This recipe was a spur-of-the-moment dinner years ago that turned out deliciously. While looking through the refrigerator for inspiration one night, I paused at a package of egg roll wrappers.

That was when I discovered that egg roll wrappers are technically a form of pasta. Did you already know that? Well, one thought led to another and I decided to try an Italian Eggroll combination.

I serve these Italian Eggrolls with 5 Minute Marinara Sauce on the side for dipping and they disappear FAST every time we make them.

The kids, my husband, and I absolutely devoured these eggrolls the first time I made them. My youngest son ate three of them! (The photo at the bottom of this post still makes me grin. I can hardly believe it’s been 11 years since my baby was that small!)

Braised One Pan Sausage and Cabbage and Potatoes – St Patricks Day Dinner

I don’t know what it is about these three ingredients combined, but this braised sausage, cabbage and potatoes dish is my new favorite easy dinner recipe! Perfect for St Patricks Day dinner!

I don’t love St Patrick’s Day. I can’t ever think up anything cute and the traps, ohhhhh the traps! They are so fun and I love watching the kids work for hours on them, but I’m also not crafty so I don’t just have doodads and whatsits lying around waiting to be artified.

Last year I was feeling all the feels of an inkling that we would be moving soon and then the dreaded St Paddy’s Day hit. I immediately asked my friend Megan why we had to celebrate and she came back with, “just do the ol’ cabbage, sausage and potatoes in one pot and be done.”

Wait what? No whining alongside me? She actually had a plan?! And so I did, I followed her example and recipe and voila! Dinner was done in 30 and it was delicious! WHY IS IT DELICIOUS!? It is literally 3 ingredients but everyone ate the whole darn thing. AND what was leftover I put in the Food Saver and froze it and oh my goodness, it totally held up perfectly a few weeks later when we had it again!

Ingredients for Sausage, Cabbage and Potatoes

Are you ready for the 6 (possibly 7) ingredients you need to make this quick and easy dinner? This is what you will need:

  • Sausage: you can use any type of sausage you want…chicken, turkey, pork, etc…bratwurst also works or a kielbasa
  • Potatoes: I prefer the flavor of Yukon Gold potatoes, but red potatoes would also work or just plain Russets, peeling is optional
  • Red or Yellow Onion: either type works great, it just depends on which flavor your prefer
  • Cabbage: regular green cabbage is my go-to, but you could also use red. If you’re using this for St Patricks Day, then the more green the better!
  • Olive Oil: helps caramelize the onions
  • Salt and Pepper: adds flavor
  • Garlic: this is totally optional, it tastes great without it, but it does add delicious flavor if you are a garlic fan

Tips for Making Sausage, Cabbage and Potatoes

  1. Cut the potatoes to be the same size so that they cook evenly.
  2. Use a dutch oven, it caramelizes the onions and cooks the sausage and potatoes perfectly.
  3. Don’t use too high of heat when cooking. The onions will start to burn before everything else cooks through.

Corned Beef Soup

On the chance that you are lucky enough to have some leftover corned beef waiting in the fridge, this recipe will make the most of it. If you don’t happen to have corned beef in the house already, this corned beef and cabbage soup recipe is worth a trip to the store.

Savory and flavorful, I could happily breathe in the smell of this simmering soup all day long. However, lucky for all of us, a brief simmer is all it really needs to wilt the cabbage, making it tender and not turning it to mush.

The short simmer makes this a great recipe to pull together on a busy night. Start the onion cooking and then prep the other ingredients as you go, adding to the pot as you go along. The whole meal will come together in less than 30 minutes from start to finish.

Once the onion has become mostly translucent add the chopped celery and continue cooking until tender. Next is the Worcestershire, pepper, and potatoes. Notice you don’t add salt here.

Corned Beef Hash with Cabbage

In my mind, there is no reason why corned beef isn’t available in the meat case all year round. It is such a seasonal thing around March but I think retailers are getting the hint.

I used to have to wait until March to find it in the store. This year I found it in January and I was quite excited about that discovery! I’m going to be watching for it to come on sale and stock up my freezer so we can enjoy corned beef dishes year around.

Recently, when I saw the leftover corned beef in the refrigerator, I imagined that a skillet of cabbage, corned beef, and red potatoes would be tasty. I didn’t realize this would be so delicious that I would be craving it the very next day.

My whole family enjoyed this meal and I can see making this dish a tradition each time I cook corned beef. That is, if I can stash enough leftovers to make it.

Corned Beef Hash with cabbage is a dish that works for any meal, any time of day. Our favorite is for breakfast.

Corned Beef and Potatoes

Diced potatoes are browned crispy in a little bit of butter or bacon grease. If you use red potatoes and dice them small they will fry up in about 10 minutes.

Once the potatoes are crispy, yet still tender, remove them from the heat and saute the onions for 2-3 minutes. As they start to soften add the cabbage stirring to combine. Cover with a lid and cook until the cabbage starts to slightly wilt.

For nearly as long as Sean and I have been married, I’ve been making Layered Cabbage Rolls as a timesaver option for a cabbage roll dinner. My whole family loves them and they’re requested often.

I remember the first time I served that easy variation on cabbage rolls to our friend Joe. Joe was born in Hungary and he was so happy with that dish that he kept smiling and telling stories all the way through the meal.

He told us it tasted exactly as he remembered his mother’s cooking. Joe passed away last year and remembering his happiness over that meal still brings a smile to my face.

A few years ago, I was thrilled to realize that I could get the cabbage roll flavors we love in a simple skillet meal, without even turning on the oven. The ground beef is browned along with plenty of seasonings before simmering in a rich tomato sauce with fresh cabbage and rice.

From start to finish, this meal comes together in under 20 minutes, making it pretty much perfect as far as I’m concerned.
