I feel like I should really name this post roll-over-and-die brownies because you’re going to devour so many of these rich, over the top, sticky, gooey, fluffy bars of deliciousness that you’ll probably roll over and die of brownie overload.

Seriously, they are so rich and fantastic you’ll think you cannot possibly try one more bite and then the next thing you know you’re standing in front of these dulce de leche brownies with fork in hand.

Creating this Recipe

I originally posted this brownies recipe over at BHG Delish Dish blog, and I have to say it was so much fun. Gosh, it was more than 10 years ago now, but I remember making them with our oldest daughter, and I had so much fun teaching her about melting chocolate, picking out toppings, etc. Now she’s off at college making these brownies for her friends and roommates!

If you could drop everything and recreate a memory for your kids what would it be? Would you be willing to create a memory for them or are you too busy?

But seriously, why didn’t I slow down a little more when I was younger? I was in such a hurry to grow up that sometimes I feel almost homesick, no sad, gosh I don’t know how to explain it, but I miss sitting in the kitchen with my Mom, gardening in our ginormous garden and snitching as many raspberries as I could, camping, singing around a fire, etc. Life passed by and now the same is happening for my kids. I hope I can create memories for them like I had growing up.

Ingredients for Dulce de Leche Brownies

You’ll make delicious fudgy brownies first, and then top them with dulce de leche and marshmallow fluff. Here is everything you will need:

  • Unsweetened Chocolate: We like Baker’s brand.
  • Butter: adds fat and richness to the brownies
  • Sugar: regular white granulated sugar
  • Eggs: gives the brownies structure
  • Vanilla Extract: adds flavor
  • Flour: regular all-purpose flour
  • Baking Soda: acts as a leavening agent to give the brownies rise
  • Mini Semisweet Chocolate Chips: adds more chocolate flavor and texture to the brownies
  • Dulce de Leche: grab a can at the store on the baking aisle or make your own at home with sweetened condensed milk
  • Marshmallow Creme: any brand will work great
  • Chopped Pecans (optional): If you’re not a nut fan, you can use chocolate chips or toffee bits. I love the texture it adds to the brownies.

The combination of raspberry and lemon together in desserts is one of my faves! Our raspberry lemon cheesecake bars, lemon raspberry bars, and our lemon raspberry donuts all feature this spectacular flavor combination.

I loved the strawberry version so much I just had to do a raspberry. And the tart dough! You guys, it’s like heaven and because you make it in a pan you don’t have to stress about making it all pretty. These raspberry lemon tart bars are my new favorite treat and I’m totally going to force them on you too. You’re welcome.

I am all about bar dessert recipes. Brownies are wonderful, cookies are delicious but I love a good bar. Key Lime Bars, Peaches N Cream Crumble Bars, raspberry lemon bars… You guys, the list is endless for me, but the real key for me is actually the crust.

What Do I Need to Make Raspberry Lemon Bars?

Besides the fresh raspberries and lemon, most of the ingredients needed will be items you already have in the pantry or fridge. You’ll need a few ingredients for the buttery shortbread crust and a few more for the creamy lemon raspberry filling. Here is what you’ll need:

  • Buttermilk

These blackberry lime bars are creamy, bright, and super delicious. A little lime juice, a handful of blackberries, a simple graham cracker crust, a few easy steps, and you have sweet, tangy bars that everyone will enjoy.

I learned long ago that women love chocolate and men love berry desserts… supposedly. Things like, Berries and Cream Cheesecake Bars, Razzleberry Pie, or Deep Fried Strawberry Cheesecakes. But that is so not the case with my husband and I.

I definitely prefer all things berry and he is all about the chocolate. Well, unless it’s his favorite Lime Pie Brazil. Which is where this recipe came from. His lime pie recipe that he learned while living in Brazil is made with a cracker crumb crust, sweetened condensed milk, media crema, eggs and lime juice of course.

One day we were trying to decide on dessert and he voted for his pie, but I was in the mood for blackberries. The juicy blackberries were making the filling too soupy when baked, so we took the crema out and it turned out perfect. It totally reminds me of our lemon raspberry bars.

