  • Strawberries: Wash and hull the stems.
  • English Cucumber: These have thin skins and almost no seeds so no need to peel or remove the seeds. Persian cucumbers would also be a great option.

Easy Cucumber Tea Sandwiches

My mom often worked with a group of young women when I was growing up and on one occasion they held a silly Mother’s Day garden party, complete with garden hats in our backyard. I wanted to go so bad, but I was little and this was something I’d have to wait a few years to attend.

It looked like so much fun to a little girl, and I was beyond thrilled when there were some fresh flowers left over that she let me play with. That’s also the first time I’d ever seen a cucumber finger sandwich and I didn’t know what to make of it. Little white bread squares with a slice of cucumber and plain cream cheese.

Cade and I both wanted to work with eureka!® Organic Bread, but deciding on a recipe together was tricky. I happened to mention that I remember my Mom having a garden party in our backyard and someone brought cucumber sandwiches and Cade was like, “What’s a cucumber sandwich? Just cucumbers?!” It was decided on, cucumber sandwiches would be our recipe.

With spring in the air, I just had to recreate the classic tea sandwich but with our own twist. Cade was in charge of the bread and I don’t know why, but I was a little nervous he wouldn’t choose a good one, haha I need to be more trusting. He came home with Saaa-Wheat! eureka! Organic Bread because according to him, it’s bursting with rich flavor and tasty goodness and no artificial flavors, colors or preservatives. I’m pretty sold on that!

Bread was totally boring and not super good for you when I was little, but I’m loving how many varieties are out there now. This citrus oven baked salmon salad is bright and fresh with crunchy roasted chickpeas and a delightful zesty dressing that is going to have you coming back for more!

This is the recipe that changed our lives!! Our very first week of being totally unpacked in our new place, it was time to get back in the kitchen and cooking again. I’ve felt so out of it with the stress of moving and when our oldest daughter mentioned she really wants to learn to like fish so she can incorporate some healthier foods into her diet, I timidly said yes.

I’ve hated salmon since the day I was born but I do secretly wish seafood wasn’t such a nemesis of mine so I jumped in. In the past I’ve liked it ok, but this citrus baked salmon salad absolutely sold me! It’s all about the flavors so do not substitute other seasonings unless you’re crazy.

Asian Cucumber Salad

This light and fresh Asian cucumber salad is our new favorite healthy side dish, complete with a sweet and tangy vinegar dressing.

Earlier this year I was working on an Asian steak marinade and I was playing around with the idea of using black vinegar in it. The final recipe was tested when Cade’s mom came into town and it was a total hit. Without even realizing it though, I’d added black vinegar to the cucumbers instead of the steak marinade that morning. It turned out both dishes needed something a little different than what I was doing and it was awesome!

You can read below for a substitute as we still love cucumber salad with just straight up rice or apple cider vinegar. In fact, we often use both.

Ingredients for Asian Cucumber Salad

It only takes 7 ingredients to make this simple but refreshing salad recipe. Here is what you will need:

  • English Cucumber – I just to just slice them thin by hand, but feel free to remove the seeds if you want
  • Red Onion – totally optional but I love the zip it adds, do a fine slice on a mandolin
  • Rice Vinegar – mild, sweet and sour flavor
  • Chinese Black Vinegar – a dark mild vinegar with a slightly fruity flavor
  • Honey – adds sweetness and balances the saltiness and tang
  • Sesame Seeds – give them a little toast to enhance the nutty flavor
  • Fine Sea Salt – dissolves easily into the dressing and adds flavor
