Creamy, rich, peanut butter syrup makes a fantastic topping for your favorite stack of homemade pancakes or waffles.

While you can absolutely make a delicious peanut butter maple syrup with just two ingredients (2 parts maple syrup to 1 part creamy peanut butter) – and I do this quite often, there’s something fun about making it a little more special.

I’ve taken my Grandmother’s waffle sauce and added peanut butter to create a creamy, rich, smooth syrup that’s certain to make every peanut butter lover’s breakfast dreams come true.

While delicious on pancakes, try drizzling some of this syrup over a bowl of diced apples and bananas with chopped peanuts and mini chocolate chips. It is quite the treat at snack time.

Or next time you are enjoying a scoop of ice cream before bedtime, top it with a bit of leftover peanut butter pancake syrup. You won’t regret it.

Peanut Butter Syrup Recipe

You can whip up this syrup recipe in less than 5 minutes. Start by thoroughly whisking the flour and sugar together before adding the milk. If you have the flour and sugar lump free it should keep your syrup lump free as you add the milk.

Heat over low to medium heat until the sauce has thickened and gently bubbled. Avoid a hard rolling boil. Just a low simmer is all that it needed. Keep whisking. Add your peanut butter and keep whisking it on the heat until it is smoothly combined.

After removing from the heat add your vanilla and butter. Stir until combined. Serve warm over a stack of fluffy pancakes. Our favorite though is poured over Chocolate Pancakes.

Carrot Cake Pancakes

These pancakes truly deserve their decadent name. With spicy notes from cinnamon, nutmeg, and ginger, these taste surprisingly like carrot cake. I didn’t expect that much of the carrot flavor to shine through, but it does.

They’re fantastic with the cream cheese syrup included in the recipe below and they’re also wonderful when topped with my grandmother’s waffle sauce.

I enjoy these pancakes every bit as much as I enjoy the Zucchini Waffles we make all summer. These pancakes have been a win for the entire family.

My baby managed to eat three of these pancakes while I was making the rest of our breakfast. (Edited to add: That little baby will be turning 13 in a few months, so you can tell these are a LONG time favorite.)

When I first made these, I was doing a lot of baking with whole wheat flour. And while I enjoyed the pancakes when we made with wheat flour, if I’m being honest, I like them even better now when they’re made a little bit lighter and fluffier with all-purpose flour.

You could even split the difference and make them 50/50 with half whole wheat flour. Whether you choose to make them with regular flour, whole wheat, or a mix of both, I can promise you they’ll be delicious.

Banana Blueberry Pancakes

I’ve been making these pancakes for years. Blueberry waffles and pancakes have been a long-time favorite, (check out these blueberry waffles for proof of that – they’re just so good!) but when I started adding blueberries to the banana nut pancakes in my first cookbook? That combination became an immediate favorite.

Even with a house full of voracious eaters, I am baffled at how any food can possibly go bad in my household but bananas are my nemesis.

A few years ago a friend told me that when her my bananas get close to spoiling, she just tosses them into the freezer without peeling them or anything else and when they accumulate, she makes banana bread.

FYI that tip did NOT work for me, but peeling the bananas and dropping them into a freezer bag DOES work for me. You can grab however many bananas you need out of the bag and thaw them on a plate. It’s much simpler and less messy than dealing with a frozen and then thawed slimy banana peel.

Fluffy Banana Pancakes

While this is a super handy thing to keep in mind for dealing with over-ripe bananas, I am not even going to admit how many bananas often accumulate in my freezer. These easy banana pancakes are one way to avoid the banana backlog.

Fresh blueberries are my favorite to use in pancakes and waffles, but frozen will get the job done as well. One thing to note with frozen blueberries and pancakes is that the batter will sometimes be uncooked around those frozen blueberries.

To avoid these little pockets of batter I will set out frozen blueberries in a single layer on a plate before mixing up my batter. Then, by the time the batter is made and has had a few minutes to rest while the griddle gets hot, the blueberries are just slightly soft and everything cooks nicely.

Pear Oatmeal

A steamy bowl of fragrant oatmeal is a must on a cold morning. Oatmeal is the breakfast equivalent of a hearty soup when it comes to warming your entire body and fueling the belly when the temperature drops to chillier temperatures.

We have always been a family that enjoys waking up to a pot of oatmeal simmering on the stove for breakfast. But it wasn’t until moving to the midwest from Arizona that I fully understood its warming powers.

Warm spiced pear oatmeal with cinnamon, nuts, and brown sugar has the power to pull my flannel pajamaed kids out of bed. It is an easy oatmeal to make on the stovetop and leftovers heat right up in the microwave.

When making pear oatmeal I tend to go light on the brown sugar. Depending on the variety, pears have so much natural sweetness to them.

I wait until just before serving and top each serving with a teaspoon or two of brown sugar to melt with the butter for a delicious combination to mix into each bowl.

Pear Oatmeal

For most fruit desserts, pears included, I rarely peel the fruit. I’ve found that in most cases, the peels soften enough they don’t bother us a bit and we are happy to include them in the recipes.

However, in this recipe, because I like the pears to retain their fresh flavors, I don’t cook them in the oatmeal for more than a few moments to warm them. It’s worth a few minutes of effort to quickly peel them and avoid any tough peels in the oatmeal.

That said, if pear peels don’t bother you a bit? Feel free to skip that step.

As you know, we love Apple Cinnamon Oatmeal and it has been one of my personal favorites for years. But when my boys requested oatmeal for the third time in a week, I decided to make something new.

Apple Pie Oatmeal

This oatmeal is a warm, comforting way to start the day, especially when you pair it with a hot cup of coffee, tea, or Cafe Con Leche. The aroma that the oatmeal creates in the house as it bakes is absolutely heavenly.

It’s so satisfying to eat a slice of this baked apple oatmeal in the morning and it makes a nice change from a regular bowl of oatmeal. It’s hearty enough to be breakfast all on its own but is also a welcome addition to any big weekend brunch spread.

For the record, I’ve yet to meet a version of baked oatmeal that I didn’t like and this Apple Pie Oatmeal is no different.

Baked Oatmeal with Apples

Baked Oatmeal is one of our all-time favorite breakfasts in this household. Baked oatmeal with apples? That’s a home run.

Apple slices are folded into the oats to bake along with all the other ingredients. I love the way the apples release their juices into the oatmeal as they bake, adding delicious flavor to every bite.

For this recipe, I upped the apple flavors by adding applesauce to the oat mixture instead of the usual oil. The applesauce provides that same level of moisture while taking the “apple-y” taste to the next level.
