Blueberry Baked Oatmeal

My family likes oatmeal in every way, shape, or form you can serve it. So, finding new ways to make and serve it makes all of us happy.

Blueberry Baked Oatmeal is a hearty breakfast that can be stirred together in just minutes. If you haven’t yet tried baked oatmeal, this is a delicious recipe to start with today.

Side note, because you all know that I’m weather obsessed now that we live in Ohio – I am loving the mornings that we’ve had over the past week! When I’m done sitting on the porch with my coffee, baked oatmeal sounds better than ever.

Muesli-style slow cooker oats, nutty granolas, peaches and cream oatmeal with sweet bites of fruit and melting brown sugar, chewy baked oatmeal; we love them all. And I doubt that any of us will ever turn down a warm oatmeal cookie.

With all of those varieties to choose from, I can still say, beyond any doubt, that our all-time favorite way to make oatmeal for breakfast is baked. And blueberries in oatmeal? That’s a sure fire win.

Pulling a pan of baked oatmeal out of the oven in the morning makes eating oatmeal feel like a special treat. Whether you choose to fill yours with apples or berries, dried fruit, or crunchy nuts, there really isn’t a wrong way to prepare your morning oatmeal.

Creme Brulee Amish Baked Oatmeal

Have you tried baked oatmeal before?? It’s so delicious, I can hardly stand it! We are huge oatmeal lovers, but this Amish creme brulee version wins the grand prize!

A few years ago some friends went out to brunch with us (yes, we are total brunchers and if you haven’t caught that bug, by all means JUMP IN!!) and we had this glorious amount of food delivered to our table. When in a group, always order many things so you can sample the menu, am I right?! I knew, absolutely KNEW that the french toast at Gourmandise was going to be my winner and was flabbergasted (when’s the last time you wrote that word? 😏) when it was the oatmeal!

What is Amish Baked Oatmeal?

Amish baked oatmeal like a warm oatmeal cookie but in casserole form that is made with oats, milk and a few other ingredients you will already have on hand. Traditional oatmeal is like cereal with a creamy porridge consistency. Baked oatmeal is more like a casserole or bread pudding. It is super versatile with endless amounts of add-ins or toppings. I’ll go into that more later in this post.

Pear Oatmeal

A steamy bowl of fragrant oatmeal is a must on a cold morning. Oatmeal is the breakfast equivalent of a hearty soup when it comes to warming your entire body and fueling the belly when the temperature drops to chillier temperatures.

We have always been a family that enjoys waking up to a pot of oatmeal simmering on the stove for breakfast. But it wasn’t until moving to the midwest from Arizona that I fully understood its warming powers.

Warm spiced pear oatmeal with cinnamon, nuts, and brown sugar has the power to pull my flannel pajamaed kids out of bed. It is an easy oatmeal to make on the stovetop and leftovers heat right up in the microwave.

When making pear oatmeal I tend to go light on the brown sugar. Depending on the variety, pears have so much natural sweetness to them.

I wait until just before serving and top each serving with a teaspoon or two of brown sugar to melt with the butter for a delicious combination to mix into each bowl.

Pear Oatmeal

For most fruit desserts, pears included, I rarely peel the fruit. I’ve found that in most cases, the peels soften enough they don’t bother us a bit and we are happy to include them in the recipes.

However, in this recipe, because I like the pears to retain their fresh flavors, I don’t cook them in the oatmeal for more than a few moments to warm them. It’s worth a few minutes of effort to quickly peel them and avoid any tough peels in the oatmeal.

That said, if pear peels don’t bother you a bit? Feel free to skip that step.

As you know, we love Apple Cinnamon Oatmeal and it has been one of my personal favorites for years. But when my boys requested oatmeal for the third time in a week, I decided to make something new.

Apple Pie Oatmeal

This oatmeal is a warm, comforting way to start the day, especially when you pair it with a hot cup of coffee, tea, or Cafe Con Leche. The aroma that the oatmeal creates in the house as it bakes is absolutely heavenly.

It’s so satisfying to eat a slice of this baked apple oatmeal in the morning and it makes a nice change from a regular bowl of oatmeal. It’s hearty enough to be breakfast all on its own but is also a welcome addition to any big weekend brunch spread.

For the record, I’ve yet to meet a version of baked oatmeal that I didn’t like and this Apple Pie Oatmeal is no different.

Baked Oatmeal is one of our all-time favorite breakfasts in this household. Baked oatmeal with apples? That’s a home run.

Apple slices are folded into the oats to bake along with all the other ingredients. I love the way the apples release their juices into the oatmeal as they bake, adding delicious flavor to every bite.

For this recipe, I upped the apple flavors by adding applesauce to the oat mixture instead of the usual oil. The applesauce provides that same level of moisture while taking the “apple-y” taste to the next level.

Pumpkin Spice Oatmeal

We enjoy topping our bowls of oatmeal with a swirl of freshly whipped cream to make it even more like pumpkin pie.

The whole family enjoys this oatmeal and the kids have requested this again every single day this week; I think I’m safe to say that it is a hit.

It’s been ten years since we first made pumpkin spice oatmeal and this is still my middle son’s favorite oatmeal. He happily makes this oatmeal throughout the year.

There’s nothing better than having a terrific breakfast that the kids can make on their own. Especially when they make enough to share with me.

Top your bowl of pumpkin pie oatmeal with whipped cream and transform your breakfast into something absolutely craveable.

Oatmeal Ingredients

  • rolled oats
  • water
  • milk
  • pumpkin puree
  • brown sugar
  • pumpkin pie spice mix
  • kosher salt

Pumpkin Oatmeal Recipe

  1. Combine all ingredients in a large saucepan and bring to a boil.
  2. Reduce heat to a simmer and cook over medium-low heat for 5-8 minutes, stirring constantly until the oatmeal has thickened.
  3. Remove from the heat, portion into serving bowls, and top with whipped cream or a drizzle of heavy cream.