There’s just something about a fresh fruit dessert that makes me feel so light and wonderful. I mean, really. Even if it’s a long and nasty winter I’ll bust out these blackberry lime bars and suddenly winter doesn’t seem so bad.

Last summer we had the chance to go to Portland to visit Oregon Berries and it was incredible! The taste of those fresh ripe berries were unlike anything you can buy at the store here. When we buy local we ensure quality and secure the livelihoods of families who are making our country a place of variety and success. Cade and I committed right there to check where our berries are coming from and only buy local.

These brownies look gourmet and no one will know that you actually made these babies in your PJs! That beautiful purple swirl in the white creamy cheesecake is just stunning!

Blackberry Cheesecake Brownies

These blackberry cheesecake brownies are perfect: a rich chocolate brownie base topped with tangy cheesecake, all swirled with tart blackberries. Here are the ingredients you will need for each component:

Blackberry Puree

  • Blackberries: frozen or fresh blackberries work fine
  • Sugar: regular white granulated sugar
  • Water: helps thin out the puree

Brownies

To make cheesecake brownies from scratch you only need basic ingredients like butter, sugar, eggs, flour, cocoa, etc. for the brownies. You’ll also need a few ingredients for the blackberry puree and cream cheese layers. Here are the step-by-step instructions:

Blackberry Puree

  1. Combine: add all the ingredients to a saucepan and place over medium-high heat stirring occasionally to break down the blackberries.
  2. Strain: pour the puree into a fine mesh strainer over a small bowl and push the blackberries through with a spatula preserving all the liquid and dispose of the solids.
  3. Cool: allow the strained puree to cool to room temperature.

Brownies

  1. Prep: preheat the oven to 325°F and line a square baking dish with parchment paper.

I’m closing down the blog and walking away. I’m living my life out as a middle-aged Momma who wants nothing more than to LIVE and PLAY and EAT. These bars are one of the best recipes we will ever share on Oh Sweet Basil.

I mean, I’m not really shutting down the blog. I couldn’t ever be as fulfilled without a creative outlet, but these strawberry bars are one of the best desserts I’ve ever brought to the site. If it’s the only spring dessert recipe you make, you will be forever happy. Once again, we have Megan to thank, so let’s all give her a little praise for continuously sending amazing recipes to us! If you haven’t tried the mixed berries version of this recipe, do that asap!

The crust is a flaky, perfectly made crust but the best part is, in my opinion, making the dessert a day ahead so that it softens a stitch. Oh my goodness, my mouth just started salivating! WHAT IS MY DEAL?! I’m obsessed! 

The filling is the most delicate cream cheese, almost cheesecake filling, while the topping is a burst of vibrant strawberries, reminiscent of a strawberry pie! It’s honestly like a creamy strawberry shortcake, which happens to be my most favorite dessert ever.

Ingredients for Strawberry Cheesecake Bars

I’m going to divide up the list of ingredients by layer so it’s easy to see what is needed for each step. Here is what you will need…

Crust Layer

  • Flour: regular all purpose flour
  • Salt: enhances all the flavors
  • Sugar: adds a little sweetness to the crust
  • Vegetable Oil: the fat needed to create the flaky but strong base for the bars
  • Milk: helps bind all the ingredients together

Cheesecake Layer

  • Cream Cheese: you can use full fat or 1/3 fat but I do feel like the full fat sets up better, make sure it is room temperature so the cream layer isn’t lumpy
  • Powdered Sugar: adds sweetness to the filling
  • Heavy Cream: helps thin out the filling a little
  • Vanilla: adds flavor

Strawberry Layer

  • Strawberries: fresh bright red ripe berries
  • Sugar: adds sweetness to the topping
  • Ultra Gel: my preferred way for thickening the strawberry topping, see recipe card for using cornstarch the thicken
  • Lemon Zest and Juice: balances the sweetness of the berries
  • Water: thins everything out to create
