German Pancakes with Apples

I added apples to a batch of these pancakes for the first time over ten years ago and my family went absolutely crazy over them. I made this recipe one morning a couple of weeks ago to reshoot the photos and fell in love with these pancakes all over again.

I enjoyed the German apple pancakes so much that I’ve already made them again for family dinner. Whether it’s my grandmother’s traditional recipe or a grain and gluten free variation, we just plain love German pancakes.

For a fun change, try making miniature German pancakes in a muffin tin or these cranberry almond German pancakes during the holidays. (You know I can never have enough cranberry recipes!) However you make them, they are always delicious.

My grandmother handed down a recipe for sweet orange sauce that has become traditional in my family when eating German pancakes. I love that sauce, both because it is delicious, and because it reminds me of her.

But, honestly, I like these German pancakes with apples best on their own. Sweet enough from the apples, all the finished pancake required was a light dusting of powdered sugar. (My kids sure do like them with a drizzle of maple syrup though.)

A word of warning when you’re making the apples for these pancakes, you may want to make extra. It’s hard to resist tasting a few straight from the saucepan–just try not to eat them all before you can bake the pancakes!

Hash is a simple, yet versatile option, perfect for mornings when you want something delicious and customizable. With endless combinations of meats and veggies, it ensures a tasty breakfast that never gets boring.

And, it’s great for using up those last few handfuls of spinach before it gets lost in the back of your refrigerator. I also like this spinach and potato hash for that, with garlic and onion. And, this spinach quiche looks amazing too.

Breakfast Hash

To get the crispiest potatoes in your hash, make sure they are dry when you drizzle them with oil and roast them. Excess moisture steams the diced potatoes.

This tip holds true for any crispy potato recipe, whether it’s roasted red potatoes, roasted sweet potatoes, or even these roasted potatoes and green beans. I added green beans to my grocery list, after seeing that last recipe again.

I have a huge grin on my face today and I am positively giddy to tell you that this cake, this fantastically moist, perfectly sweet blueberry coffee cake with a hint of lemon, is the best blueberry coffee cake I have ever tasted.

I am so happy with this cake, I practically danced across the kitchen after I tasted it. I ate a slice of this cake right after I finished photographing it this afternoon and I ate another slice after dinner.

Sour Cream Blueberry Coffee Cake

Coffee cake, in my opinion, doesn’t get nearly the amount of hype it deserves. A good coffee cake has a tender moist interior with a crisp, crumbly topping. This one is also stuffed to the brim with fresh juicy blueberries.

I was surprised to learn recently that in some parts of the world a “coffee cake” is a cake with actual coffee in it. While I’ve been known to bake a cake with coffee in it from time to time, like this Chocolate Mocha Cake, a true coffee cake is one designed to be eaten alongside a cup of coffee.

Blueberry Coffee Cake with Sour Cream

This blueberry coffee cake with sour cream is ideal for sipping with a Spanish Cafe con Leche or for sharing with friends alongside a pot of coffee. The blueberries in it make me think of summer afternoons, gathered with friends for an afternoon chat on the porch.

Coffee cake is also the kind of cake you can happily eat for breakfast. It’s basically a muffin in cake form, right?

Crumb Banana Bread Muffin Recipe

This crumb banana bread muffin recipe is like the most delicious banana bread but in muffin form and with a coffee cake inspired crumb topping that is so buttery and delicious! You can eat them for breakfast, for dessert, or our favorite…breakfast for dinner!

This banana crumb muffin is a spin off of a recipe I got from my dear friend Sarah. She makes this killer banana crumb bread, that we LOVE and I just couldn’t resist making them into muffins.

We buy bananas by the dozen in our house. We use them daily in protein smoothies, and also just to eat because bananas are so dang good. Occasionally we will get some that last long enough to become over-ripe, and then I know it’s time for some sort of delicious banana baked good! The questions is, do I make our classic banana bread (or any of our banana bread recipes, I am obsessed with banana breads!) , or these bakery style banana crumb muffins? The choice seems impossible! But there is something so convenient about muffins!

Muffins are a great grab-and-go breakfast, after school snack or individual dessert. These muffins have real bold banana flavor and are so tender. My kids go bananas for these banana muffins!

What’s the Secret to a Streusel Crumb Topping?

Salt is the secret to the best crumb topping! I’m serious, adding a little salt makes all the difference as it’s perfectly sweet with a hint of mouthwateringly delicious saltiness!

What Ingredients Do I Need to Make Banana Muffins?

There aren’t going to be any surprises here and the bulk of the ingredients will be pantry ingredients, so grab your ripe bananas and let’s get baking! Here is what you will need:

Banana Crumb Topping

  • Brown Sugar: adds sweetness and richness of flavor
  • Sugar: adds sweetness
  • Flour: adds structure to the topping
  • Cinnamon: adds flavor
  • Salt: enhances all the flavors
  • Butter: softened, binds the topping together giving those yummy crunchy chunks

Banana Bread Muffins

  • Flour: just regular all-purpose flour
  • Baking Soda: acts as a leavening agent and gives the muffins their rise
  • Salt: enhances all the flavors
  • Canola Oil: keeps the muffins super moist
  • Sugar: adds a little extra sweetness
  • Brown Sugar: adds more sweetness and more depth of flavor
  • Eggs: gives structure to the muffins
  • Bananas: over-ripe, mashed

Strawberry Oatmeal

Oatmeal filled with fresh strawberries is something I will very happily dive into year-round. Not too sure about a warm bowl of oats for a summer morning? Stir in fresh fruit and add a splash of cream, a dollop of yogurt, or a bit of milk, and you’ll be an instant fan.

Strawberries and cream is a classic pairing that will never go out of fashion and I don’t know anyone who doesn’t enjoy it. When you take those two things and add them to a creamy bowl of oatmeal, you have a winning way to start the day.

Do you remember the Quaker Oats commercials from the ’80s? Okay, I am dating myself here a bit. But I always think of it when making oatmeal for my boys because the tagline was “It’s the right thing to do.”

There is something about making a simple, filling homemade breakfast for my crew when life is crazy and busy. Knowing they are starting the day with full bellies makes my heart happy.

Strawberries and Cream Oatmeal

While quick oats or rolled oats will both work fine for most oatmeal recipes, rolled oats (a.k.a. old-fashioned oats) are my preference when making this strawberry oatmeal.

(Truth be told, old-fashioned oats are the only choice for me. I keep quick oats on hand only for a few specific cookie recipes that work best with the smaller oats.)

The texture is a bit chewier with a nuttier flavor, perfect for topping with fresh strawberries and a drizzle of syrup or sprinkling of brown sugar.
