oil to a large cast iron skillet and heat over high heat. when the oil is shimmering, reduce the heat to medium high and add the potatoes. Season them with salt and stir to coat. Let them cook until browned, stir often until the potatoes are tender.
  2. Cook the Ground Beef: Remove the potatoes from the skillet and add the ground beef and break it up to cook.
  3. Sauté the Onions and Peppers: Push the meat to the sides of the pan and add the onions. Stir until they soften and then add the bell peppers and cook until soft. Drain any grease if needed.
  4. Combine: Add all the rest of the ingredients (including the potatoes) to the large skillet and continue to cook until the potatoes are tender.
  5. Season: Give the dish one last hit of salt and pepper until you get the flavor you want. Serve it hot and top it with some fresh parsley.

When we’re short on time and ingredients, this is a go-to meal at our house, and yes, you can totally swap any meats, beans or add-ins that you’d like! It’s like making a delicious Chipotle burrito bowl in the comfort of your own kitchen!

I’m finding that the older my kids get the more I desperately need quick and easy dinner ideas as we pretty much live a life of errands lately. It’s soccer, piano, clothes shopping because heaven forbid anyone stay the same size for more than a month and on and on. Anyone feel me?

Ingredients for Chicken Burrito Bowls

  • Chicken Breasts: You want boneless, skinless chicken breasts and then chop them into bite-size chunks
  • Oil: used to sauté the chicken
  • Seasonings: Cumin, Onion Powder, Garlic Powder, Black Pepper, Kosher Salt and Chili Powder
  • White Rice: just simple long-grain white rice works great
  • Garlic: adds flavor
  • Chicken Broth: cooks the rice and adds more flavor
  • Green Chiles: adds flavor
  • Cilantro: adds bright herby freshness and flavor
  • Lime: You’ll want to use the zest and juice for maximum flavor.
  • Pinto Beans: Keep it simple by using canned beans. Swap for black beans if desired.
  • Colby Jack Cheese: You can’t have a burrito bowl without the melty cheese! Colby jack is our favorite, but you can also go with Monterey jack or pepper jack.

Cilantro Lime Chicken Burrito Bowls

  • Step 1: Chicken

Start by seasoning your chicken (onion powder, garlic powder, cumin, salt, pepper and chili powder) and then cook it in a little olive oil in your Instant Pot in “sauté mode”. You won’t need to cook it long, just enough to get a little sear on the outside, about 3 minutes.

  • Step 2: Everything Else

Add the rice and garlic and stir it with the chicken for about 20-30 seconds. Then you add the rest of the ingredients (broth, cilantro, lime zest, lime juice and pinto beans) and change your Instant Pot to “high pressure”. Give everything a good stir and place the lid on the Instant Pot. Set the valve to “seal” and cook for 7 minutes.
