Peaches and Cream Oatmeal

Web Admin 0 143 Article rating: No rating

I’ve been making peaches and cream oatmeal all summer long; filled with soft pecans and sweet peaches, this is a memorable breakfast. I save a couple of peaches to make this oatmeal almost every time I buy fresh peaches.

And if you dare to top your oatmeal with a scoop of vanilla ice cream, this really might be the best oatmeal you’ll ever eat. We aren’t new to the ice cream and oatmeal combination over here.

If you haven’t tried ice cream with your oatmeal yet, you are missing out on some serious awesomeness for your breakfast! While it may sound a little crazy at first, I figure that a small scoop of ice cream has to be comparable to a spoonful of sugar and a splash of milk, right? If I’m wrong, just don’t tell me.

Peach oatmeal is pretty amazing on its own though, so feel free to skip the ice cream and eat it plain. Or top it with a pat of butter and a sprinkling of brown sugar.

Like the blueberries and cream oatmeal I’ve raved about in the past, this oatmeal is pretty awesome with a drizzle of cream as well.

Chocolate Chip Banana Zucchini Bread [+ Video]

Chocolate Chip Banana Zucchini Bread is one of my new all time favorites! ohsweetbasil.com

This easy zucchini banana bread is studded with chocolate chips and packed with flavor! Enjoy it warm from the oven, or freeze a loaf for later!

Recommended Equipment

Before You Begin…

Spray your bread pans with cooking spread and then take a paper towel and wipe the spray off the top inch of the pan, all the way around. This will help the batter “catch” the side of pan and then poof up in the middle. Your loaf will be both gorgeous and delicious!

Chocolate Chip Zucchini Banana Bread Recipe

Did you ever play school when you were growing up? I totally did and I was pretty darn sure I was going to grow up to be a teacher. I didn’t. But I did grow up to be a banana bread lover. Not sure what that has to do with being a teacher, but it’s the truth.

Zucchini bread on the other hand, gross. I did not like the texture as a kid at all. I refused to eat it, which must have been so much fun for my parents. And then I slowly forgot about it until I became a food blogger. If there’s one thing pinterest doesn’t need more of it’s quick bread recipes, so obviously I chose to give you all one.

Not true? Well, either way I decided it was high time I tried this whole zucchini bread thing again and guess what, I was a total chicken about it. I mean, I couldn’t just jump in right? I’m a toe dipper in the pool for heaven’s sake! I needed a slow start so what better thing to try than a chocolate chip zucchini banana bread? And guess what? It’s so blasted delicious I’m going to try a zucchini bread tomorrow. All by myself. If I hate it, I’ll give it away to the neighbors, ha!

Blueberry Buttermilk Pancakes

The slight tang of buttermilk pairs perfectly with sweet, ripe blueberries in these light and fluffy Blueberry Buttermilk Pancakes.

Blueberry Pancakes with Buttermilk

I love berries in my waffles and pancakes, but there’s something special about making blueberry pancakes with buttermilk. The buttermilk makes them a little lighter and fluffier, and it adds that signature tang.

Make sure to use real buttermilk in this recipe! You’ll find a lot of substitutions online, but the result is so much better with the real deal. If you don’t have it on hand, don’t worry. You can make some killer blueberry pancakes without it.

Blueberry Buttermilk Pancakes

I adore the simplicity of breaking out the griddle and whipping up a batch of pancake batter in just a few minutes. (So, my family eats pancakes pretty often.)

We’ve tried pancakes with everything from chocolate chips, to M&Ms, fresh fruit, nuts, and even sweet cereals added in. But, this blueberry buttermilk pancake recipe balances the tangy buttermilk and sweet berries wonderfully and it’s a current favorite.

Crispy Breakfast Potatoes

Crispy breakfast potatoes, roasted to perfect crispiness with fluffy centers and plenty of seasoning, are key players in many of our favorite breakfast recipes.

Warm tortillas, fluffy scrambled eggs, roasted potatoes, crispy bacon, and melting cheese are combined to create these hearty Breakfast Tacos. What’s not to love about that classic combination?

Make Ahead Breakfast Potatoes

However, as much as I love having roasted and pan-fried potatoes with our eggs for breakfast, it’s unlikely that I’m going to be willing to spend time chopping and roasting them most mornings.

Instead, I throw a tray of these in the oven at other times during the day when I might already have the oven on. They take about 45 minutes to roast, but when the oven is already on, it doesn’t seem like much effort at all.

Crispy Breakfast Potatoes

When I’m ready to use these potatoes, I simply put the amount that I need in a skillet over medium heat to warm them and let them get just a bit crispy again before serving.

And if I’m in a serious hurry, they reheat nicely in the microwave too.

Mix the flavors up each time you make them. Add whichever seasonings you like to your next batch of potatoes. Seasoning mixes, thyme, rosemary, garlic, or pretty much anything will work here.

Protein Chocolate Chip Cookie Baked Oatmeal in a Mug

a photo taken over the top of a mug full of baked chocolate chip cookie oatmeal.

If you want a simple and delicious high protein breakfast (27g!) that tastes like a chocolate chip cookie, then you have to try this protein chocolate chip cookie baked oatmeal in a mug!

I’ve seen the recipes for oatmeal in a mug, aka mug cake, a slightly healthier mug cake, haha, but I wasn’t loving a lot of the recipes. It turns out that they all had a piece of a puzzle and merely needed to all be put together! This healthy baked oatmeal in a mug has a little protein powder which gives extra flavor and nutrients without overcomplicating the recipe.

Whenever we have a busy day or I’m not in the mood to cook I’ll make a little baked oatmeal and let the family pick out their toppings. It’s like pancake night, but less sugar!

Speaking of, if you want to go all crazy with this protein breakfast recipe you can totally mix up the flavors and add-ins (see ideas below).

Ingredients for Baked Oatmeal in a Mug

Here is a brief overview of the ingredients needed for blended baked oats. This is meant to be a quick snippet of what is included. For all the details, scroll down to the recipe card.

  • Banana: adds natural sweetness and moisture
  • Egg: binds all the ingredients together
  • Oats: You can use old fashioned oats or quick oats since you blend it up. I prefer old fashioned because it’s been processed less. You could also use oat flour if you prefer (since that’s what we are making when we blend these oats up). Use a scant 1/2 cup of oat flour. NOTE: Steel cut oats will not work for this recipe.
  • Protein Powder: You can use any flavor you want. Vanilla is my favorite for that true chocolate chip cookie flavor. We have been using coconut flavored protein powder lately which is also yummy because that’s what we have right now.
  • Milk: any type of milk works great…whole, 2%, 1%, fat free, almond milk, oat milk, etc.
  • Baking Powder: gives the mug cake some rise and fluffiness
  • Salt: enhances all the flavors

Substitutes for Banana

I know that there are strong feelings about bananas out there, so if you aren’t a banana fan or you don’t have any, here are few ideas for substitutes:

  • Applesauce
  • Zucchini
  • Apple Butter
  • Yogurt
  • Canned Pumpkin

You’ll want to use about 1/4 – 1/3 cup of these.

Ideas for Toppings and Mix-Ins

You don’t have to stop at chocolate chip cookie flavor! The possibilities are endless! You can change the flavor of protein powder you use as well as the toppings or mix-ins you add. Here are a few ideas to customize your own baked oatmeal in a mug…

  • Chopped nuts – pecans, almonds, walnuts, etc.
  • Nutella
  • Caramel
  • Granola
  • Yogurt
  • Chopped fruit
  • Nut butter – peanut butter, almond butter, etc.
